You wanna know what we topped our beef tacos with the other night?
This salsa. Lots of it.
You guys know by now that I have a teeny bit of a condiment problem. Well, turns out I also have a teeny bit of a grilled peach problem. Ever since I stuck them in my salad a few weeks ago, I simply cannot get enough. Grilled peaches in salsa are totally out of this world!
I think this would be (obviously) great on the slow cooker beef tacos, but also on spicy black bean burgers or even scrambled eggs! Are you a salsa-on-eggs fan? I am! I’m also a HUGE cilantro fan so, naturally, this salsa is full of it. Sorry cilantro-haters! No room at the inn for you.
Just kidding. If you hate cilantro you can just omit it. Maybe.
Just don’t tell me about it if you do.

July 28, 2012 at 8:12 amholy yum! you introduced me to grilling peaches and i just. can’t. stop! grilling them to top steak, chicken, fish, in salads, for appetizers with ooey gooey goat cheese and crunchy bread, and most importantly with vanilla bean ice cream. now salsa? don’t have to ask me twice! yes please!!

July 28, 2012 at 10:03 amYUM! That looks beautiful and delicious! I also love condiments… and think of some foods as simply tools to deliver the condiment- why eat a chip unless it is topped with 1/4 cup of salsa, for example?
I feel sad for the cilantro haters. I have some good friends who can’t eat it and say it tastes like soap to them. The tragedy!!
