ultimate spinach salad

by jenna on April 28, 2011

So, I kinda want a one piece bathing suit.

There’s just something so Jackie-O about them. I have this vision of wearing a strapless navy blue and white striped one piece with oversized black sunglasses while reading my kindle and eating a cupcake at the beach.

I haven’t found said one piece yet, in case you were wondering, but I will say that I’m actively looking.

And this is the salad I would so carefully pack for my Jackie-O beach day. It’s got the perfect combo of fruit, cheese and nuts and looks super classy when eaten in public places. Especially while wearing a striped one piece bathing suit. And especially while wearing oversized sunglasses.

I made this yesterday because, as much as I wish it weren’t true, a girl can’t survive off cupcakes alone. There’s gotta be some sort of balance there, you know? Like, for every shot of frosting you take you have to counteract it with a bite of spinach or something.

Or at least that’s what I keep telling myself.

Ultimate Spinach Salad for One

Print this recipe!

2-3 cups baby spinach leaves

4 large strawberries, quartered

1 T sliced almonds

2 T goat cheese crumbles

for dressing:

1 T extra virgin olive oil

2 tsp balsamic vinegar

tiny pinch of sea salt

Toss together all salad ingredients. Mix together dressing ingredients then drizzle over salad. Eat in the sunshine while wearing large sunglasses.

I love the salad and I LOVE the bathing suit idea. Very classy. Throw in some over sized sunglasses and it’s timeless really.

megan @ blackberries for jam April 28, 2011 at 5:10 am

Strawberries and goat cheese are meant to be together. I eat a variation of this salad all the time in the summer. Add some grilled chicken, and I am in heaven!

Lucy @ The Sweet Touch April 28, 2011 at 5:24 am

I agree Megan! I love this salad because you can throw in whatever you want and it always turns out good!! YUM!

Jessica @ How Sweet April 28, 2011 at 5:11 am

I want a one piece like that too! And I also want this salad with some bacon.

Melissa @ Journey to Marvelous April 28, 2011 at 11:16 am

Oooo! Some crumbled bacon would be awesome on this salad!

Brooke @ Bittersweetb April 28, 2011 at 5:12 am

There are some really cute one piece bathing suites at JCrew! I fully support the one piece and cupcake in hand idea, with large sunglasses of course.

Oh, and this salad looks delightful!

Ella April 28, 2011 at 8:15 am

I second this – my college roommate always used to wear their strapless one pieces and she looked super cute.

Baking 'n' Books April 29, 2011 at 9:44 am

AGREED. It needs bacon.

I just wanted to say that a 1-piece would so suit you for sure! You are totally Jackie-O.

Beth @ Beth's Journey to Thin April 28, 2011 at 5:13 am

Spinach and strawberries are a match made in heaven. Yum!

Heather (Heather's Dish) April 28, 2011 at 5:13 am

i LOVE the jackie-o look…you could (and will) totally rock that, spinach salad in hand :)

Laura April 28, 2011 at 5:17 am

Don’t forget the oversized straw hat of sorts to go with that bathing suit!!

Molly April 28, 2011 at 5:17 am

Jackie O is so classic! I have a secret desire to wear a pillbox!
I have all necessary ingredients on hand to make this salad for dinner tonight-thanks!

Jen @ keepitsimplefoods April 28, 2011 at 5:18 am

This salad sounds so fresh and delicious! Love all the colors!

I’m a big fan of the chic one piece suit.

Angela @ Eat Spin Run Repeat April 28, 2011 at 5:20 am

Spinach, strawberries, and balsamic are one of my favourite flavour combos. And I agree, Jackie O had awesome style sense!

Emilina April 28, 2011 at 5:29 am

Sounds delish! I eat spinach salad every day so I am going to try your recipe to help shake my spinach up!

