soft white filled cookies

Before I officially start writing this post, I need to get something off my chest.

………….

I love visiting my parents. But……I can’t seem to tear myself away from my pet boarder’s web cam. You see, they actually have a camera set up in the “kitty condo” room so you can observe your precious pet at play. However, I’ve been (admittedly) watching said web cam now for days and all I’ve seen so far is a glimpse of Dexter’s bushy black tail. Is it normal to miss you cat so much when you travel? Your cat? Maybe don’t answer that.

Anyway! I hope you’re still baking.

The real name of these soft raspberry jam filled sugar cookies is “daddy’s filled cookies”, “daddy” being my grandpa. You guys should just hear him talk about these cookies! His whole face just lights right up. My grandma made them every single year when my mom was growing up, and every single year my grandpa would find his way to the hidden cookie tin.

soda cracker torte

I’m starting to think my great grandma and I would have been really, really good friends if I had been born in 1908.

First, there were those rolls….oh my. The softest, fluffiest, flakiest, butterist rolls I ever put a rolling pin to. Then came the ginger cremes—as in, the softest and most delicious molasses cookie ever created. I could eat like four dozen of those puppies. If you’re looking for a great holiday ginger cookie, look no further! Those take the cake. I’ll admit, she lost me for a little bit on the brownies with the prunes………but then she totally redeemed herself with this little number.

Grams knew a thing or two about mixing salty with sweet, that’s for sure. The star of this dessert? Saltines.

I’m going to go visit my grandparents next week. For that, I am thankful.

You see, one month ago I sat up straight in bed with the completely random, yet overwhelming urgency, to plan a trip to see them. The feeling, in fact, was so strong that I immediately called Adam with tears in my throat and told him I didn’t really understand why I was feeling this way, but I needed to plan a trip to Wisconsin as soon as possible. It would be expensive but I didn’t care. I needed to go. Did he want to come along?

He said yes.

Three weeks later, I got the call that my grandfather had had a heart attack, fallen down an entire flight on concrete steps, broken his hip and was in the hospital fighting for his life. And as my family waited grimly by the phone on Thanksgiving day, I remembered my conviction a few weeks before and gasped out loud. Folks, I couldn’t make this stuff up if I tried and no, I have never had a “premonition” like this before so don’t start asking me to tell your fortune or if the cute neighbor will ask you out next weekend.

My grandpa made it through surgery last week but his heart is still leaking enzymes and he will be the hospital for an entire month….and then who knows. All I know is that I’m thankful I’m going next week and able to bring some joy to both him and my grandma, who is currently all alone in the house for the first time in fifty years.

I think when I’m there, we will talk recipes. In specific, her mother’s recipes.

arlette’s triple ginger biscotti

During the year that I in culinary school, I worked at Roy’s Restaurant in Orlando. Every morning I would wake up and head into the restaurant to work then at 4:30, I would go straight from there to school until midnight. It was busy, usually exhausting, but I loved every second of it. This was around the same time that I started the blog (has it really been four years?) and I lived in an apartment with my childhood best friend who worked as a police officer, interestingly enough. We called each other “the cook and the cop” and it was always a great conversation starter whenever we went out. Helen and I have been best friends now for twenty years almost!

Anyway, my job at Roy’s wasn’t working in the kitchen, despite the fact that I was a chef in training. Rather, I did administrative work, booked events, took reservations…that kind of thing. And when I wasn’t busy on calls or doing computer work, I was back in the kitchen anxiously learning tips from Arlette, the pastry chef.

Every day, Arlette would whip out dozens of chocolate lava cakes, the signature dessert at Roy’s. But sometimes she would have enough time to bake a batch of her special triple ginger biscotti. And I was always there to nibble on the crumbs!

chocolate angel nut pie

I have a few Thanksgivingish posts up my sleeve. I hope you don’t mind. It’s just that this past week I’ve been a Thanksgiving making fool and it’s all I’ll be able to do in a few days to strap myself into a crowded airplane seat and travel home to eat some more.

My mom just announced she is making cornish hens with cherry sauce for Thanksgiving dinner! She’s a rebel. I can’t wait to pad around my parent’s house in my pajamas all day and lick cherry sauce off the spoon.

This pie is another one of Great Grandma’s recipes. I truly hope you guys are enjoying reading about these amazingly retro recipes as I am making them!

chewy caramel apple chip cookies

These happened yesterday.

They happened as a result of a total impulse purchase at the grocery store last week. People, I needed these caramel bits the moment I saw them. NEEDED. Sort of like I needed a salt water taffy in every single flavor last weekend at the candy store. Then afterwards, I needed an ice cream cone. And later, I needed a green vegetable and pepto-bismol.

pumpkin cheesecake bites

I made these yesterday. And then I ate one. And suddenly everything in life made sense.

Well, maybe not everything. The Twilight books still mystify me…but that’s another post for another time. Don’t hate me!

Usually, I’m more of a cake girl. Read: not cheesecake.

You know….regular vanilla or chocolate stick-to-your-ribs-and-topped-with-fluffy-buttercream girl. That being said, I can’t get enough of this pumpkin cheesecake. It’s the same pumpkin cheesecake we used to make at the club during my externship and it always got rave reviews…along with our cranberry orange bread and pumpkin whoopie pies!

Oh, how I miss the days of being bossed around in the kitchen surrounded by a bunch of stinky boys. NOT.
