The Proof is the Lemon

Well, my hands have finally stopped burning!! Now they sort of still tingle under my nails, but its much better than it was. The Chef at work had me soak my hands in freezing cold lemon juice and I swear that’s what cured me. Worked better than anything I had tried thus far! I’m in a huge rush because I’m trying to get to school an hour early to get caught up on what I missed last night.

For dinner, I had another mexican themed meal (without any cilantro!): I made a bean burrito on a whole wheat tortilla with homemade guacamole, refried beans, sauteed red onion and bell pepper, FYH cheese and salsa. Whew!! Try rolling that one up! It was quite messy…I always over-stuff my burritos! I also had a spinach salad with one of the mammoth carrots from the market and some cucumber with Annie’s Tuscany Italian dressing. I have to say I like Woodstock or Goddess dressing better, but this was pretty good.

Bringing a SCM (super charge me) cookie for later—hopefully we will have an early friday night!

    I am really interested in the Super Charge Me Cookies. I know you got them from the Eat, Drink, & Be Vegan Cookbook, which I have tried to check out on Amazon.com. However, the “search inside” function is not operating, so I cannot look at the table of contents. I’m not a vegan, so I do not know if it would be worth it for me to purchase this book. I don’t eat a lot of tofu…anyone have any ideas?

    Hey Jenna–Just curious as to what brand of tortillas you use? I am experimenting with Ezekiel brand right now. Looks delicious, as per usual!

    i’m curious. what is the difference between jamacan cilantro and the regular cilantro??

    Are you sure it’s the cilantro that made your hands burn? Jalapenos can make your hands burn for hours if you don’t wear gloves when handling them…and anywhere you touch transfers the “heat” from the peppers and causes burning…glad you are better…you’ve really had a couple of rough days…

    Also, I’m not vegan or vegetarian and I purchased ED&BV and love it…it’s worth the price of the cookbook just to have the recipe for “you got peanut butter in my chocolate” cookies. I’ve made several other recipes and even my husband liked them and he’s a meat and potatoes person…

    I’ve got to make the Supercharge Me cookies soon…they look delicious.

    I just wanted to say that I always buy vegetarian refried beans because I swear you cannot taste the difference and they are sooo good! Yum.. I am totally making burritos tonight!

    Hi Jenna,
    I’m so glad you are feeling better, but don’t worry we all get those days, you aren’t the only one! =] I was just wondering when you pack hummus for a snack, do you refridgerate it or just leave it in your lunchbox? If you leave it in your lunch box, how long does it last without getting watery or spoiled?
