Spinach Mushroom Lasagna

Lasagna, in my mind, has always been “man food”. Therefore, I’ve never liked it. I preferred the much girlier stuffed shells or manicotti when given the choice. I don’t know why I always considered stuffed shells and manicotti “girlier”, but whatever. It works.

However, I recently discovered that I really only don’t care for lasagna with meat in it! That’s sorta weird, too, because I’m not a vegetarian by any stretch of the means. So….lasagna with ground beef? ick. Lasagna with spinach and mushrooms? yum.

3………..

Then, all there is left to do is dig in! It’s magic. And no one will even miss the meat. Being the super amazing girlfriend that I am, I brought a hot slice of this over to Adam’s house right when it came out of the oven. I told him I was just “in the area” with a hot slice of lasagna on my floorboard. Imagine that! #instantgirlfriendpoints

This is also a great meal to assemble, freeze, then cook when you’re strapped for time but need a cheesy comfort meal to end the day. Or bring to a friend in need! I like to use fresh baby spinach and cook it myself rather than use the packaged frozen stuff….but you could use the latter if you prefer. I’ve timed it though; it’s really not any faster to defrost then cook frozen spinach. Just my two cents.

    Haven’t we yet moved past the point of superficial and meaningless gender norms? I’m not supposed to like lasagna with meat because it’s “manly”? Come on. Let’s not perpetuate ideas that are meant to keep women eating salads. Let’s just not.

    I’m not a big pasta eater but LOVE lasagna. It’s one of those dishes that really can’t go wrong because even when it turns into a huge mess, it still tastes delicious.

      I agree and it’s always been a mess when I’ve attempted it.

      Also, you don’t even need the meat because really it’s the cheese and sauce that makes the dish. Put cheese and sauce on cardboard and I’ll eat it…

    Mushrooms! I’m always so hesitant with them. It’s a texture thing.
    I have given Mama Pea’s lasagna a whirl and it was delicious! I’ll have to change it up with this recipe on occassion!

    I love lasagna…I used to like the beef or veggie versions all the same πŸ™‚ But after this, I may need to reconsider my opts! This looks amazing!

    just in the area with piping hot lasagna in the car…. haha! Love it!
    The restaurant I waitress in serves hugee portions of meat lasagna (bobby flay threw it down!), and woman, men, children, everyone orders it! But many many people request vegetarian lasagna which is something we don’t have yet. I think it would do really well on the menu. Mushrooms were a great choice because they have that wonderful chewy almost meaty texture to them.

    Lasagna is my thing. I love it.

    And yes, vegetarian lasagna is the way to go. Something about spinach and mushrooms and cheese. It makes me swoon. πŸ˜€

    I like veggie lasagna better than the normal meat ones too. I just think it tastes better, not because I’m opposed to meat or anything either. Lasagna is fun on a day when you have plenty of time and just want to make something delicious with a little effort πŸ™‚

    I LOVE lasagna and its one of the few dishes I can cook amazingly well (if I dont say so myself) – I usually make meat ones and my favourite recipes is Jamie O’s where he uses anchovies and butternut squash as well…. LOVE! your recipe looks amazing as well AND has given me a craving so as soon as this gluten fast is over!!! xox

    I’m not a vegetarian – but I much prefer a veggie lasagna! Ground meat doesn’t really have enough structure in a lasagna for me. Regardless – this looks so goood!

    This looks great and simple to make. I’ve always been a bit intimidated by lasagna, just because I tend to think it would take forever! Do you or anyone else (please chime in!) have any ideas for a good substitute for mushrooms though? I know it will change the taste of the recipe, but I’m just not a mushroom fan!

      How about eggplant? I’ve even made lasagna with no noodles, using the eggplant as the noodles. I’ll take any kind of lasagna; one of my faves.

        I did see a vegetarian lasagna recipe in Cooking Light that used eggplant, but that recipe looked too complicated and I don’t think I’m patient enough for it! I think I will try use eggplant! Thanks Lisa!

    Jenna ~ love the blog but never commented. You are going to adore Colorado and Estes Park is amazing.     Great recipe. I went through a phase where I ate the trader joe’s individual serving size spinach lasagna several times a week for lunch. This looks right up my alley.

    That looks divine. I don’t like meaty lasagna’s either but looooooove spinach and mushrooms. Hubby LOVES manicotti. Especially when his mom makes it. I definitely will be making this dish πŸ˜€

    I think we must be on the same wavelength because the last two recipes you have posted have been almost identical to the last two items I have cooked this week. I made a pumpking roll with cinnamon cream cheese frosting and then a mushroom spinach tortellini bake for supper two nights ago. Crazy! Your pictures are lovely.

    I made tofu spinach whole wheat lasanga for years and it rocked!! Never missed the meat or cheese. Used nutritional yeast. Now of course there is Daiya which has no cholesterol. But LOVE my vegan lasanga!

    Ack. I have a hubby who cannot stand mushrooms! Recipes like this leave me feeling envious & empty because I can’t have them. I mean, I could, but I just should not be eating a pan of lasagna all by myself. Or, should I?

    lasagna looks great. however is anyone else OCD like me in regards to removing stickers/labels from things like cookware, tupperware, or pretty much anything else?? I am surprised with all the cooking Jenna does, that Le Creuset sticker hasnt burned off that dish yet!…

    I’m the same way! The same with enchiladas, too! It’s weird. I totally love meat, just not in lasagna and enchiladas. I think it’s because the meat makes the whole thing too heavy for me. This looks like a glorious, classic lasagna. LOVE.

    I made this for lunch today! It took some tweaking (my no-boil noodles are way skinnier than the ones in your photo, I added red pepper flakes to my store-bought marinara, and I only got two layers out of the fillings), but the recipe turned out pretty tasty! Thanks!
