Dessert/ Dinner

So Close Yet So Far…

All I have to get through now is 2 tests and a deep clean before its weekend time! I’m sooo not in the mood to go to school tonight. I just want to pack up my stuff and drive home right now! But..that is why my chef instructor made us have 2 tests on the last day. I think she knew that if she didn’t, no one would show up to deep clean the kitchen. Yuck. It’ll be an early night though—I’m hoping for 10:30!

For dinner tonight I had another bowl of split pea soup with some watermelon and a slice of cornbread that has been in my freezer for way too long. This soup is so good and seriously filling with all theΒ  protein that the peas pack in. I added some cayenne pepper for a great kick of course (when don’t I add cayenne to things?!), and used a bit more salt than Heidi called for, but all in all, it’s a keeper and I’m glad I have 2 more servings of it left. One in the freezer and one in the fridge for lunch next week.

I’m bringing another oatmeal raisin cookie with me for a mid-clean snack. No baking tonight! Have a great Friday night everyone!

    I totally hear you on wanting school to be DONE! Ugh, finals week is the worst. I’m a big stressball right now and it’s no fun!

    I love how you always maintain such a positive attitude though. You are an inspiration and such a sweetheart πŸ™‚

    The last night of any class is always the hardest. You’re happy that it’s over, but your sad because by that point you’re over IT.

    hey jenna

    do you think your calorie counts are similar to those before you became a vegetarian. i know it’s not really beneficial to obsess over calories–so im definitely not encouraging that. i am trying to emulate many of the eating habits you have adopted–for instance, cutting out dairy for the most part, cutting back on caffeine. i do feel great! some days it seems that your meals are balanced, but your calorie counts are low. if this is true, are you getting an adequate amount of nutrients? also, you mention fatigue relatively frequently-could this be a contributing factor?

    I truly have no idea how many calories I consume in a day. What I lack now in dairy I’m sure I make up in nuts, which are very caloric! Or almond butter! I never ever go to bed hungry so I’m sure I am eating enough and, of course, it is hard to judge in a picture how much one eats. I am the queen of picking! I pick pick pick at cookie crumbs, chocolate chips, pieces of watermelon, puffins……..I also may be using 3 tbsp of almond butter in my morning oatmeal. I really don;t know. I just spoon some in until I feel like its right…but who really knows unless you take a measuring spoon and level it out and do it that way. You mention fatigue, and I know you are not trying to judge my diet when you say that so excuse me if I sound sort of blunt, BUT…the reason I am fatigued is because I go to bed every night around 1 in the morning and I wake up at 7 am. I race to the gym, work out, race home, go to work for 6 hours, then race to school and am on my feet for another 5 hours scrubbing pots and pans, rushing from oven to oven, beating the living day lights out of egg whites…and then, on my free time I race home to Tampa to go out with my friends. hahahaha it gets very very tiring!!!!!!! So no, I don’t think my diet has anything to do with being tired from life in general. I never feel hungry in my days so I am sure I am eating enough. As a nutritionist, I can say this confidently! So, thank you so much for your comment and I hope that you can still look at my meals and snacks for inspiration but also know that every body is different and my needs might be very very different from yours. I have always been very slender, so is my mom! I’ve also always worked out and played sports. I also have an uber fast metabolism!! πŸ™‚

    i am trying to ween myself from the scale….i got in the habit of weighing myself every morning, and i have decided that i think it is a little too obsessive for me….i eat well (at least most of the time!) and i am pretty active (although i rarely formally work out), so i think i should just let the rest take care of itself…..i was just wondering what other people think and/or do….and jenna as well!

    thanks jenna! i appreciate the clarification. trust me–i understand what it’s like to have a crazy busy schedule! i also thrive on being busy.

    it is a relief to know that i am not doing anything wrong on the days that i just trust my instincts, much like you were implying, when planning my meals and eating until satisfaction. i just dont like making myself meet a certain caloric level at if my body doesn’t really want me to eat that much. some days, my body needs a big breakfast, and other days something light provides ample fuel.

    im being redundant now–just want to affirm what you said.
    i apologize if i came off as judgmental–that was not my intent.
