Hey Wednesday party people!
I’m still down here in Florida with Jaden, Todd and Diane and working my butt off assisting in shooting Jaden’s new cookbook. Okay, let’s be honest…what I really have been doing in eating everything in sight. This woman knows how to COOK. I can’t wait to show you some behind the scenes action when I get home in a few days.
But first….can I please tell you about the fish sandwich I ate last week? I love salmon but hate the way it makes my house smell to cook it, so this time, I made a delicious sweet and spicy glaze with honey and spices, topped my salmon fillet with it and then broiled to perfection.
And guess what? No icky fish smell! The glaze is a combination of honey, cayenne pepper, paprika, chili powder and brown sugar and is positively delicious. I love that sweet and spicy combination on fish and meats. I was just going to serve the fish alone, maybe with a side of roasted new potatoes or asparagus, but then I found these great (HUGE!) pretzel rolls and knew it was meant to be.
If you’ve never tried a pretzel roll, folks, you’ve never truly lived. And that’s a fact. My first pretzel roll experience was at King Street Grill in Charleston and now as I type this, I think I need to learn to bake my own. They are just so good. And huge. Watch out! Adam and I could have split one of these sandwiches, they were so large.
Oh! And even if you don’t really like mayonnaise (I don’t), still try it on this sandwich. I think you’ll like it!
Sweet and Spicy Glazed Salmon Sandwiches
makes two (large) sandwiches
Ingredients:
2 4-5 oz wild Atlantic salmon
2 tsp paprika
1 tsp salt
2 tsp brown sugar
1/2 tsp cumin
2 tsp chili powder
1/4 tsp cayenne pepper
1-2 tbsp honey
1/2 lemon, juiced
pretzel rolls (or regular rolls)
mayonnaise
lettuce
tomato
Directions:
Preheat broiler on high.
Mix together the chili powder, cumin, brown sugar, paprika and cayenne pepper.
Rub the salt on the salmon fillets, followed by the spice mixture. Lay fillets in a pie dish or on a tin foil-lined sheet tray and drizzle the honey over top. Broil fish for 5-8 minutes, until flaky but still pink. Remove from oven and drizzle lemon juice over top.
Prepare sandwiches by smearing mayonnaise on one side of the pretzel roll, then topping with a salmon fillet. Top with lettuce and tomato, followed by other half of roll. Serve warm.

Especially because you can eat one (or two!) warm out of the oven. I don’t know if I’ve ever tasted anything so good. So yeah, try this recipe when you attempt to make your own. I LOVE them! 🙂 And yes, now I have to try a salmon sandwich next time I make them!

Looks tasty. You seem interested in food facts, so I thought I would let you know that there is no such thing (commercially available) as wild Atlantic salmon. All Atlantic salmon sold in the U.S. is farm-raised because most countries (including the U.S.) prohibit the sale of wild-caught Atlantic due to low stocks. All wild-caught salmon is from Pacific species, such as king and sockeye.

February 1, 2012 at 6:43 amJust wanted to second this, and add (because you are into health) that farmed (Atlantic) salmon is incredibly toxic – studies recommend consumption no more than twice per YEAR or complete avoidance. Farmed salmon also has none of the benefits that wild-caught Alaskan salmon has – analyses demonstrate drastically lower levels of healthy omegas. Just something to keep in mind!

February 1, 2012 at 9:22 amYum! I’ll have to at least try to the rub for the salmon, if not the whole sandwich! I always use the same old boring (but tasty) rub when I cook salmon and should probably branch out more. I do love a salmon blt, but that’s the only salmon sandwich I’ve had. 🙂
I’ve seen pretzel rolls at Whole Foods and Wegmans but have never actually tried one. They do sound really good!

March 14, 2012 at 12:36 pmI have got to say this looks delicious! My boyfriend and I recently tried a new way of cooking salmon and it turned out so succulent. All you have to do is fill up a sink of hot water (roughly 120 degrees) and put the salmon in a ziplock bag with some olive oil and take out all the air. Then you just put the ziplock bags in the water for 15 min and finish it up in a pan with butter. I am thinking you add these spices to the ziplock and you have an easy fantastic meal! I actually used smoked paprika and maple syrup instead (just eyeballed them) and the salmon came out so juicy and buttery tasting with the absolute perfect spice crust. Thank you, thank you!
