whole grain gingerbread pancakes

by jenna on October 14, 2011

Oh hey! I’m still eating breakfast over here, what about you?

I know lately the blog has been a little, er, breakfast heavy but bear with me! I love it so.

And these pancakes are special. I mean really special. Why? Because they taste just like my very favorite dessert—old fashioned gingerbread!

Made with whole wheat flour, Greek yogurt and an array of fall-ish spice, these pancakes make the perfect hearty weekend breakfast.

Or weekday lunch. <—me yesterday.

Make ’em this weekend! You won’t regret it. I’ll be dreaming of these puppies while I’m pitchin’ a tent and surviving off of trail mix all weekend. So….eat some for me, okay??

Head to PBS Food for the recipe! And have a fabulous Friday, my sweet friends!

I love that they aren’t too butter or sugar heavy – can’t wait to try them!

I don’t know How I’m going to loose any weight mess with your blog girl! I guess if i eat one pancake I’ll be okay, with some fruit? LOL

Angela @ Eat Spin Run Repeat October 14, 2011 at 7:01 am

I finished breakfast ages ago, but I’d happily have it all over again if it means eating these! LOVE the gingerbread idea. Heading over to PBS Food now!

Have fun camping.

And I went on a little Etsy spree. Thank you :)

Kelly October 14, 2011 at 7:19 am

Darn…this is just poor timing. If you had posted this earlier I would have made this exact breakfast for myself this morning! Alas, I searched for other pancake recipes to use up some quickly expiring greek yogurt, one of which did not turn out as planned. I will keep this recipe in my back pocket for next time! 😉

Hilliary@HappilyEverHealthy October 14, 2011 at 7:22 am

I am perfectly okay with some extra Breakfast recipes. I need to get better at eating more than cereal on a regular basis. Let’s start with these!

Cat @Breakfast to Bed October 14, 2011 at 8:20 am

I love gingerbread, but SUCK at making pancakes. I swear, I can make a freaking cheese souffle perfectly. Pancakes? not so much.

Sarah October 14, 2011 at 8:31 am

Sally October 14, 2011 at 9:21 am

You know that pancake at the very bottom of your stack? The one that’s all soggy and saturated with maple syrup. I’ll take that one first, please!

Liz @ Southern Charm October 14, 2011 at 9:21 am

So excited with the whole wheat flour and greek yogurt. These look fantastic!

Amanda October 14, 2011 at 9:36 am

Wow, these look great! I was just thinking how I need to make pancakes this weekend. I might try to veganize these (almond milk, flax egg, earth balance) and also sub out the greek yogurt for pumpkin to fuel my current pumpkin obsession…pumpkin gingerbread sounds awesome, right?! :)

Lauren @ Oatmeal after Spinning October 14, 2011 at 10:13 am

I, for one, will NEVER complain about having so many breakfast posts.
Love this!! Congrats on the PBS article, too!!

Christine @ Oatmeal in my Bowl October 14, 2011 at 12:54 pm

After finding your rendition of Sweet Zucchini Pancakes on Tasty Kitchen. To these now healthy good for you Gingerbread pancakes. I am now having this odd craving for pancakes in the middle of a 90 degree weather day. 😉

Delicious! Thank you for sharing the goodness.

sarah@spinach&spice October 14, 2011 at 12:57 pm

I love your breakfast kick as of late! It is the most important meal of the day 😉 These pancakes sound incredible!

Gingerbread & pancakes. 2 wonderful things. I love it!

Molly @ RDexposed October 14, 2011 at 2:50 pm

Wait but now I’m torn making these or your cinnamon rolls for Sunday breakfast. Why must you create such dilemmas?

Jen October 14, 2011 at 3:57 pm

How do you decide each day/night what to make for your blog? Do you go by what you would like to eat or what might appeal to others?

I guess I am asking basically – what inspires you!? Cookbooks, blogs, etc.

Katrina October 14, 2011 at 4:06 pm

These are heaven on a plate. Fo sho.

Amanda October 14, 2011 at 4:22 pm

These look AMAZING! Oh yeah, and I also go in streaks where I eat breakfast for many meals. It’s awesome.

No shame in keeping breakfast options open; keep the good eats coming! Can’t wait to try this one out tomorrow. I have friends coming into town tonight, and this’ll be just the fall treat to entertain with!

Ashley October 14, 2011 at 8:42 pm

These are perfect for chilly fall mornings with a big mug of coffee!

Hannah October 14, 2011 at 9:53 pm

*does a happy dance in my heart* Gingerbread is the most magnificent of all the breads! And now, the pancakes.

Karen October 15, 2011 at 7:43 am

Made these this morning for breakfast, and they were delicious! I subbed in light sour cream because I was out of plain Greek yogurt. Not as nutritious, but it worked. I got 10 pancakes out of one recipe, so I’d say it makes more like 4-5 servings. Definitely a keeper!

Heather @ Get Healthy With Heather October 15, 2011 at 9:50 am

These look just perect! gingerbread pancakes are one kind I have yet to try… that’s so going to change.

sofia October 15, 2011 at 12:58 pm

these were delicious! just made them this morning and i added bananas to the mix and needed closer to 1 cup of (almond) milk. yum.

Frannie October 15, 2011 at 1:18 pm

I made these this morning (and my mom told me that she did, too)! My whole family loved them; real keeper. The only modification I made was to lower the butter to 1T; they still came out fantastically. To the last half of the batch, I added chopped up cranberries (from the freezer). YUM! (My mom makes a cranberry upside-down gingerbread cake, which is what made me think of it.) This is definitely a keeper recipe that I expect will appear at our house over many, many weekends. Oh, and I got 13 pancakes (and my mom got 16), so I’d say this feeds +/- 4 people.

Brittnie (A Joy Renewed) October 15, 2011 at 5:55 pm

I will never complain about a breakfast recipe. Keep them coming. Bah, I want these right now! I’m in my PJ’s…does it matter if it’s 11:04pm?

I follow your blog all the time, but have yet to actually leave a comment. I made these pancakes for my boyfriend on Saturday morning and they were a hit! I actually doubled the recipe leaving enough pancakes + leftovers for both my roommates. EVERYONE absolutely loved them, including my professional chef of a roommate. DELICIOUS!!! thx :)

Erica October 17, 2011 at 2:35 pm

I made these for breakfast this Sunday morning and they were delicious! I’ve never added Greek yogurt to pancakes before – new pancake secret ingredient!

Diana @ frontyardfoodie October 18, 2011 at 8:06 am

I should totally make these for my dad. He is a crazy for anything ginger…..gingersnaps are his fav cookie, gingerbread his favorite dessert, you get the idea. This could totally be his fav breakfast.

Carissa @ ChoiceSustenance October 18, 2011 at 8:50 am

I love gingerbread so much but my hubby isn’t into it. His main problem is the molasses, so I’m hoping he likes these. Breakfast for dinner!!

Maria October 18, 2011 at 1:05 pm

I made these this weekend, My non sweets eating boyfriend even loved them. He was shocked to find out there was Greek yogurt in them! Thanks for the great recipe!
