simple egg salad sandwiches

I feel a little silly posting this recipe today.

But…but…but! I tweeted out last week on how I was enjoying a delicious egg salad sandwich for lunch and got a few requests for the recipe. I’ve been eating a lot of egg salad lately. Adam hates it. He has a “thing” towards hard boiled eggs, which I think is very odd. He also has a “thing” towards black licorice jelly bellies, red swedish fish and raw tomatoes. All of that is very weird.

That all being said, I’ve been on a major egg salad kick lately and it sort of culminated yesterday when I ate scrambled eggs and coffee cake for breakfast followed by the egg salad sandwich you see above for lunch. That’s a lot of eggs.

I made pasta for dinner.

I don’t really know what’s “normal” to put in egg salad but I suppose some people might add finely minced onion or fresh herbs. Not me! I like my egg salad ridiculously simple—just a dab of real mayonnaise, some mustard, a splash of red wine vinegar and salt and pepper. Topped with onion and lettuce, please.

A few weeks ago I made The Pioneer Woman’s egg salad, which has a mashed avocado in it! It was delicious but I don’t always have avocados laying around when the egg salad urge strikes.

So there you have it! My lunch yesterday. Normally I would scoop hummus on crackers or chow down on those delightful frozen vegetable thai dumplings from Trader Joe’s while I watch my dough rise, but yesterday I was feeling frisky.

Simple Egg Salad Sandwiches

makes 2 sandwiches

Print this recipe!

Ingredients:

4 eggs, hard boiled

2 Tbsp mayonnaise

1 tsp red wine vinegar

2 tsp dijon mustard

pinch of salt

pinch of pepper

Directions:

Mash eggs with a fork and add remaining ingredients. Chill in fridge or spread on whole grain bread with sliced onion and lettuce. Enjoy!

Time:

30 minutes (includes time to hard boil eggs)

    on a diff note, is it okay to do yoga, sun salutations at night? say after work around 8?

    Oooooh I LOVE egg salad! Sounds like my recipe too, but I use yellow mustard instead of dijon and I’ve never tried it with red wine vinegar. Excited to give that a go soon!

    I love egg salad sandwiches as well. Mine usually include miracle whip, relish and yellow mustard. Some tarragon if I want to get fancy. Hah.

    Jenna, you have a weirdo on your hands…who DOESN’T like raw tomatoes and boiled eggs???? Loved using mashed avocado and/or Greek yogurt in egg salad…chopped scallions are pretty yum too!

    Egg salad…I havent had it in years but just thinking about it, reminds me of my grandma’s house and my childhood and good memories 🙂

    I’m in that hard boiled egg boat with Adam…as well as the mayonnaise weirds me out boat. I’ll stick with your coconut curried sweet potato soup leftovers for lunch today!

    I love eggs, and egg salad sandwiches are something I don’t eat enough. I think part of it has to do with the smell – like tuna, it can’t help but be noticed! However, now I have my own office so I’ll happily bring it along. I’ve never added red wine vinegar though – can’t wait to try it out!

    Egg salad cravings hit me hard and at really random times as well. Normally I’m just too lazy to wait for eggs to boil so I just go straight for the scramble or omelette, but you have me craving some salad now! I love it on untoasted squishy bread 🙂

    I think I eat hard-boiled eggs everyday. Never mashed for a spread though. I get the black licorice aversion – but tomatoes and swedish fish? That’s crossing the line.

    Love egg salad sandwiches – a great quick dinner! My mom always uses plain white vinegar – which I omit because it’s just too strong. But I’ll have to give red wine vinegar a try! But I’m definitely with Adam on the raw tomatoes!!

    I love egg salad it is such a comfort food for me 🙂 My Mom didn’t really cook growing up but she did know how to make egg salad and whenever I am feeling home sick especially in summer I make an egg salad sandwich and I feel better.

    I love egg salad, and am the same way– I like it pretty simple! Lately, I’ve been mixing my hard boiled eggs with a bit of dijon mustard, and teeny-tiny diced cucumbers (since I didn’t have pickles on hand). It’s delicious!

