Behind The Butter

Double Chocolate Muffins

This recipe is sort of insane but to rationalize my whole life to you, my next recipe is ridiculously light and healthy. My next recipe involves tomatoes and celery.

This recipe does not.

And I’m not sorry because it’s in situations like this where you will just have to thank me later. Thank me for helping you take the plunge to go where no muffin has gone before. Go deep into the dark realms of butter and chocolate….and you might never return. But that’s okay. There’s always tomorrow with promises of tomatoes and celery.

These double chocolate muffins are a culinary school masterpiece. If you’re looking for a sweet chocolate cupcake, this isn’t your man. These muffins are intensely chocolatey, but they aren’t super sweet. I like ’em that way—they’re more like mini loaves of chocolate bread than anything else and are studded with smooth melty semisweet chips. I think they’d be perfect with a smear of creamy peanut butter, or even some raspberry jam. Heck, you could even swipe these things with Nutella and call it a day.

I may or may not have done that earlier. Don’t judge.

Here’s what you need for success:

First, take ten tablespoons of butter and melt it with eight ounces of semisweet chocolate.

I know…….I know.

These aren’t for the faint of heart but deep down, I know you can handle them. I have faith in you.

Just make sure your heat is on LOW because burning chocolate is a very, very bad thing. Take my word for it.

Just put the butter on the chocolate.
Put the butter on the chocolate.
Lather, rinse, repeat.

Okay, great. Once that’s done, add eleven tablespoons of sugar. Yes, eleven. Why? I don’t question these things.

Stir the sugar into the hot chocolate and butter mixture and then pour it into the bowl of a Kitchenaid.

Fight the urge to lick the spoon….it only gets better.

Okay fine. One little lick!
Now set the bowl far, far away (but close enough to reach it in three minutes) and sift together a cup and a half of flour, a half teaspoon of sea salt and a teaspoon and a half of baking soda.

Set that aside for the time being and go back to the original chocolate bowl. Turn your mixer on and while it’s beating on low, add an egg.

And a cup and a half of buttermilk….slowly.

Finally, add half the flour, mix on low, and then add the other half. Be careful not to overbeat or you’ll have hockey pucks instead of muffins. Again—trust me; I know.

And now, ladies and gentlemen—place your chips on the table.

Stir in about a half cup, more if you have issues. I usually go with more rather than less in situations such as these.

There we go….there we go. You may lick thy mixer attachment now.

Spoon your masterful creation into greased muffin tins and bake for about twenty minutes at 375.

When done, they should appear to look something like this:

And most definitely this:

Go now. The time has come.
Double Chocolate Muffins

Makes about three dozen small muffins

10 tbsp unsalted butter

11 tbsp sugar

8 ounces semisweet chocolate

1 egg

1 1/2 cups all purpose flour

1 1/2 tsp baking soda

1/2 tsp sea salt

1 1/2 cups buttermilk

1/2 cup dark chocolate chips

Preheat oven to 375.

Melt together the butter and chocolate over low heat. Once smooth, add the sugar and stir well to combine. Take off heat.

Sift together the flour, baking soda and salt in a medium sized bowl . Set aside.

Pour the chocolate mixture into the bowl of a Kitchenaid and add the egg while beating on a low speed, using the creaming attachment. Add the buttermilk in a slow stream then add the flour in two installments, beating in between.

Fold in the chocolate chips and fill greased muffin tins. Bake for about twenty minutes or until the muffins begin to pull away from the sides.

    Those muffins look delicious 🙂 I’ve got nothing against butter (in moderation) and I applaud you for posting a picture of granulated white sugar on your blog. However, I don’t use a mixer when I bake for two reasons: I like to mix things by hand or with a hand blender (for cakes), and they are expensive. Not everyone can afford one and I think you should note that you can just as easily mix up a muffin batter with a good ol’ wooden spoon. *NOT trying to pick a fight here, it was just a thought.

    Wow. Butter is a good thing sometimes. People are so afraid of it for some reason.

    These muffins look so rich and lovely. A butter substitute like applesauce isn’t capable of doing that.

    I admit, these are a little too intense for me — at least, everyday-wise. Special-occasion, definitely. But I do love the step-by-step and the recipes! Can only imagine what it’s like to stop mid-way and take pictures with batter-y hands — don’t think that’s lost on *everyone*. 🙂 As one who usually bakes vegan things, I am surprised these didn’t rise more, though, with the egg and baking soda. Any thoughts for the food-science-challenged?

    A quick request, though. I notice in the photo of your notes, you have weight measurements for all your ingredients. Can you include that info in the recipe at the bottom of the post as well? I find measuring by weight SO MUCH easier than by volume. Thanks!

