These flatbreads contain pretty much all of my favorite things….in life.
Juicy ripe figs, applewood smoked bacon, peppery arugula, goat cheese and pizza dough?
SOLD.
I don’t know if I can ever eat “normal” pizza ever again, actually. I’m so spoiled by the flavor combination going on right here. These mini flatbreads take sweet-and-salty to the whole next level.
And of course, it starts with the dough!
I use my recipe but instead of combing whole wheat and white flour, I use all white flour. I’ve found that that makes the dough chewier and lighter, which is a must for these little guys.
Then you add the toppings! Can I just take the time to say that bacon and figs are a match made in heaven? These would make a wonderful dinner party appetizer when sliced into small pieces, but are also great for a light meal when you’re craving pizza but are feeling a little adventurous. Or you’re just out of sauce. Kinda like baking vegan when you’re out of eggs? It works.
Goat Cheese, Fig and Bacon Flatbreads
makes 8 personal sized flatbreads
Ingredients:
1 recipe the best pizza dough
4 slices bacon, fried until crispy and chopped
1 small log soft goat cheese
10 fresh figs, sliced in half
1 tbsp extra virgin olive oil, divided
1 large bunch arugula
sprinkle of sea salt
Directions:
Preheat oven to 450 degrees.
After preparing the dough, divide it into four parts on a floured surfaace. Then divide those four parts in half so you have eight little balls of dough. Roll each small dough ball out to a circle (you can probably just stretch the dough) and top with goat cheese crumbles, bacon crumbles and two sliced figs. Drizzle a little olive oil over each.
Place flatbreads on a lined baking sheet, reduce oven temperature to 425 degrees and bake for 12-15 minutes. After baking, top with arugula, another drizzle of olive oil and a sprinkle of sea salt.
Time:
30 minutes (not including time to prepare dough)

October 20, 2011 at 4:48 amWow, these look so good! But, last time I had figs (in true form, not in a Newton), they didn’t taste very good. In fact, they didn’t taste like anything at all. Do you think it was because they were just “bad?” This may sound like a stupid question, but are natural figs supposed to taste like the innards of a Fig Newton, or something else completely?

But I love this idea in general – I tend to keep pitas and naan on hand for quick week-night pizzas, but I’m sure this dough is 1000x better than that.

I’ve been reading your blog for the last few months, but haven’t commented. Love it!! In light of your recent trip to Big Sur and the bakery, just thought you might want to try out their recipe for pizza dough. We made the marherita pizza twice over the weekend and it was wonderful! Very thin crust (the way I like it) and oh so good! They recommend letting the dough sit in the fridge for a day or two. Unlike any pizza dough I’ve tried before.

A slightly different twist on this same concept is flatbread with fig spread or fresh figs, caramelized onion, bleu cheese and arugula— prepare using the same method you use here. It gives the same salty-sweet-multi-textured feel you are going for here. It is one of my go-to’s for potlucks and is always a huge hit! If I’m in a pinch, I put it on naan or WW flat bread from a store. I’m looking forward to trying your combo soon!

A truly unique restaurant, serving only poached eggs (in various disguises) for breakfast. My choice was with goat cheese, arugula, bacon and avocado on a thick slab of potato bread, amazing combo! So I know I will love these.
BTW a friend just gave me “The Sharper your Knife, The Less You Cry” by Kathleen Flinn. Do you knowit? It is a true story about an American woman who chucks it all and goes to study at Le Cordon Bleu…sound familiar? She really lets one in on the true happenings at the school, and intersperces it with recipes. Very entertaining, thought you might relate!

October 20, 2011 at 6:01 pmWell, there’s different kinds. Black figs (the ones you most often see in the store) are ripe when they’re super soft and dark purple. They are seasonal and only available for a short time during the fall so snatch them up!

With these, do you think is would be possible to fry or griddle the flat breads then add the toppings after? I know it sounds like a terrible thing to do but with only a hob to cook on it is quite tricky to do nice things like the above. What are your thoughts? Thank you, love your blog! Laura >_<
