Smoky Tomato, Roasted Pepper and Arugula Pasta

Hey!

Hey you! Yes, YOU! What’s for dinner tonight? A little pizza…maybe some spaghetti…some good bread and cheese with wine?

Think again. Dinner tonight is this delicious (easy!) vegetarian pasta dish. I bet you already have most of the ingredients in your kitchen right now! Cherry tomatoes, arugula, cute little balls of fresh mozzarella, some roasted red peppers….it’s really good, especially with a chilly glass of white wine. And it’s perfect right now when cherry tomatoes are as sweet as candy and on sale at just about every market in America. Don’t you just love tomato season?!

I made this pasta the week before last and the leftovers lasted me all week! It’s delicious hot, but I also loved it cold straight out of the fridge and into my bowl. The cherry tomatoes and the arugula pair so nicely, and if you choose to use whole wheat pasta it’s extra healthy, which just means more cookies later!

I love how fresh and healthy this dish was without sacrificing on any flavor. It reminded me to use paprika more often! I love the smokiness it brings to a dish. Next time I make it, I think I’m going to add some spicy chicken sausage for a little extra kick. It’s plenty good and filling on it’s own though!

    Oh, yes would love this with smoky sausage. Good call! Love that you post your recipes a week or two after making/eating them – I picture a ton of photos and recipes on your computer and you pick and choose!

    Do you ever get tired of cooking but feel like you “have to” for the blog? Or do you just love it?

    Yumm I love cherry tomatoes!! When I was in Vancouver earlier this month, the Whole Foods there had tons of multicoloured ones on the salad bar and I loaded up! This looks delicious Jenna – gorgeous photos!

    This looks like a fabulous and light Friday night meal! And I definitely know tomatoes are in season….one of my very favorite Summer staples. Speaking of cookies, I’m going to be giving your almond butter chocolate chip cookie a try this weekend. They are being talked about all over the blogosphere! 😉

    That is definitely my favorite kind of pasta! I love how it keeps the sauce in the little molds and it works great in soup too. This recipe sounds so intriguing, I should make it soooon.
