sweet and spicy glazed salmon sandwiches

Hey Wednesday party people!

I’m still down here in Florida with Jaden, Todd and Diane and working my butt off assisting in shooting Jaden’s new cookbook. Okay, let’s be honest…what I really have been doing in eating everything in sight. This woman knows how to COOK. I can’t wait to show you some behind the scenes action when I get home in a few days.

But first….can I please tell you about the fish sandwich I ate last week? I love salmon but hate the way it makes my house smell to cook it, so this time, I made a delicious sweet and spicy glaze with honey and spices, topped my salmon fillet with it and then broiled to perfection.

And guess what? No icky fish smell! The glaze is a combination of honey, cayenne pepper, paprika, chili powder and brown sugar and is positively delicious. I love that sweet and spicy combination on fish and meats. I was just going to serve the fish alone, maybe with a side of roasted new potatoes or asparagus, but then I found these great (HUGE!) pretzel rolls and knew it was meant to be.

If you’ve never tried a pretzel roll, folks, you’ve never truly lived. And that’s a fact. My first pretzel roll experience was at King Street Grill in Charleston and now as I type this, I think I need to learn to bake my own. They are just so good. And huge. Watch out! Adam and I could have split one of these sandwiches, they were so large.

Oh! And even if you don’t really like mayonnaise (I don’t), still try it on this sandwich. I think you’ll like it!

Sweet and Spicy Glazed Salmon Sandwiches

makes two (large) sandwiches

Print this recipe!

Ingredients:

2 4-5 oz wild Atlantic salmon

2 tsp paprika

1 tsp salt

2 tsp brown sugar

1/2 tsp cumin

2 tsp chili powder

1/4 tsp cayenne pepper

1-2 tbsp honey

1/2 lemon, juiced

pretzel rolls (or regular rolls)

mayonnaise

lettuce

tomato

Directions:

Preheat broiler on high.

Mix together the chili powder, cumin, brown sugar, paprika and cayenne pepper.

Rub the salt on the salmon fillets, followed by the spice mixture. Lay fillets in a pie dish or on a tin foil-lined sheet tray and drizzle the honey over top. Broil fish for 5-8 minutes, until flaky but still pink. Remove from oven and drizzle lemon juice over top.

Prepare sandwiches by smearing mayonnaise on one side of the pretzel roll, then topping with a salmon fillet. Top with lettuce and tomato, followed by other half of roll. Serve warm.

    Funny you should post about this today, because I just posted pretzel rolls on my blog! They are so easy and SO GOOD! Especially because you can eat one (or two!) warm out of the oven. I don’t know if I’ve ever tasted anything so good. So yeah, try this recipe when you attempt to make your own. I LOVE them! 🙂 And yes, now I have to try a salmon sandwich next time I make them!

    Hi,
    Looks tasty. You seem interested in food facts, so I thought I would let you know that there is no such thing (commercially available) as wild Atlantic salmon. All Atlantic salmon sold in the U.S. is farm-raised because most countries (including the U.S.) prohibit the sale of wild-caught Atlantic due to low stocks. All wild-caught salmon is from Pacific species, such as king and sockeye.

      Just wanted to second this, and add (because you are into health) that farmed (Atlantic) salmon is incredibly toxic – studies recommend consumption no more than twice per YEAR or complete avoidance. Farmed salmon also has none of the benefits that wild-caught Alaskan salmon has – analyses demonstrate drastically lower levels of healthy omegas. Just something to keep in mind!

    I know what you mean about the fishy smell. Not the most pleasant aroma to have wafting through your apartment. This recipe looks delicious, though!

    I’ve been ever so curious about pretzel rolls after Mama Pea posted a recipe for Philly cheesesteaks with homemade pretzel subs about a year ago. Joy the Baker just posted a pretzel dog recipe today, so you know what? I think it’s meant to be. I’m gonna start some dough this morning 😀
    (And you know what that means? Salmon sandwiches for lunch tomorrow! Yessss.)

    I am just amazed at how pink that piece of salmon is.

    I also used to be obsessed with pretzel rolls while I was studying in Germany. Some swiss cheese between 2 slices and BAM — lunch.

    for most of my life, I was really grossed out by the idea of mayonnaise. then I went abroad and had the most life changing mayo in Amsterdam. now I can’t stop myself from slathering it on a number of things, from faux chicken patties to french fries, and now, this sandwich.

    I bet it’s amazing being with Jaden and Todd & Diane. I spent time with Todd & Diane at Food & Light in Boulder last year and they are so knowledgeable and such great people, it was just…beyond wonderful.

    I bet you all are having a blast and that you’re soaking up so much!

    The sandwich looks perfect and love the thick seasoning rub on the salmon…yum!

    Yum! I’ll have to at least try to the rub for the salmon, if not the whole sandwich! I always use the same old boring (but tasty) rub when I cook salmon and should probably branch out more. I do love a salmon blt, but that’s the only salmon sandwich I’ve had. 🙂
    I’ve seen pretzel rolls at Whole Foods and Wegmans but have never actually tried one. They do sound really good!

    I love pretzel rolls! I think I’m finally going to have to give in and order some food grade lye so I can make prezels (and rolls!) to my heart’s content. Or at least until the lye runs out.

    Broiling salmon is totally the way to go. It comes out perfect every time and simpler by, like, a hundred. This looks pretty major!

    Broiling fish is the way to go! We just had Broiled Sockeye Salmon last night. It was good but I think this might have been better!

    hmmm…I’ve never noticed a bad smell from baking salmon-it smells fantastic in my opinion. This looks really good-will need to try it the next time I buy salmon.

    That looks great! I’m afraid to cook fish for the smell and b/c it always comes out…tough?!? I’ll def try this though!

    Also, those are Trader Joe’s Pretzel Buns huh? I’m in LUV with them. If only they could make them hot dog size…Pretzel bun + keilbasa and sauerkraut. YUM!

    I have got to say this looks delicious! My boyfriend and I recently tried a new way of cooking salmon and it turned out so succulent. All you have to do is fill up a sink of hot water (roughly 120 degrees) and put the salmon in a ziplock bag with some olive oil and take out all the air. Then you just put the ziplock bags in the water for 15 min and finish it up in a pan with butter. I am thinking you add these spices to the ziplock and you have an easy fantastic meal!     HOLY WOW! This was my first foray into preparing fish at home and it was a huge success! I actually used smoked paprika and maple syrup instead (just eyeballed them) and the salmon came out so juicy and buttery tasting with the absolute perfect spice crust. Thank you, thank you!     i made the salmon tonight minus the sandwich part. I absolutely LOVED it and ate every little bite of salmon. Perfect. Thank you so much for a wonderful and flavorful recipe! I chose to substitute the honey with pure maple syrup. so tasty.