    So comforting. 😀

    I love eggs and egg salad and I also had egg salad yesterday. I sometimes prefer just egg/mayo/pepper but like to fancy it up too with pickles or capers. I also like to eat eggsalad warm, although I feel like it is harder to peel eggs when they are warm. Oh well, yum either way!

    That looks refreshingly simple! I like a little crunch in mine so I usually add celery or something liek that to it for texture but I like the idea of the simple spice + mayo combo.

    I have been on an egg salad kick too! I like mine with a lot in it though! My favorite combo is eggs, mayo, relish, mustard, onions, walnuts and grapes…kind of a twist on a classic chicken salad recipe. Love!

    I always like when I have egg salad leftovers left, since it so so convinient you can have it for breakfast, lunch and dinner! I prefer mine with lots of honey mustard!

    Okay, I have to know your hard boiling method. I’ve been on a mission to perfect my hard boiled egg technique lately, and yours look perfect! Do you start them in cold water? Pop ’em right into boiling water? How many minutes?

    I’m a total weirdo, I know, but I saw those bright yolks without a hint of weird green and I had to ask!

      I can’t be a ton of help, but I have heard that the tinge of green comes from over-cooking…

      That’s as far as my knowledge goes! Everyone seems to have an opinion on how to perfectly hard boil an egg, but at least we can avoid the icky looking green 🙂

    I’m obsessed with egg salad. My office manager and I both bring them to work a lot and talk about different ways we’ve made it. Neither of us have ever said red wine vinegar. Can’t wait to share this ingredient and to try it out!

    I have been on a major hard boiled egg kick – to include egg salad – mostly because you can buy cooked and peeled hard boiled eggs at costco for little more than the cost of eggs! They just make it too easy. I am definitely excited to use the red wine vinegar too!

    I used red wine vinegar in Tuna salad, and love it! I never heard of putting it in an egg salad, but it makes perfect sense!! This makes a great packed lunch idea! Thanks!

    Something AGAINST black licorice jelly bellies, red swedish fish and raw tomatoes??? That’s just suspect! 😉 Those are three of my most favorite things.

    Thank you, thank you for posting this!! You may think it’s simple, but I always look for a great egg salad recipe without a lot of mayonnaise. I don’t eat meat so this is perfect! My boyfriend loves egg salad too but I’ve never found a recipe to make. The red wine vinegar sounds like a great touch.

    Egg salads are the best! My hubs thinks they’re gross so I just make more for me. A lot of the time I use avocado or hummus instead of mayo.

    I also do not like black licorice or raw tomatoes! And I find Swedish fish to juse be “okay” and leave me wondering where the chocolate is. Too funny!

    I love a simple egg salad sandwich. Adam is wrong for not liking them. and swedish fish and tomatoes! But he’s right about black licorice anything including jelly bellys. 🙂

    Interesting, never heard of red wine vinegar. I will have to try that. I love egg salad sandwiches and I use mustard in mine as well. I also add some celery or grated pickles. Yum!

    I loooove egg salad! I’ve recently started sprinkling some chili powder into my mixture, to great effect.

    I completely understand. My hubs has “a thing” about mayo. As in he won’t eat anything that has mayo in it except for Ranch dressing. Makes sense huh?? You should’ve seen the look on his face when I broke the news to him that mayo is the main ingredient. Funny, he still eats it. Anyway, I got off subject. The sandwich looks delish! I love how simple it is too.

    Egg salad sandwiches always remind me of long car rides with my parents. They would always pack them to take with us and it made the car reek off eggs! 😛

    Yum! Just made an egg salad sandwich to take for lunch the other night. My husband loves to add cheese to the top of his but I think it’s a bit overkill–lettuce and onion works fine for me!

    What a great way to jazz up egg salad without being too fussy. I had every type of vinegar but red wine, so I used a dash of balsamic instead. Yummy!!

    Now could you help me out with a recipe or two using green tomatoes? In Seattle they’re predicting the nine days of over 80 degree temperature we’ve had in September is it for this summer. Which leaves alot of us with plenty of green tomatoes. Sad.

    i know a lot of people who don’t like hardboiled eggs… i think its the media’s fault. they’re always portrayed negatively in movies (enter some body builder eating a vat of eggs). anyway, I love ’em!
