This hummus, is quite simply, a party in your mouth.
I had been wanting to make my own spicy hummus for awhile now, but just adding jalapeno seemed rather boring. And so while I was driving back from yoga a couple days ago I started brainstorming out loud. I came up with “jalapeno chive hummus”, “jalapeno cilantro hummus”, “jalapeno white bean hummus” and then….Jalapeno Cheddar Hummus.
Done.
Because what else goes so perfectly with jalapeno peppers other than freshly grated sharp cheddar cheese? You know and I know it. And the best part is that this hummus reminds me of jalapeno poppers in that it’s so ridiculously cheesy and delicious. Unlike jalapeno poppers, however, this cheesy appetizer can actually be considered healthy! Jalapenos are vegetables, right?
To my utter delight, it turned out so good that after eating the above, I ran around my little house chanting it’s-jalapeno-cheddar-time, it’s-jalapeno-cheddar-time, it’s-jalapeno-cheddar-time.
I don’t think I can ever eat regular old hummus again.
Jalapeno Cheddar Hummus
serves 12
Ingredients:
2 14.5-oz cans chickpeas, drained and rinsed
1 jalapeno pepper, chopped and seeds removed
1/4 cup extra virgin olive oil
2 T warm water
1 tsp salt
1 tsp ground cumin
1 cup freshly grated sharp cheddar cheese
Directions:
Combine the chickpeas, jalapeno pepper, olive oil, water, cumin and salt in a vita-mix or food processor. Process until smooth (adding more water if you desire to thin the hummus out a bit).
Add the cheddar cheese and process again until everything is well combined.
Time:
10 minutes

I saw this recipe this morning and whipped up a batch for lunch. It was delicious!! I halved the recipe and used what I had on hand: 1 can of chickpeas, 3 serrano chiles (I like it super spicy!), and monterey jack cheese. I also added some garlic and squeeze of lime juice. I used carrot sticks for dipping and it was fabulous! Thanks so much for this awesome recipe!!

Well, I just couldn’t wait to make this but I have to say I was a tad disappointed. Don’t get me wrong, it was delicious and I definitely ate more than my fair share, but not quite as spicy as I was hoping. I think my jalapeno was a dud. Next time I’m gonna add another one, or two.

I loved this recipe. I have never made hummus, but this inspired me. I added a little garlic and some lemon to it, but otherwise left the recipe the same. It was the best hummus I have ever had. It was fluffy instead of dense. Absolutely wonderful!!!
Just made this and had not thought to serve with bread until I saw your picture! Used four jalapenos with seeds and it was just enough to have an afterbite. I bet it would intensify the flavors if it was baked before dipping? Yum o yum!
