Well, there was no workout for me this Tuesday morning!! I didn’t leave school last night until 12:30!!!!!!!!!! By the time I fell asleep, I’m sure it was close to 2 a.m. So….I chose sleeping an extra half an hour over working out because I knew that if I were to wake up at 7 and do the upper body workout I had planned, I would feel not-so-hot for the rest of the day. I’m already a zombie 🙁 My new class is fun and should be very interesting, but I really really hope we don’t get out late like this all the time. My chef instructor did say that this class was one of the latest. I’m ready to graduate already!!!!!
Last night, after an hour of lecture and demo, we made 4 genoise cakes—2 plain and 2 chocolate. We also made swiss buttercream frosting (USING 5 POUNDS OF BUTTER, PEOPLE!) and regular ol’ buttercream frosting. We didn’t decorate or finish anything off though because that’s what we are doing tonight. So hopefully, it won’t be another 12:30 night.
This morning I dragged myself out of bed to make a bowl of oatmeal. I used a banana, soy milk and almond butter and for some reason this morning it was super super filling. I *almost* couldn’t finish it (yeah right, I finish everything but it was close). Maybe I used more almond butter than usual? My appetite has been so odd the last few days. Last night in school I was STARVING. Seriously starving. So starving that I ate my cookie half an hour earlier than I usually do and therefore was hungry again for the rest of the night. I wanted to make toast or something when I got home but I resisted because at 12:45 all I wanted to do was get in my pjs and get into bed.
I had no strength to be cool and creative with my lunch today (that, and I’m lacking on food in the house) so I just packed some microwavable chili, a pear and for a snack later, some popcorn (half the bag=1 serving size) and some apple slices.

Hopefully I will gain some energy throughout the day!!

Also, as a former shelter employee I think it’s great you adopted a black cat because just like black dogs they’re often overlooked. Hopefully seeing how adorable Dexter is will encourage others to check out the black animals next time they adopt.

Vegan is fine (esp because I know for a fact that at least one person in the class is vegan) and I have non-dairy vegan dark choc chips on hand… I have to bring something in to a chocolate lecture tomorrow, and I think a muffin-type treat would be ideal because it’s at 9am! Jenna, I think you baked mini-muffins a week or so ago, but I don’t think you posted the recipe or which cookbook it was from…? Thanks in advance everyone! 🙂
