Turning Into a Cream Puff!

Happy Tuesday!

Oh man…today in school we made eclairs and cream puffs, and let me tell you—they look awesome!!!!! I haven’t had an actual bite yet but I have had my fair share of licks of the pastry cream that they are filled with! Yum, yum, YUM!

I had a really good lunch today. I made a salmon sandwich because last night at the store I finally found canned salmon that is boneless and skinless so I’m a little less freaked out using it now! haha! I mixed 3 ounces of it with a tbsp of miracle whip and some whole grain dijon mustard and spread it on 2 slices of rudi’s organic honey sweet whole wheat bread (100 calories per slice and sooo good and soft!). I also had 2 pieces of garlic and herb light laughing cow cheese as well as some carrots and a pear. Carrots are really good dipped in this cheese! I will be having this combo again! 🙂 I haven’t had this cheese since I was growing up but it’s so tasty and very low calorie—I really like it! This lunch was very filling and healthy and hopefully will give me fuel for the rest of my afternoon which involves errand running and yoga class!

I am in a rush right now to get to the bank and the library but I don’t have to work tonight so I will get to all of your questions and comments then! Thanks for being so patient! 🙂

    Hi Jenna! Those cream puffs look sooo good! Last week of baking…I’m going to miss the pictures…at least you will officially be in on the 18th! I think I am starting baking and patisserie on the 18th as well…I was so excited that my school changed it to what your school offers now!! I am also going to try and continue with the culinary program,seeing as I am half-way through that program.. so that means 10 hours at school a day!! Hopefully it will work out. Also, I made your roasted vegetable soup last night for dinner- I loved it- soo comforting…also baked some fresh whole wheat rolls to go with it…..thanks for the recipe it was great!

    I love salmon but I’m kind of grossed out by the skin and bones in the canned versions, what brand did you use this time??

    Okay, I shop for canned tuna and salmon all the time and I have never seen a can that said that it comes with or without bones! I would be so grossed out and shocked if that came out of my can, yuck! I love canned tuna but I actually really don’t care for the taste of canned salmon very much, but smoked salmon…yum!

    The pastries look delicious, and I don’t even like cream puffs! I am sure yours would be delicious though and no comparison to the store bought variety.

    wow! i don’t have to say anything about how good those pastries look b/c everyone else already took the words out of my mouth! i haven’t commented on your blog yet, and normally i just prefer to read, but your blog has truly been inspirational and i look forward to reading your posts everyday! so kudos to you and good luck w/the pastries! (i would never be able to have the willpower not to eat all those sweets! so even more kudos to you!). keep having fun and loving food!

    That’s awesome!!!!!! Please keep me updated on how it all turns out with doing two programs at once! We can exchange recipes 🙂 I actually applied for a job today at a little dessert cafe here to “use” my new skills….we’ll see if that works out!!

    I used bumble bee. It tasted great! No skin, no bones….just chunk salmon in water. I used just about the entire can…about 3 ounces salmon drained of all the water. I highly recommend it!

    You know…I’m not sure. Who can tell exactly? Pears are supposed to be about 80 calories and this was a normal sized one that I just sliced up. I’m not that concerned with it….it might be less or more. It was good. Really really good!

    Thank you!!!!!!! Unfortunately the tip of the week section needs to be worked on because I’m still trying to figure out how to save them all week to week. Right now I’m just erasing them then writing new ones. I shall work on this! Last week’s was about keeping your fruit on the kitchen counter not in the fridge for max flavor and the week before was about laying all your breakfast stuff out the night before to make for a quicker, less stressful morning.     Those swans are the most amazing things ever… I want one. I would easily buy one from you, though I don’t know if I’d be able to eat something so cute. It reminds me of those cute little chocolate porcupines I used to get and could never eat because it would make them sad.

    LOVE the swans!!!! When I was a young girl, my mother used to make canned salmon and creamed peas. I was so grossed out by it, I still could not buy canned salmon…..

    Mom you don’t need to have an alternate persona to comment on the blog! Believe me…I KNOW you hate canned salmon. I have only recently been able to buy it….but its quite good! BUT you THOUGHT you hated bread pudding too and we have recently discovered its your new favorite dessert!!!