Liv @ The Salty n' Sweet April 28, 2011 at 5:30 am

I love strawberry spinach salad! It’s perfect for summer :)

How does one swim in a strapless bathing suit? Or is it primarily for lounging? 😉

Lauren April 28, 2011 at 5:32 am

Looks like a perfect salad, fruit and spinach go so well together! I’m a big one piece fan, you should definitely go for it.

Errign April 28, 2011 at 5:41 am

I think Target has some adorbs one pieces, though they may be polka dot, not striped!

Dee April 28, 2011 at 5:47 am

ooh, this salad looks divine! must try it sometime soon!

Daisy April 28, 2011 at 5:47 am

You would rock that one piece!!!

brandi@BranAppetit April 28, 2011 at 5:47 am

1. Love the salad. Spinach and strawberries are one of my favorite combinations, especially with some thinly sliced red onion and a drizzle of balsamic. Yum!

2. I LOVE one-pieces! I bought this awesome retro one from Macy’s two summers ago that I absolutely love. It fits me perfect, and I always feel awesome in it. It’s black and white and super flattering with the retro cut. Mine has straps, but they’re removable, too.

Jules April 28, 2011 at 5:55 am

Mmmm! I made this all the time, except I usually omit the cheese (not a fan of it on salads) and add in some toasted pecans, chopped dried apricots, sliced red onion, and/or craisins! Definitely a summer fave.

jenna April 28, 2011 at 5:59 am

this is one of my favorite salads! your strawberries look amazing!

mary (sisters running the kitchen) April 28, 2011 at 6:04 am

i make this salad all of the time!!! I mix up the types of cheese, fruits, and nuts to keep things interesting. I love to candy the nuts too. In regards to your one-piece bathing suit, I LOVE IT. I think one-pieces are adorable and I secretly can’t wait to wear one!

Jen April 28, 2011 at 6:04 am

It was hot over here in L.A. yesterday, and if this weather continues, I might have to make this salad! I love goat cheese with fruit. Fresh strawberries are all over the place right now!

Oh, and I’m with you on the one piece. I wanted to get one when I saw the notebook. Sexy, AND classy, right?!

d.liff @ yelleBELLYboo April 28, 2011 at 6:07 am

modcloth.com has some really cute retro one-piece suits!

This salad looks light and tasty!

megan @ whatmegansmaking April 28, 2011 at 6:07 am

I love spinach salad, especially with strawberries :) Can’t wait until it’s strawberry season in michigan!

Estela @ Weekly Bite April 28, 2011 at 6:08 am

I love how retro one piece suits are!

Gabby (Quest for Delicious) April 28, 2011 at 6:08 am

Looove classy one pieces. I got a vintage looking black with white polka dot one from Urban Outfitters last year and I adore it. Anthropologie has some super cute one pieces if you’re willing to spend a ton of money hah.
Side note – I dig that salad.

Lauren Muscarella April 28, 2011 at 6:11 am

yum! check out jcrew, ive been loving all their one piece options this year!!!

You MUST got to Shabby Apple….amazing one piece bathings suits that channel the exact style you’re after….I am lusting over a few myself. :-)

Katy @ A Healthy Shot April 28, 2011 at 6:18 am

I love strawberry spinach salads! Your version looks awesome!

I’m totally for the one-piece suit… I’ve been thinking about it but haven’t found ‘the one’ yet! Such a classy look though :)

Michelle from The Cooking Life April 28, 2011 at 6:19 am

I love reading your blog! And I love spinach salad. I am a former vegetable/salad hater but I’ve just discovered that if I put things in my salad that I love, I’ll enjoy it! I actually just wrote a blog post about it last night, haha. Have a great day!

Holly @ The Runny Egg April 28, 2011 at 6:31 am

Love the salad — strawberries and spinach are so good together.

And I like one piece suits — I haven’t had one in years but I’ve thought about getting one as well.