      It is and that’s the way it’s supposed to be done, truthfully, but most people don’t have a scale at home and cups and teaspoons are easier for the home kitchen!

    looove your new blog style–i’ve also recently ditched the fat-free milk and cheese and have began to enjoy full-fat products in moderation. these chocolate muffins look intense–which is great for a serious chocoholic like me. i wonder how these would taste made with dark chocolate? my mind cant even begin to go there.

    p.s. im going to italy for four months and i’ll be studying in Torino. you need to look up the history of solid chocolate originating in torino, and then look up the ‘chocopass’—a two-day chocolate tasting pass for all around the city. its number one on my list of things to do 😉

    Hey Jenna! Excellent recipe…I will definitely keep this in mind for the next family function. I was just reading through some of your posts (I’ve been on vacation–away from Google reader!) and I came across the one where you discuss the blog’s transition–and how it reflects your own transition as a person. I’ve read your blog for over a year, but not from the very beginning, and so I was curious to go back and read some of your firsts posts. I was pleased to see that you definitely did change in a positive way, seeming to become much more comfortable with yourself, with food, and with celebrating life. I was curious, however, as to how you were able to initiate such positive change. How did you move from counting the calories in your meals to embracing luxurious, whole-foods recipes with passion, trust, and excitement? I’m sure it could amount merely to your becoming more one with yourself, learning to love and trust your body, and how it responds to food. But if you were ever so inclined, I think a post on this topic would be super super helpful–to all women, but especially to those of us not yet at the place of comfort & trust you’ve achieved. You exude health and vibrancy, physical fitness and a confidence one seems to reach only when she is satisfied with her place in life, with herself. Of course, I only see what’s on the blog–so these are all assumptions. BUT I think if this website is representative of your true life (which I hope and think it is), then I believe my assumptions are well-founded. I’m not sure if such a post would coincide with your vision for the new-blog, or if its something you would be interested in otherwise–just a suggestion! Thanks again for being so inspiring 🙂

    I absolutely love baking with Guittard chocolate chips! The milk chocolate Guittard chips are my secret ingredient for the best chocolate chip cookies ever! I just moved to the Tulsa area, and finally (after a year of looking!) found Guittard chips in a specialty food store. I was so excited I called my family from the store!

    These look amazing. I may have to make them for my chocolate loving boyfriend’s mother. I am not a huge fan of intensely chocolatey things (I know blasphemy, i know…), but I do love butter.

    I have found that the key to portion control is using real ingredients, like butter, lots of it. My whole family is french and they scoff at the idea of low-fat anything, and none of them are overweight. They just walk a lot and eat in smaller portions.

    Plus there is nothing in the world like a good butter sauce. Don’t even try and deny it.

There are very few times when I wish I wasn’t losing weight and therefore concerned about eating low calorie… this is one of those times. I know you are a fan of supporting local food production and you have one of THEE best local dairies right there in Sonoma County.     There is no fear of 11 tablespoons of sugar here. Nor of that glorious looking pan of melted butter and chocolate. That is love right there. Um. So are your pans. I have pan envy.

    Oh and Nutella swiping? Literally no judgment evereverever. I literally just made nutella brownies last week. And I used half the tub to do it.

    Ooooo…looks amazing. Jenna, do you have a recipe you love for vanilla/white icing? I made cupcakes the other day, and the basic icing from Martha Steward was far from divine. (It was just confectioner’s sugar and butter with a splash of vanilla.) I want something so good that I can’t stop eating it.

    i noticed that in your picture of your recipe card, you were able to make the bottom ingredients stand out. i’ve also noticed this on some of your menu pictures ( you highlight a certain item on the menu). how do you do that? i just got a dslr and can’t quite figure it out. would love a few tips 🙂

    These look awesome! I’m making them this weekend. I love to make big batches of muffins and freeze them individually, then I send them, one at a time, in my husband’s lunch each day. He will love these 🙂

    I can’t wait to make these! Jenna – you should totally get T-shirts made that have the coin phrase “More if you have issues.” centered below a picture of a giant pile of chocolate chips. LOL.     I am making these tomorrow (or possibly tonight so I can have one for breakfast tomorrow).

    One small snag… I do not have regular semisweet chocolate. I DO however have Lindt Chili Chocolate. Another problem… I do not have buttermilk. I know how to create buttermilk, but I am eying a bottle of Mondavi Private Reserve I use for cooking (and eating with chili chocolate) and I’m getting ideas.

    I’ve been looking for a way to use up chocolate chips and ripe bananas other than banana bread; is there a way of adding in the bananas to this?

      I wouldn’t add bananas to this tart personally….bananas and cornstarch-based tarts usually wind up pretty icky. I would either bake my double chocolate banana bars with them instead 🙂
