Tomato and Feta Stuffed Chicken Breasts

Oh man, do I have the easiest, most delicious, dinner for you tonight. Seriously! I made this chicken the other night as a way to use up whatever I had left in the fridge and it turned out so good. Adam loved it, but that doesn’t come as too much of a surprise. The man would eat a shoe if it was covered in feta.

Plump chicken breasts are stuffed with a Mediterranean-inspired blend of tomatoes and feta cheese, then baked to perfection. If you can even believe it, this recipe only has FOUR ingredients! Told ya it was simple. It’s perfect for a quick weeknight meal or you could jazz it up for company.

To make this, just cook some canned diced tomatoes with a little feta until most of the liquid has absorbed and the mixture is creamy. And when I say a “little” feta, I clearly mean a heaping half cup of feta.

My three cooking rules go as follows — when in doubt, add more feta, booze and garlic salt.

That, my children, is the secret to life.

Friday night dinner is DONE.

I served these with roast brussels and a rosemary quinoa brown rice blend that the folks over at Fair Trade gifted me a couple weeks ago when I had lunch at their office in Oakland. It was the perfect little dinner and incredibly satisfying {especially when followed by banana pudding}.

Tomato and Feta Stuffed Chicken Breasts

serves 2-4

Print this Recipe!

Ingredients:

2 large chicken breasts, skin on — about 1.5 lbs

1 cup diced tomatoes with basil, garlic and oregano

1/2 cup crumbled feta cheese

pinch of salt and pepper

Directions:

Preheat oven to 400 degrees. Grease a 8″ baking dish with nonstick spray.

Simmer the diced tomatoes over medium heat for about 10-15 minutes, until most of the liquid has absorbed. Add the feta cheese and stir well to combine. Remove from heat.

Carefully cut a deep pocket in both chicken breasts. Spoon filling in as far back as you can, filling up the pocket completely. Place stuffed chicken breasts in your baking dish and sprinkle each with salt and pepper.

Bake chicken breasts for 40-45 minutes, until skin is golden brown and chicken has cooked through completely.

    I love stuffed chicken breasts. Eating chicken so much can get boring–so stuffing it jazzes it up a bit. I recently did sundried tomatoes and parmesan. This combo looks great, too!

    So I just made this for lunch (early dinner?) today, with roasted cauliflower and a romaine-fennel salad, and it was amazing. The chicken breast came out so tender and flavorful! Please keep up all of these delicious, hearty meals from which you can actually get up and walk 🙂

    Ohhhhh Jenna! I love that the ingredient list on for this chicken recipe is short and to the point! It makes this healthy delicious chicken so easy to fashion up after work!     I made these for dinner a couple weeks back and have to say that i cannot WAIT to make them again! Its amazing how little goes into this and what a tremendous flavor comes out. I had a bit of trouble figuring out how to stuff the chicken at first but once i got that down, i was good to go. SO amazing! Served with buttermilk mashed potatoes and green beans.

    I added a splash of white wine and green onions to the tomatoes while they cooked, I didn’t have any oregano so just used basil and it smells delicious. Can’t wait to taste it, I know it will be amazing. Can’t miss with feta!
