It’s been HOT here this week.
Like, my house has been almost Florida-hot. That’s hot. Now don’t get me wrong — I’m certainly not complaining. Not after the stretch of cold rain and fog last weekend, but this weather has made turning on my stove pretty darn difficult. I’m turning to things like cold cereal, gazpacho and salsa for sustenance.
Have you tried this gazpacho recipe yet? I know it’s a little early to go there but….I just went there. You should, too.
I had some strawberries and mangoes leftover in my fridge from an earlier farmer’s market run, so I decided to turn them into salsa instead of a cereal topping.
I love making fruity salsa with whatever is in my fridge! I mean, you can really use anything you want — just add some red onion, cilantro and jalapeno to the mix. Now a word to the wise: I made this salsa SUPER SPICY because I left in all the jalapeno seeds. What can I say? I like food so spicy it makes me cry. I never said I was normal.
To balance out the heat, I added some honey and then it was all good. If you’re sane, you’ll probably want to leave out the jalapeno seeds, though. Unless you need a good cry and if that’s the case, I totally understand. Make a margarita, too, while you’re at it.
