Lunch

Summering

Today for lunch, while the boys played golf, my mom and I went to the health food store. I got a mixed plate of different salads including arame and zucchini salad, tabbouli, roasted veggies, lentil salad and hummus. My mom got some of these chips for us to share and they were the perfect thing to dip into the hummus. Yum!

We ran some errands and eventually made our way to one of my favorite hot weather stops: Rita’s Italian Ice. I got a regular sized mango ice and it was the perfect thing to combat this intense heat we are having.

This morning I ended up going to the gym for a quick 20 minutes of cardio. As for right now, I’m going to relax and read for awhile! I bought a new book today and I have to finish my old one so I can start it!

    I love rita’s! I love how in the summer it’s perfectly acceptable to consider popsicles/italian ice/ice cream a mid-day snack!

    We are headed up to Wolf Laurel—its a tiny town about 45 minutes from Asheville. Ryan’s grandmother has a house up there and the whole fam. is going up for the weekend! I love the mountains so I’m pretty excited except for the fact that its an 11 hour drive!!!!!

    I’m sure his fam knows the area pretty well, but if you head into Asheville I have to put in a plug for three restaurants: The Laughing Seed (vegetarian!), Early Girl Eatery and Tupelo Honey Cafe (both sort of upscale southern food – Tupelo Honey has AMAZING sweet potato pancakes). I’m jealous – I miss NC and the mountains.
