Meatless Sloppy Joes

You seriously can’t go wrong with these bad boys!

Serves 3-4

1 garlic clove, minced

1/2 white onion, chopped

2 cups (I just used the whole package of Yves “The Good Ground: Original”) ground soy

1/4 cup water

1/3 cup of your favorite organic bbq sauce (I like 365 tangy bbq sauce)

1 heaping tsp chili powder

1/4 tsp (pinch) cumin

3/4 cup tomato sauce

1. Saute together the onion and garlic in a nonstick cooking pan for a couple minutes, or until the onion is soft.
2. Add the ground soy, tomato sauce, bbq sauce, water and spices and stir to combine.
3. Bring to a boil then reduce to a simmer for a few minutes.

Serve atop a salad or traditional sloppy joe style in a whole wheat sandwich bun!

I made a variation of this for dinner last night and it was amazing. I used the soy crumbles, onion, garlic, cumin, and chili powder, and added a serrano pepper and half a cup of canned diced tomatoes. I omitted the bbq sauce and tomato sauce, and instead I mixed in a serving of quinoa and topped it with a little shredded cheddar cheese once everything was all cooked up and in a bowl. The result was absolutely awesome and so filling. Thanks for the inspiration!

I made a variation of these last night but I too omitted the bbq sauce, used just leftover firm tofu that had been crumbled up and used a combination on fresh chopped tomatoes and tomato paste. I also chopped up a bell pepper and threw it in. Made a great sandwich. I also added a little oregano and brown sugar and curry powder instead of cumin (didnt have any)! yum!
