Oh hey! I’m still eating breakfast over here, what about you?
I know lately the blog has been a little, er, breakfast heavy but bear with me! I love it so.
And these pancakes are special. I mean really special. Why? Because they taste just like my very favorite dessert—old fashioned gingerbread!
Made with whole wheat flour, Greek yogurt and an array of fall-ish spice, these pancakes make the perfect hearty weekend breakfast.
Or weekday lunch. <—me yesterday.
Make ‘em this weekend! You won’t regret it. I’ll be dreaming of these puppies while I’m pitchin’ a tent and surviving off of trail mix all weekend. So….eat some for me, okay??

Darn…this is just poor timing. If you had posted this earlier I would have made this exact breakfast for myself this morning! Alas, I searched for other pancake recipes to use up some quickly expiring greek yogurt, one of which did not turn out as planned. I will keep this recipe in my back pocket for next time!

I love gingerbread, but SUCK at making pancakes. I swear, I can make a freaking cheese souffle perfectly. Pancakes? not so much.

You know that pancake at the very bottom of your stack? The one that’s all soggy and saturated with maple syrup. I’ll take that one first, please!

Wow, these look great! I was just thinking how I need to make pancakes this weekend. I might try to veganize these (almond milk, flax egg, earth balance) and also sub out the greek yogurt for pumpkin to fuel my current pumpkin obsession…pumpkin gingerbread sounds awesome, right?!
I, for one, will NEVER complain about having so many breakfast posts.

Made these this morning for breakfast, and they were delicious! I subbed in light sour cream because I was out of plain Greek yogurt. Not as nutritious, but it worked. I got 10 pancakes out of one recipe, so I’d say it makes more like 4-5 servings. Definitely a keeper!
These look just perect! gingerbread pancakes are one kind I have yet to try… that’s so going to change.
these were delicious! just made them this morning and i added bananas to the mix and needed closer to 1 cup of (almond) milk. yum.

I made these this morning (and my mom told me that she did, too)! My whole family loved them; real keeper. The only modification I made was to lower the butter to 1T; they still came out fantastically. To the last half of the batch, I added chopped up cranberries (from the freezer). YUM! (My mom makes a cranberry upside-down gingerbread cake, which is what made me think of it.) This is definitely a keeper recipe that I expect will appear at our house over many, many weekends. Oh, and I got 13 pancakes (and my mom got 16), so I’d say this feeds +/- 4 people.

I actually doubled the recipe leaving enough pancakes + leftovers for both my roommates. EVERYONE absolutely loved them, including my professional chef of a roommate. DELICIOUS!!! thx
I made these for breakfast this Sunday morning and they were delicious! I’ve never added Greek yogurt to pancakes before – new pancake secret ingredient!
I should totally make these for my dad. He is a crazy for anything ginger…..gingersnaps are his fav cookie, gingerbread his favorite dessert, you get the idea. This could totally be his fav breakfast.
I love gingerbread so much but my hubby isn’t into it. His main problem is the molasses, so I’m hoping he likes these. Breakfast for dinner!!
