Friends!
A new year is upon us! I hope everyone had a great holiday. We originally had planned to get a fancy schmancy hotel room in the city and go out to a fun dinner but I ended up feeling really exhausted after a two day holiday travel adventure {cancelled flights, rerouting, random hotels in random states…} that we decided to just stay in. I cooked up a big Southern-style New Years feast for just the two of us – hoppin’ john, collard greens, beer bread, skillet cornbread, grilled italian sausages and flourless chocolate cookies – then soaked in a hot bath and was in bed by 10pm. It was amazing. I felt bad that we cancelled our plans but staying in was just what the doctor ordered. I felt a zillion times better the next day!
I feel like everyone in the Internet world is posting their favorite healthy recipes to start the new year and I guess I’m no different. I love starting each new year out on a healthy foot because, let’s be honest, it usually just ends with butter, bacon and brown sugar anyway.
I’ve been pretty good about eating healthy this pregnancy. We got a juicer and I’ve been making green juice daily {kale, cucumber, green apple, ginger and lemon} and snacking on a lot of raw almonds, Greek yogurt and fresh fruit. There’s also been plenty of golden grahams, brown sugar pop tarts and Wendy’s frosty cones, don’t get me wrong. It’s never been so much fun to gain weight before.
Here are some of my very favorite “healthy” recipes! These are the ones that I reach for every January after I have mega-overindulged and need a clean break. I hope you enjoy them as much as we do!

January 2, 2014 at 8:17 amYum! Can’t wait to try some of these out! I have a question about the juice you make: any tips for getting the kale to actually juice rather than just fly through the shoot? I have a similar juicer to yours (aka not one of the ones that is made for greens) and I don’t feel like I ever get any juice from the kale or spinach I send through. Would love any advice!!

January 2, 2014 at 8:24 amI have the same juicer Jenna has. It is not going to juice greens as well as a masticating juicer would. But I feel like it juices the greens pretty well given its limits. My husband and I put spinach and kale through along with a carrot or cucumber and that helps. Maybe try that and see how it works for you!

January 2, 2014 at 2:46 pmI have found that my juicer (probably a very similar one to hers…the one they use in Fat Sick and Nearly dead) and while it hates a loose leaf (like a bag of TJ’s Tuscan kale), it LOVES a full leaf of kale. I wonder if the stem has a lot of nutrients, but probably a lot of water.
