<p>Chicken Paprika! Chicken PapRIKa! CHICKEN PAPRIKA! With homemade dumplings. Can you say comfort food?</p>

<p>When I was growing up, my mom would make this dish <span style="text-decoration: underline;">all the time.</span> It was a favorite in our house. She always served her chicken paprika over wide, slippery egg noodles to soak up all the creamy delicious sauce. It was one of my most beloved childhood meals.</p>
<p>But then I grew up, moved out and forgot about ol&#8217; chicken paprika. I never see it on any dinner menus and my mom is now 3,000 miles too far to make it for me. Boo.</p>
<p>I had some chicken defrosting in the fridge a few days ago and half a container of sour cream left over from my last <a href="http://www.eatliverun.com/creamy-white-chicken-chili/">chili</a> making adventure, and instantly chicken paprika popped into my head! What a perfect meal to make on a chilly Fall night. Easy, too! You really only need a few ingredients for this one: chicken (duh), paprika (double duh), onion, garlic, sour cream and chicken broth. I&#8217;m willing to bet many of us have those ingredients in your kitchen right now.</p>

<p>I&#8217;m relatively new to the whole chicken tortilla soup thing. My first ever bowl was at Kirbey Lane in Austin last September, and it technically wasn&#8217;t even <em>my </em>bowl&#8212;it was Adam&#8217;s. But he had a kidney stone and I helped him finish it&#8230;because that&#8217;s what you do for people you love. You help finish their meals when they&#8217;re in pain.</p>
<p>To be honest, I&#8217;m not quite sure why, so suddenly, chicken tortilla soup has been back on my mind but it is. And if you have never made it yourself, now&#8217;s the time. Think of a spicy, rich chicken soup filled with roasted peppers, tomatoes and chilies with soft pieces of corn tortilla floating around.</p>
<p>Yep, pretty much heaven in a bowl. And healthy, to boot! Well, it&#8217;s healthy until you dump two cups of cheese on top like I do. Yum.</p>

<p>Naturally, after three bites I begged for the recipe. Turns out, it was in last month&#8217;s Food and Wine and mom has already made it three times! I couldn&#8217;t wait to get back to California and make it myself, and practically during the entire six hour flight home I relived the experience of the tender chicken, the cheesy topping and the special secret ingredient that made it all possible&#8230;</p>

<p>Yesterday I decided to make some soup.</p>
<p>I was feeling a little under the weather after two crazy weekends spent traveling, many late nights, and an excess of wine, coffee and lamb chops.</p>
<p>My throat ached, my head hurt and I needed something with green things in it. Thus, a quick and easy version of tom kha gai was born. You know, the creamy coconut-y thai chicken soup. The soup that is both spicy and cooling, and offers big chunks of fragrant thai ginger along with pungent lemongrass and slivers of milky chicken breast.</p>
<p>It only took me about twenty minutes to prepare, start to finish, and afterward, as I was sitting on my couch tipping the bowl to get the last bit on my spoon, I realized that I felt better. My sore throat had all but vanished and my left nostril, which had previously been so stuffed that I couldn&#8217;t even smell the cilantro, had magically unplugged. My headache was gone and my tummy was happy.</p>
<p>I still have to go to <a href="http://eatliverun.com/why-i-dont-make-mashed-potatoes/">traffic court</a> and do lunges to fit into my skinny jeans, but for a moment, all was right in the world.</p>

<p>Anyway. Last night we drank beer and ate pizza and then watched three episodes of Mad Men while I ate about seventy dark chocolate disks from Whole Foods.</p>
<p>It was a good night.</p>
<p>Now today, I want to post the recipe for my mom&#8217;s barbecue pulled chicken for many reasons. Number one is because I miss my mom. And her chicken. Number two is because this chicken is one of the top five most requested recipes on this blog and for some reason, I&#8217;ve never posted a recipe in the three years I&#8217;ve been making/eating it.</p>
<p>I have no idea why.</p>

I posted <a href="http://eatliverun.com/breakfast-recipes/the-chicken-enchiladas/">the original recipe</a> for them way back in the day, when I was still in school and it my favorite meal that reminded me of home. Since moving out on my own, I&#8217;ve made them countless times for many different people and they&#8217;ve always been a hit. In fact, I&#8217;ve always <em>sworn by</em> my easy recipe. That is until my mom <a href="http://eatliverun.com/mom-come-back/">came and visited</a> and made me a <em>her</em> version of chicken enchiladas, anyway.</p>

<p>Instantly, nostalgic memories of eating forkfuls of spicy, fragrant jambalaya at my sorority sister&#8217;s house in Mandeville, Louisiana flooded back to me. I was nineteen, and we went there for a weekend to visit her family and go to a football game at LSU. The jambalaya that her dad made us was thick and full of Cajun sausage and spice. I haven&#8217;t had anything quite like it since.</p>
