Hey!
Hey you! Yes, YOU! What’s for dinner tonight? A little pizza…maybe some spaghetti…some good bread and cheese with wine?
Think again. Dinner tonight is this delicious (easy!) vegetarian pasta dish. I bet you already have most of the ingredients in your kitchen right now! Cherry tomatoes, arugula, cute little balls of fresh mozzarella, some roasted red peppers….it’s really good, especially with a chilly glass of white wine. And it’s perfect right now when cherry tomatoes are as sweet as candy and on sale at just about every market in America. Don’t you just love tomato season?!
I made this pasta the week before last and the leftovers lasted me all week! It’s delicious hot, but I also loved it cold straight out of the fridge and into my bowl. The cherry tomatoes and the arugula pair so nicely, and if you choose to use whole wheat pasta it’s extra healthy, which just means more cookies later!
The original recipe for this yummy pasta is from Cassie. That girl can COOK!
I love how fresh and healthy this dish was without sacrificing on any flavor. It reminded me to use paprika more often! I love the smokiness it brings to a dish. Next time I make it, I think I’m going to add some spicy chicken sausage for a little extra kick. It’s plenty good and filling on it’s own though!
You can find the recipe for this over on The Tasty Kitchen Blog—it’s a lovely end of summer one-dish meal!
Happy weekend, friends!

Now, if I were in America, I TOTALLY would be having this for dinner tonight. Way to make me j.e.a.l.o.u.s.
Oh, yes would love this with smoky sausage. Good call! Love that you post your recipes a week or two after making/eating them – I picture a ton of photos and recipes on your computer and you pick and choose!
Do you ever get tired of cooking but feel like you “have to” for the blog? Or do you just love it?
Yum! I like the idea of adding the chicken sausage!
This looks amazing! I love that you add arugula!
I am going to have to do an inventory check on cherry tomatoes and arugula in the garden!
Been loving pasta lately, which is unusual for me. Looks great!
Yumm I love cherry tomatoes!! When I was in Vancouver earlier this month, the Whole Foods there had tons of multicoloured ones on the salad bar and I loaded up! This looks delicious Jenna – gorgeous photos!
You are awesome, Jenna! Glad you liked this, and thanks for sharing!!
THIS looks like a fabulous Friday dinner.
Well I guess I know what I’m going to do with the arugula in my fridge! Great recipe!
Mmm….I love a good Friday night pasta….a good stock of leftovers afterwards is just a bonus! Lovely recipe. Happy weekend to you.

I want this for dinner
This looks like a fabulous and light Friday night meal! And I definitely know tomatoes are in season….one of my very favorite Summer staples. Speaking of cookies, I’m going to be giving your almond butter chocolate chip cookie a try this weekend. They are being talked about all over the blogosphere!
I now know what I’m making for dinner this weekend. So simple and seasonal. Already looking forward to my weekday lunch leftovers. Thanks!
The color in this is INSANE!
Pasta is my life. Sounds drastic, but not even exaggerating. I want this! Right now!
That dish looks delicious! I love pasta with fresh tomatoes instead of marinara sauce – & arugula is my favorite!
That looks absolutely AMAZING!
This sounds fabulous! What a treat!
Yes, this looks good. I actually had pizza for dinner but maybe I can convince my husband to have Italian twice in two days.
This would be a great post-farm market meal! YUM!

I think i’d add some some mushrooms and green chillies and it would be best suited to me!
I want a gigantic bowl of that right. at. this. second. Arugula is one of my irresistibles.

I made this on Saturday. I made a double batch because I know that I wouldn’t mind eating the leftovers all week at work. It’s fabulous!
That is definitely my favorite kind of pasta! I love how it keeps the sauce in the little molds and it works great in soup too. This recipe sounds so intriguing, I should make it soooon.
