Sunday Night Blues

Hi everyone

I hope y’all are enjoying your Sunday! I’ve been packing for the last couple hours and now am about to stop for the night and start to study for my wine test tomorrow. I always wonder how I accumulate so much stuff! I always seem to leave with more stuff than I come with. Hmmm

Anyways, this afternoon before hitting the road I snacked on a VitaTop muffin with a smear of almond butter:

And for dinner I just picked up Whole Foods because I was already there buying some apples and larabars for the next few days. My LAST dinner at Whole Foods (sigh). Vero Beach has no such health food stores….there’s a Publix, a Wal-Mart and a Target. That’s IT! I guess I’ll save a truckload of money!!!

For dinner I got a cup of my favorite tomato-basil bisque:

As well as a little platter of things to nibble on. Some hummus, a piece of naan, greek salad and edamame salad.

After dinner I had a glass of red wine while I started to pack and then later for dessert, a soy pudding and my last macaroon:

I can’t believe its my last week here….my roommate is coming back tomorrow to pack, her mom is coming Wednesday to help, the movers are coming Friday and Ryan is also coming Friday night. And on Saturday, we are packing up the car and heading home! I have to go to Tampa first to drop off alllllll my stuff (I’m only taking a suitcase with me to Vero) and the kitty :(….and I’ll be heading out Vero on Sunday!

I have to admit, I’m a little blue about it. I mean, I’m sure my externship will be great and a wonderful experience, but I sort of just want to go home after all this! I’ve been apart from Ryan now for going on 2 1/2 years and we are both quite tired of it!  Another three months seems like eternity. I’m sure it will go by fast though and I’ll be super busy…..hopefully! Just a forewarning, I’m sure I won’t be doing much cooking for myself at all during the next couple months. From what I hear from my future boss, I’ll be working non-stop—from 7:00 in the morning on! My meals will mostly either be packed to take to work with me, or quick to prepare meals at my friend’s house. Hopefully that won’t bore anyone but this is real life and I have NO idea what I’m getting myself into!

Alright, I’m going to quit rambling and get to studying. 4 more days of school left!

    Ahh, I remember my last meal at Whole Foods all too well. Now whenever I go home to visit, I want salad bar all the time! 🙂
    How funny – it seems like not that long ago that you posted about this externship; time totally flies. I think seeing and hearing about your lifestyle change will be awesome.

    Hey Jenna!
    That is so very cool you are allllmost done! Vero Beach… wow I think I went to Vero Beach with my Campus Life group in High school! I remember it well, because I got sun poisoning on my feet because I forgot to sunscreen them! (midwest farm girl learning the hard way how to handle Florida sunshine)

    You’ll be with Ryan soon, it will go by fast! By the way, I love your meals and you have made me crave Pita Pit, even though I’ve never seen one of those restaurants! Why can’t we have cool places like that around here?

    awww. 3 months will go by in a heartbeat i swear !! and i will totally NOT get bored because most of my meals are quick and easy too (oh the college life…) so maybe i’ll get some more ideas!! GOOD LUCK with the moving 🙂

    Three months will fly by I’m sure. Best of luck with your last few days of culinary school (I am so jealous-I still have to wait over three months!) and with your upcoming externship!

    Trrriiiippppy… I think I may have seen you at WF today. I am not stalking you :), I was whirling through with my friend picking up a few things and thought I saw you, then saw this entry. What time were you there? Haha, funny.

    Also, I met a server from Roy’s the other day who lives in my complex. His name is Tim, super nice guy. I thought about “name-dropping” Jenna the fab ex-hostess but didn’t. I assume you know him… guess Orlando is smaller than I thought.

    Have a good night, and keep a positive attitude about Vero (I know you will). Think about the WATER! Ahhhh.

    Jenna,

    I am actually excited to see what you pack/eat for the next few months. I have a busy schedule with work and night school/studying since it is so fast paced so I NEED ideas because clearly I am lacking creativity AND DESIRE. Even if your meals are somewhat “boring” I will still beat you on that reward!
    I hope everything goes well for the move and you are able to settle in at Vero Beach and enjoy your externship! You’ll be with Ryan before you know it given how busy you will be!

    Jenna,
    I really feel for you! When Mike is traveling on business, I am always really sad! You have been so stronf on your own the past few years, and will be so busy, I know it will go by fast. And then? HEAVEN- you guys will be together all the time.
    We will be here cheering you on over the next couple of months- I know it is going to be awesome!

    i was at whole foods today!!! most likely drooling over all of the nut butters 😀

    Good luck with the packing and your studying.

    Before you know it, three months will be over! Plus just think about what you have to look forward to at the end of it 🙂
    One of the best parts about your blog is that it revolves around your REAL life, so never feel bad about ‘boring’ meals or not being able to cook- we all have times like that, so it’s really cool to see how someone else handles it.

    Sure sounds like you’re in for quite the adventure. I’m sure it’ll be an AWESOME time though. And I’m sure, as you said, that it’ll just fly by, especially since you will be so darn busy nonstop!

    I’m excited to see what kind of meals and general eatings you come up with when you are stuck with such time crunches. No, it probably won’t be quite as exciting as all of the wonderful foods you manage to cook up, but at the same time it’ll be a whole new fooding adventure to document. Woo!

    wow time does fly doesn’t it.

    I know the 3 months seems like forever- I feel like the next 10 months until I get married and move to Philly to be with my future hubbie is going by so slowly. But every time I feel bad for myself I am reminded (by all of my friends and family) that there IS a light at the end of the tunnel. In JUST a few short months you will have completed your externship and will be heading home to Ryan. That is going to feel amazing, and you KNOW it will all have been worth it!

    good luck packing, and my condolences that you are leaving a Whole Foods happy zone. haha
