Beet Pesto Pasta {GIVEAWAY!}

I’m just so excited. I feel like SO many of my lovely friends have cookbooks out this spring and I’m so proud of them!

I had been waiting a long time for this book to come out by my sweet friend, Heather Christo, and it did not disappoint. You guys — this is, without a doubt, one of the most beautiful cookbooks that I have ever seen. The photography is stunning. The recipes are fabulous {so far, I’ve made four things from the book and going strong!}. The day it came out, I immediately hopped on Amazon and bought copies for my mom and one of my best friends. I’m so excited to share Heather’s book with you today. It’s really something special.

I feel like when I’m not developing recipes for this site, I’m cooking Heather’s recipes. I’m not kidding. Whenever I don’t know what to make for dinner, I always turn to her because I know she doesn’t disappoint. When something I make is really, really delicious, Adam always asks, “is this one of Heather or Jessica’s recipes?” Yup. It’s true. I have super talented friends, what can I say?

I made the beautiful beet pesto pasta recipe out of Heather’s new cookbook to share with you guys today! It’s the ultimate spring pasta dish. I share Heather’s obsession with pesto. Ever since getting my first food processor last year, I’ve made pounds of the stuff. It fuels my garlic + lemon love.

This vibrant pesto is made from beets, pistachios, garlic, lemon and Parmesan cheese. Oh man, is it ever tasty! I loved the addition of pistachios, which are my favorite nuts {and ice cream flavor!}.

There’s also an equally lovely asparagus pesto recipe in Heather’s cookbook. I made it about a month ago for friends and everyone loved it! I’ll say, though,that this beet pesto trumps it, due to the sole fact that the pasta is hot pink. Obviously. This would be a fun dish to serve on Valentine’s Day or for a date night at home. Next time I make it, I’m going to serve it alongside some grilled chicken.

Beet Pesto Pasta

serves 4-6

from Heather Christo’s Generous Table

Print this Recipe!

Ingredients:

3 large purple beets, top trimmed

3 cloves garlic, peeled and smashed

1/2 cup shelled pistachios

1/4 cup fresh lemon juice

1/4 cup olive oil

1 cup finely grated Parmesan cheese

salt

1 lb dry spaghetti

Directions:

Bring a medium pot of water to a boil. Add the beets. Boil until fork tender. {this took me about 30 minutes}

Drain the beets and skin them. Chop into quarters and place in the bowl of a food processor. Add the garlic, pistachios, lemon juice and olive oil and pulse into smooth. Add the Parmesan and continue pulsing until you have a relatively smooth thick spread.

Bring a large pot of salted water to a boil. Add the spaghetti and cook to al dente. Drain when done and toss with pesto. Serve immediately.

Time:

45 minutes

I love how vibrant the colors of the pesto pasta. This is a very unique recipe because I have not seen reddish pata. This is definitely perfect for me because I love spaghetti. And this really suits me because it sounds healthy and tasty. Is there an alternative if pistacchio is not available?

Hi, I’m new to your site, but loving it! I made 2 of your Mediterranean style recipes for dinner last night and they were a huge hit. I get a weekly CSA and I’m excited to use this week’s asparagus and kale in some of your recipes, and plan to try this one as soon as beet season begins! Thanks so much for sharing this recipe. I always find myself at somewhat of a loss with how to cook all my CSA beets. You can only roast them and toss with goat cheese so many times. Can’t wait to try this and I would love to have her cookbook!

Jenna this looks amazing! I normally steer clear of carbs for dinner, but I think I may have to make an exception for PINK pasta! Congratulations on your upcoming wedding :) Mine is coming up on August 3rd in the Bay Area and I share in your exceitment every time you post about yours!
I’m wondering – for the pesto, do you think the beets should be fresh, or could I use the steamed beets from Trader Joe’s? That shortcut would make this an ultimately easy weeknight meal! Let me know if you think it would sacrifice flavor at all.

I absolutely love to eat beets! I learned they help with detoxing the liver, so I eat a 1/2 c. or so daily. I have only been making them in one fashion…..peeling and cubing them, tossing them with a drizzle of organic EVOO, a few splashes of balsamic vinegar, sprinkles of course sea salt and baked for 30 minutes in glass casserole dish in oven. I store these in fridge for a week and when I eat my daily amount, I eat cold and straight from container or added to my salad greens. So yummy! Now I have another recipe to use them in and I really love my pesto!!! I will probably not toss with pasta but rather use straight on rice crackers and as a dip! I bet Heather has lots of yummy, healthy recipes in her new cookbook!!

Yum! I did so many trials of a red velvet cake colored with beets and pomegranate a year ago and totally burnt myself out on the color, smell, and taste of beets! However, after a year, I think I’m finally ready to deal with beets again. :) This recipe might be my first one to try. Thanks!

As an adult, I am still trying to get over my beet aversion. My lovely grandmother served pickled beets at many meals…not a childhood favorite. I am still, decades later trying to like beets. This recipe could do the trick. Thanks for sharing!

What a creative way to use beets! I fell in love with beets when I was a Peace Corps Volunteer in Namibia (it was a popular veggie side) but haven’t cooked with them much since I got back to the States. I will definitely try this yummy pesto!

I made the pesto yesterday and it’s wonderful! I still have some left so I think I’ll try it on boiled potatoes next time…

I just made this recipe for a friendversary, and it was AMAZING! I had to sub sunflower seeds for the pistachios (not readily available at my South African grocery store), but I’m sure it’s even more amazing with them. Such a fun, girly food–def going to make it again for our girls’ pasta nights! Thanks Jenna!
