I’ve been semi-productive so far. Meeting got changed, 60 minutes of yoga got done, errands ran on foot, handled some stuff back east….still no grocery shop or article written though. Currently waiting for the mailman to get here because I’m expecting two very important items today!
It’s absolutely gorgeous outside and ALL my windows are wide open. I love it! Lunch was a sweet potato with 1/2 cup chickpeas tossed in a bit of olive oil and sea salt, crumbled goat milk cheddar and hot sauce with two apples on the side (but only one pictured!):
yes, yes, yes!
You can put anything on a sweet potato and it will be good. Promise.
Even better (but not on top of a sweet potato):
organic milk chocolate with sea salt and almonds. Obsessed.

I like the look of a small sweet potato along-side stir fried baby bok choy….the rich green/orange together & with a garlicy pork loin roast. If stir fry in greens in grapeseed oil they take on a picture-postcard shine + grapeseed oil very healthy. A chef in Carmel Valley clued me into this.

you should try boiling sweet potatoes in some water + sugar + ginger.. and some “pandan” leaves.. or if not available.. vanilla extract will do..
it will be a sweet dessert!

I just baked it….no frills attached! You can bake it in the oven (at 400 for 45 minutes or so) or in the microwave for 4 minutes!
