She Really Loves Her Food

hello! Monday!

I’m so glad y’all enjoyed my latest Propel piece. It means the world to me! 🙂

I woke up this morning and am having a bit of trouble going up and down the stairs….my legs are so sore!!! Not in a bad way….just sore. I was going to do yoga but decided to just give my legs a total break today instead….it was a good decision.

The first image that popped into my head this morning was honeycrisp apples and almond butter. Naturally, breakfast centered around that.

I used a cup of plain Voskos yogurt (which I loved because it was so THICK!), 1/2 cup Nature’s Path optimum cereal, a sprinkle of Udi’s and of course, apple and almond butter. Love.

Midmorning I snacked on ANOTHER apple and MORE yogurt! Noticing a trend here?

Ran some errands, came back for a stroke of genius lunch. Seriously, this was the best idea I’ve had in a very, very long time.

I think I was grinning while I ate just because it tasted soooooooo good. Sometimes I grin and moan when I eat because I get really excited about food. Want to go to dinner with me? 😉

These were sort of meh. I like my gummies incredibly chewy and these….weren’t. Didn’t wow me by any means.

    Ooh I love adding stuff to my mac n’ cheese! My favorite addition is broccoli, peas, chopped up cooked chicken and hot sauce! (This is actually my traditional night before a race meal!) It’s also good with a fried egg on top. 🙂
    I’ve also gone skiing in Switzerland and they are big on adding veggies and stuff to macaroni and cheese (they call it Alpine Macaroni)- some places even add applesauce to theirs, which is surprisingly good.

    I’ve been craving apples all day too! I’m getting ready to have a bowl of apple oats with fresh ground peanut butter…YUM!

    I’m loving fresh, crisp, apples right now too. Our farmers market has literally 20 varieties. It’s so fun picking out new ones to try… although, my faves are the ones that are crispy and tart!

    I’m with you on being so happy Honeycrisp apples are back in stores! I LOVE LOVE LOVE them and had my first one this weekend.

    Hey, I just found your blog randomly a couple weeks ago and I’ve been hooked ever since! I think it’s because we have a lot of similar interests, but also because you’re inspirational. I really enjoyed your post about how you got to be doing what you’re doing now and about really going for your dreams and LIVING. I ultimately want to write for a living, and I’ve been working on the beginnings of making this a reality for myself over the past few months. Thanks for that little bit of encouragement! I know you just put your thoughts out into the universe, but I wanted to let you know that what you say definitely matters and can inspire others to do what they really love and to make life better for themselves.
    On a lighter note, I also am OBSESSED with honeycrisp apples and was delighted to have one with my breakfast this morning. 🙂
    I’m also a runner. Your post about realizing that you’re running not just for yourself was very powerful to me because I’ve been through the same thing. It took me a long time and a lot of trial and error to make running less about times/ego and more about doing something I simply love to do and which feeds my soul in a way. So I’m glad you’ve realized that and hopefully you’ll continue to love running and take care of that leg!
    Ok last thing…If I remember correctly, last time you went to California, you were in Northern California? I grew up in Sonoma County so if you want tips on where the stellar running and eating spots are, I’d be happy to provide an insider’s view!

Tonight, I am going to try Murphy Goode Wild Card (on your recommendation). Here is a recommendation for you too – Powder Keg Petite Syrah from Lodi – try it, you’ll like it!

    your lunch is a stroke of genius! looks sooo good! i’m going to make that one tonight for dinner! i’ve got one question for you though… how do you save your leftover mac n’ cheese? do you just make the entire box and then put the leftovers in the fridge, how do you do this? i can almost always never seem to finish off an entire box. thanks in advance!!

    Hot sauce and cheese on anything can taste good. Glad your lunch and breakfast made you happy. And that large blob of AB is envious…I have to ration mine out because it is a long drive to get more.

    I think it’s totally great to listen to your body, taking days off totally helps keep me from feeling run down all the time. Also, I wanted to say your last post was very inspirational. I’m trying to find a way to finish school and still do things that I love – and hopefully someday turn those things into my career. But, seeing someone who has done it and been successful is very encouraging and reminds me how important it is to pursue what I love in life!

    I always, always think about topping my Annie’s mac -n- cheese with a veggie burger, but I always chicken out for some reason? But, now since you verified its yumminess I will have to give it a try! Yay for Honeycrisp!!!

    I almost died and went to heavan when I saw the reapperance of Honey Crisp Apples. I am obsessed with these in the fall! No other apple compares to the sweet, crisp Honey Crisp.

    I had actually envisioned the same kind of breakfast. Looks fantastic!

    Haha, I’m the same way about smiling while I’m eating!! I also get teased for being the person who is constantly making moaning noises when food is sooo good!!!

    LOVE, LOVE Honeycrisp apples! They are my fave!
    Hey Jenna, I noticed on a previous post you were using the Blue Diamond almond butter. I think you mentioned that you got it for $4 on sale. If you are on a tighter budget, my costco has Maranatha AB(26 oz!) for about $6. They just lowered it recently about $.60! I live in the bay area also so your costco should carry it. That’s if you like that brand. 🙂

    Jenna, what do you mix your grass with? Do you like the taste? I drink the chocolate superfood and have been mixing it with water – not so delicious. Recently I started mixing it with vanilla unsweetened almond milk (usually half water half almond milk) and sometimes add a banana and it is DELICIOUS.
