Double Chocolate Fudge Cookies

Well, you guys. It’s finally time. I can finally say that I’m getting married next week. That’s NUTS.

That being said, you can probably imagine what this week is like for me. I’m scrambling. I’m packing for our wedding + honeymoon {we won’t be back until mid-June}, finishing up all the wedding details and all my work so I can take a real vacation for a few weeks. I’m also doing all that bridal prep stuff like getting my hair highlighted and getting my nails done because once our plane touches down in Austin, it’s go time. First with my bachelorette party, then rehearsal dinner, then wedding! Like I said…nuts. I’m so excited! If you’re wondering what will happen to this blog while I’m on my honeymoon, the answer is nothing. I’m going to be quiet for a few weeks and just soak it all in. I vowed not to be attached to my laptop while I’m on my honeymoon and I think it’s going to be really good for me! There will probably be a travel update here and there {keep up with us on Instagram!}, but no real posts until I return in June.

However, today calls for cookies!! And not just any cookies — double chocolate fudge cookies made with Fair Trade ingredients!

I told you guys a few weeks ago that I was doing some work with my friends over at Fair Trade and this is one of the recipes I came up with using the fun ingredients they sent me! I’m in love with this alter eco organic mascobado cane sugar! It has a pretty strong vanilla and caramel taste to it, which I can’t get enough of. If you’re lucky enough to get your paws on some of this sugar, it’s a real treat.

This cookies are for the serious chocolate lover…aka yours truly! Especially during stressful wedding planning moments. I like to say my pre-wedding diet has consisted of chocolate and avocados. I should really market that idea, huh?

They are chocolatey, ooey and gooey. Let’s just say you’ll need a glass of milk to wash these bad boys down.

Double Chocolate Fudge Cookies

Print this Recipe!

yields 2 dozen cookies

Ingredients:

2 sticks unsalted butter, room temperature

1 1/3 cup Fair Trade organic cane sugar

2 eggs

½ tsp salt

1 tsp baking powder

1/3 cup cocoa powder

2 ¼ cups all purpose flour

1 12-oz bag Fair Trade semisweet chocolate chips

Directions:

Preheat oven to 350 degrees and line a sheet pan with parchment paper.

Cream together the butter and sugar until light and fluffy. Add the eggs one by one, beating after each addition.

In another bowl, sift together the flour, cocoa powder, baking powder and salt. Add to the butter mixture and mix until combined. Add the chocolate chips and mix until just combined.

Drop dough by the spoonful onto prepared sheet tray. Press down gently to slightly flatten each cookie dough mound then bake for 12-13 minutes.

Let cookies cool on a wire rack then enjoy!

I’m so glad you’re taking a laptop-free honeymoon. I can’t recommend it enough. It’s life changing. We did no cell phones, too. I did have one post pop up while I was on my honeymoon because it was a sponsored post, but I set it to go up automatically and checked on it one day out of the 15 days. You’re going to love life without media!

I found your blog about three years ago during a summer in China when I was bored to tears. Most blogs are blocked in China {b/c Blogspot is blocked & most of the to-read blogs I had on my list were on Blogspot, so they were all inaccessible}, but I found yours and literally read every single post until the very first one. I’ve read through all of my adventures – your heartbreaks, your journeys, your successes. I squealed when you finally posted that you and Adam were dating :) Anyway, my point is – I know everything you’ve gone through {or at least, the stuff you’ve posted about} and more than anyone, you deserve the most joyous of a wedding to the love of your life. Please have the most wonderful time on your honeymoon as well – and come home in June w/ stories to share!

I got married almost exactly a year ago…I know how you’re feeling! The best advice I received for the week leading up to AND the wedding day was at least every hour, pause what you’re doing, take a deep breath, and just look around. Soak in everything you can for just a few seconds – the people around you, the scene, the whole big picture.

I can’t wait to see your honeymoon pictures. I can’t believe you planned a wedding so fast! I got engaged August 28th, 2012 and I’m not getting married until October 4, 2014!! Double fudge? It’s like you wrote this recipe just for me — that’s my favorite type of cookie! Half of the cookie dough never makes it to the cookie sheet though… It goes straight into my tummy (because who doesn’t taste test their cookie dough?)! ;)

I wish I would feel the same stress and excitement sometime in the near future. I want to get married too! I know that time will come in my life! Have a good one!

Anyway, I just can’t help my self but to commend you on this succulent double fudge cookies! They’re truly amazing. I tried imitating it and gave it to my nieces and nephews last weekend and they said that I should stop by again this coming saturday for another round of cookies for them!