Jennifer Lynn April 28, 2011 at 6:32 am

I am not usually a big Anthropology shopper, but they have some adorable retro suits this spring. J. Crew also has some of the strapless variety you are looking for.

amy walters, aDESIGNdock April 28, 2011 at 6:33 am

Jenna, this salad looks delicious 😉 I’ve been wanting a one-piece bathing suit too. And blue and white stripe – such a classic!

Sophie April 28, 2011 at 6:36 am

This is almost exactly like a salad at one of favorite restaurants in town, Julep. I get it every time I go!

kaity April 28, 2011 at 6:36 am
Hannah (Culture Connoisseur) April 28, 2011 at 6:37 am

This is my favorite kind of salad. Although I never make it myself… I just wait around for other people to serve it or order it at a restaurant. Looks simple enough though!

I love one pieces. My thought is, you should put blogging on hold and throw yourself full-force into bathing suit shopping. After all, summer is just round the bend!

Christina April 28, 2011 at 6:41 am

I’ve been making a version of this salad for awhile now and love it! I usually add in some red onion and use a poppy seed dressing. Yum! This one-piece may be close to what you are looking for:

I have had great success with J-Crew suits, and this one has removable straps! Cute!

Kim April 28, 2011 at 2:01 pm

Love that suit! So cute.

Aimee April 28, 2011 at 6:44 am

That really is salad perfection. It is one of my favorite salads. Something about the tangy, salty and sweet all in one.

Barb April 28, 2011 at 6:47 am

I love one piece bathing suits! J-Crew has some great ones, a little on the expensive side but they last forever right?

Sarah @ See Sarah Eat April 28, 2011 at 6:48 am

That salad looks simple and perfect! Hope you find your bathing suit soon :)

Julia April 28, 2011 at 6:55 am

I have a vintage inspired one piece that I wear regularly and love. Go for it!

Justeen @ Blissful Baking April 28, 2011 at 7:04 am

This salad does look perfect! So simple, but yet somehow sophisticated and classy, like you said. Yum!

Krissie J April 28, 2011 at 7:05 am

Stumbled on your from a fellow bloggers links. :) First of all, I am with you on the one-pieces! I would love to sport a retro-style suit just once on the beach. I have yet to find this dream suit as well. Secondly, that salad looks amazing and I will definitely have to try it this weekend! 😀

Jessica April 28, 2011 at 7:08 am

Thanks to you, I am now looking at one piece bathing suits!

taylor April 28, 2011 at 7:08 am

the suit idea sounds beautiful and classic.

salad- love all the ingredients! yum!

Jenny @ Fitness Health and Food April 28, 2011 at 7:12 am

mmm looks simple and lovely.

I think a one piece suit is wonderfully classy :)

Beth A. April 28, 2011 at 7:13 am

It’s been said in the comments already — anthropologie! I haven’t received mine yet (it’s on back order!) but I love this suit: http://www.anthropologie.com/anthro/catalog/productdetail.jsp?navAction=jump&id=953678&parentid=SEARCH_RESULTS&color=001

And since I live in Canada, I don’t think there’s any chance you and I would show up on the same beach this year 😉 They are pricey, but according to the reviews, very well made and worth it! I hope I’m still singing it’s praises *after* I get mine!

Kim April 28, 2011 at 2:02 pm

French Heart April 28, 2011 at 7:46 pm

Film star suit!! W/sunglasses+blonde hair+blotted red lips+gold charm bracelet=darling.

Mallory April 28, 2011 at 7:17 am

I agree with the bathing suit idea, oversized sunglasses, and a beach bag that is filled with spinach salad and cupcakes…sounds like a great day at the beach! I like the one piece for the mere fact that I don’t have to lather on that much more spf!

Aubrey April 28, 2011 at 7:18 am

I actually have TWO one-piece swimsuits that I love! My friends thought I was crazy for buying them since they assume one-pieces are not for twentysomethings, but once they saw my retro suits they went and bought them too! I even used them for a retro pinup photo shoot.

