Singin’ the Blues

Hi everyone!

I’m in my super-sad-missing my love mood so bear with me πŸ™

Ryan left around 3:00 today and I was so sad…..but I know I’ll be back in a few days! Its going to be so weird when we actually get to see each other every day after having a long distance relationship for 2 1/2 years! I hope he doesn’t get sick of me!! hehe

After he left, I snacked on a half cup of peanut butter granola (Nature’s Path) with vanilla silk while I watched the 7th Lesson of my Beth Moore bible study online.

And then around 4:30 I hit the grocery store for a quickie shop…..I always manage to come out though with way more than I need!

Protein bars, brown rice, more whole wheat pitas, some new corn soup that looked amazing and Quaker multi-grain to switch it up from oats for a little bit

larabars, amy’s burgers, pumpkin for my oats, more Sabra hummus, whipped cottage cheese, split pea soup and………………more on that “ice cream” later πŸ˜‰

sweet potatoes, honeycrisp apples, organic carrots and a butternut and acorn squashie

For dinner tonight I made another one of my simple pita pizzas with organic mozzarella cheese on a whole wheat pita:

Along with a huge spinach salad topped with raw broccoli and drizzled with light balsamic dressing

I puttered around for a bit and then had dessert:

I had neither seen nor heard of this before so when I saw it at Publix I knew I MUST try it!!!! How cool—an ice cream made creamy with delicious coconut milk! And the ingredients are pretty impressive as well:

I have to admit I was a little hesitant on how it would taste. My only experience with non-dairy ice cream was the soy based kind, which was okay but it did have a little bit of a weird aftertaste and wasn’t as creamy as the ice cream I know and love. So, for dessert tonight, I helped myself to a half cup of this and crumbled half a macaroony on top.

After just one taste all I could think was OH MY GOSH!!!!!!!!!!

It was freakin’ amazing. And not just a little amazing…..totally 100% amazing! This frozen treat was SUPER creamy and rich with a faint coconut aftertaste. For only 150 calories per half cup serving and made with all natural ingredients, it’s my kind of dessert! I have to say….I honestly don’t think I will EVER go back to buying regular ice cream again. This was just way too delicious…and good for you! The faint coconuty flavor made it better than just plain old vanilla ice cream and it was just as smooth and creamy. It rocked my world and made my night. I wish there were coconut ice cream joints down every street corner…can someone invent that?! Unbelievable.

I’m off to take a bubble bath and mentally prepare myself for the crazy week ahead. Tomorrow (as well as Tuesday and Wednesday) is just going to be jam packed with Thanksgiving prep and incredibly busy.

    Oh I’m so sorry you have to do the long-distance thing… My fiance and I were about an hour apart (I know, not too far) for the first 2 years of our relationship, and only got to see each other on weekends. I LIVED for weekends.

    OMG I AM IIIIINNNNN LOVE with that coconut ice cream–they are all fantastic, including cookie dough πŸ˜‰

    I totally agree with you–no other type of ice cream or frozen yogurt compares with this stuff. Why didn’t they think of this before????

    ps they have a yogurt too, but I haven’t had a chance to try that yet πŸ™‚

    Hey Jenna! I hope the whole transition from long distance to not-long distance goes well for you and Ryan! I can tell you from personal experience that after being long distance for a while, not having to say “goodbye..see you in 2 months” is SO wonderful! My now-husband and I were long distance for 3 and a half years (!!) while I was finishing my undergrad, and we (finally) just got married on August 30th! It was well worth the wait πŸ™‚ When you love someone that much, you’re willing to do anything! By the way- I love Beth Moore’s bible studies! which one are you doing?

    I am in love with the coconut milk ice cream, but I’ve had the chocolate kind, which I cannot recommend enough. I love it.

    Excellent food!! Do you ever heat up those oatmeal bars? Are they good?

    my fiance and I have been dating for 6 years and got engaged last summer- I am in Ohio for law school and he is in KY, so I know how you feel. when he comes to visit me or if I go home, we have an amazing time but I always get so upset on Sunday night when I’m alone! No worries, at least you only have another month or so! it will be so worth it!

    Aww I’m sorry that Ryan had to go! πŸ™ It must be so hard.
    Just think how amazing it will be when you don’t have to do this any longer! You are a strong person that is forsure. I used to hate when my husband (then boyfriend) would leave at night (and we were never more than 1 hour apart!). Love is worth it though πŸ™‚

    I LOVE that ice cream! If they have the chocolate flavor you should def try that too it is soooooo good! Really it is to die for! And since i recently found out im allergy to dairy I will def be being the coconut milk kind from now on!

    that ice-cream looks amazing! I’m sorry you are missing Ryan. Some times it seems like semi-long distance is worse than actual long distance. When my boyfriend and I were in college we would have our Biggest fights right before a visit.

    Wow, that ice cream sounds awesome. Thanks for the tip! I’m sorry for how sad you’re feeling right now. I remember that feeling all too well. My first year of college, Carter and I lived a state apart, and I cried my eyes out every time I left after visiting him. When you get to be together all the time, it will make it that much sweeter, I promise!

    Love the grocery pics AND pita pizza! The chocolate peanut butter flavor is my favorite pure protein πŸ™‚ Glad to hear the ice cream was good!

    I feel for ya, lady! It’s always so sad to part again. I’m also curious about what it’ll be like to get back to a “regular,” see-you-everyday kind of relationship after being long-distance for so long (when I graduate in May). Cheer up!

    MMMMM you can just TELL that that ‘ice-cream’ is really creamy from the picture… I am DEFINITELY looking for this at the grocery store… I lurve coconut πŸ™‚ Hopefully I can channel your self-restraint and NOT eat the whole container in one sitting!! LOL

    we have a wheelers black label ice cream shop in downtown boston.. its totally yummy.. and they have coconut based ice creams!!
    i still have to have the soy based only, im allergic to coconut, but people who can eat coconut.. love it!

    it will be better once the long distance thing is over, i struggled through three months of it, but i dated a guy in the marines a few years back, he went to boot camp and iraq twice for six months at a time.. talk about HARD!!! it was horrible!!! good luck to you guys, im sure it will be just fine now!

    whoo hoo! i’m so glad the macaroons turned out for you! i might have to make it that way for the fam since my mom doesn’t have a dehydrator.. or i might just buy her one since i’ll be needing it! macaroons on top of coconut ice cream might be the best thing ever. i’m making some of the banana almond butter cup tonight πŸ˜€

    Oh my gosh that coconut ice cream sounds sooo good!! I sounds really similar to some coconut ice cream / sorbet concoction they sell at Trader Joe’s that comes in 1/2 a coconut shell. It is the most delicious think ever!! If you have one near you you should look for them.

    Love Sabras hummus! Just bought the spicy one…it’s good, but it IS spicy.