I have the Jantzen Vamp Maillot in black and carmine rose. Tempted to get one in red or yellow as I’ve seen them in other places. (http://www.swimoutlet.com/product_p/15781.htm)

Jil @ Big City, Lil Kitchen April 28, 2011 at 7:18 am

Looks amazing!!! I also love vintagey one pieces. I think they’re adorable!

betty@runbetty April 28, 2011 at 7:28 am

I have totally converted to the one-piece. So much simpler, no worrying about inadvertent flashing (or eating one too many cupcakes…)

My favorite so far is here on my pinterest: http://pinterest.com/pin/16640866/
Or here at Anthro’s site: http://www.anthropologie.com/anthro/catalog/productdetail.jsp?navAction=jump&id=20767273&parentid=SEARCH_RESULTS&color=015

Good luck finding the perfect suit!

jenna April 28, 2011 at 7:30 am

lol! You will rock that maternity bathing suit :)

Katrina April 28, 2011 at 7:31 am

Love this! A big salad like this would be perfect for dinner tonight.

Cait's Plate April 28, 2011 at 7:32 am

Haha – I’m TOTALLY with you on the one-piece bathing suit thing. There’s something I just love about them. My boyfriend thinks I’m nuts but I just can’t help myself :)

Current Instincts April 28, 2011 at 7:38 am

This really is the ultimate spinach salad! Will definitely be making this one.

Kelsey April 28, 2011 at 7:40 am

i have this one…and adore it. i throw it on with white, ankle-length, skinny jeans and big sunglasses and prance to the beach…and totally pretend i’m jackie o. just sayin…

Jesse April 28, 2011 at 7:49 am

i’m all about the one piece. i have a strapless black and white polka dot number that i feel so chic in, except when i wore it to bonaroo:)
p.s. great looking salad!

meghan@ struggle muffins April 28, 2011 at 7:51 am

J. Crew has some tasty little one piece numbers. I love strawberries in a salad mmmm…

Ellen @ sunnysideupblog.typepad.com April 28, 2011 at 7:52 am

My roommates and I make this salad all the time! It’s truly one of those simple, delicious standbys, for sure :) My favorite toppings are toasted pecans and crumbled feta cheese, and sometimes we use sliced pears or peaches instead of strawberries!

Tasha @ Voracious April 28, 2011 at 8:01 am

Like I always say – eat your cupcake, but drink your green smoothie, too! Life is all about balance, delicious, scrumptious balance.

And this salad looks so fresh and beautiful. I so wish we could find spinach regularly here, but it is a rare treat. I’m growing some in my backyard food garden but I think it’s already much too hot for it to thrive…it looks a little…shall we say….pitiful? Hee heee…..poor spinach! If it can pull through I will have to use it to make this beautiful salad. :-)

Alex April 28, 2011 at 8:17 am

I love a great one piece! I got 2 for my recent wedding in Cabo and loved them. JCrew has some great options!

R @ Learning As I Chop April 28, 2011 at 8:19 am

I definite agree about the one piece. They are coming back in fashion

Cait @ Beyond Bananas April 28, 2011 at 8:20 am

A one piece seem so classy!

Doc (The Healthy PhD) April 28, 2011 at 8:23 am

I saw someone mentioned modcloth, but they do have some awesome options.

Also, the salad looks so pretty when you photograph it!

Sam [Low Carbon Diet] April 28, 2011 at 8:27 am

Ohhh I have been in search for the perfect one-piece for about 1.5 years now! Love the Jackie O vision 😉

Betsy April 28, 2011 at 8:36 am

Jenna, check modcloth.com. They usually have very cute retro looking one piece bathing suits. They’re a little pricey, but you live in Cali so I’m sure you’d be using it a lot!

Barbara April 28, 2011 at 8:37 am

All I’ll say is the j crew catalog had a lot of one pieces that were adorable!

Kate April 28, 2011 at 8:48 am

I love salads like these! Spinach and strawberries are awesome together.

I’ve never been a bikini girl myself – to me, one pieces are so much cuter and classy. I agree with the other peeps above that Antropologie has really nice suits that are well made. My favourite one is from there.

Linda April 28, 2011 at 8:49 am

I love one piece suits until nature calls, then not so much.

Kristin Murdock April 28, 2011 at 8:57 am

I like all the swimsuit suggestions so far… my favorite is the Juicy suit: got it last spring and am still just as in love with it as ever. Not sure if they have a striped version, but honestly it is the best swimsuit I’ve ever owned, looks perfect with oversized glasses and a big hat, and is flattering on all figures! http://shop.nordstrom.com/s/juicy-couture-beach-ruffled-bandeau-swimdress/3093255?origin=keywordsearch&resultback=997

Heather @ Health, Happiness, and Hope April 28, 2011 at 8:59 am

Oh my goodness, I love this post! :) Love the frosting/spinach philosophy. 😉 I haven’t owned a one-piece since I was little, but I agree that there’s something about them that makes them summery, stylish, and old-fashioned in the best way possible.

Chelsa April 28, 2011 at 9:16 am

I made a similar salad yesterday with arugula, strawberries and freshly grated parm. The strawberries are so good right now!

Lisa April 28, 2011 at 9:22 am

I was never a big “fruit on salad” kind of a person. For me, salads were meant to be savory with lots of veggies. But as I got better at cooking and trying new things I discovered how amazing fruit can be on a salad. One of the bests: spinach salad with chopped apple, walnut and red onion. YUM!

Clare @ Fitting It All in April 28, 2011 at 9:26 am

You could most definitely pull off a one piece. And I’m very jealous of that.

French Heart April 28, 2011 at 9:33 am

Jackie O and spinach salad in the same graph. I just fell into heaven. Both tres soigné.

Mama Pea April 28, 2011 at 9:41 am

You NEEEEEED this swimsuit in the “blue lagoon” shade to match your eyes. I have it in brown and LOVE it. Very Jackie O.

jenna April 28, 2011 at 9:54 am

I LOVE that one…almost as much as I love the idea of being bathing suit twins with you! 😉

jenn April 28, 2011 at 10:50 am

This calls for a bathing suit post! oh yes!

Great minds must think alike because I had almost the exact same salad for lunch today and I’m off to Nordstroms to get myself a one piece suit! I have no shame in ditching the 2 piece for something retro, chic, and way more flattering that those wimpy string bikinis.

I LOVE your idea… except I personally would swap out the cupcake for a nice fruity cocktail on the beach. And hell to the yes in regards to the big sunglasses!

Hey Jenna! In your funfetti cupcakes with vanilla buttercream recipe, is that just enough buttercream for 12 cupcakes, or would it make enough if I doubled the cupcake recipe?

(I find it funny I’m leaving this comment on the salad post.. haha)

I know a bunch of people have mentioned ModCloth, but I have their red one-piece with white dots and it fits like a freaking DREAM. Honestly, I look horrible in bathing suits and the ones they stock are so flattering, it’s unreal.

Because I’m cheap though, I found out the designer (Esther Williams) and bought directly from a retro shop in North Carolina (Retrodress) for like, $20 cheaper than ModCloth. I’m classy like that. I have this one: http://www.retrodress.com/ew169.html

Do. It.

It’s been almost a year since the last comment, but oh well! Ha. I love strawberries in salad. My version is a bit different due to allergies and wanting to beef up (figuratively) my salads. No nuts, swap mozzarella for goat cheese, add mushrooms, tomatoes, cukes, and sometimes sweet corn nibs. Keep the spinach, strawbs, and balsamic dressing. The tomatoes don’t clash with the strawberries. The cukes are refreshing and they and the mushrooms don’t have overwhelming flavors. The corn adds another bite of sweet but with some slight salt.

This was delicious! However, I substituted pecans for almonds. Very yummy! For some of my recipe ideas, visit my blog at http://www.BetterOffHealthy.com!
