Chicken and Almonds

Perfect Fried Chicken

Serves 4

8 cups canola oil

1 cup buttermilk

1 tbsp hot sauce

1 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

8 boneless chicken breasts, skin on. (I bought bone-in breasts and deboned them myself…it’s pretty easy to do)

2 cups flour

2 tbsp sea salt

1.5 tsp ground white pepper

1/4 tsp cayenne

Mix together the buttermilk, hot sauce, pepper, garlic powder and onion powder in a small casserole dish. Add the chicken breasts and coat with the mixture. Place in fridge and let marinate for at least one hour and up to one day.

Preheat oil to 350. In a pie dish, combine the flour, salt, white pepper and cayenne. Dip each chicken breast in the flour mixture completely and then drop in the hot oil. Don’t overcrowd the chicken in the oil or it will cook unevenly. Also, make sure your oil is hot enough. If the oil is too cold, the chicken will absorb the oil (this is when frying gets bad) and the outside will then burn while the inside stays pink.

It will probably take about eight to ten minutes for the chicken to be done. I always stick a cooking thermometer in my chicken to make sure it has come to 165 degrees before serving.

    Still haven’t even figured out what job I want to do period.
    It’d either want to work for a sports company like Asics or Mike or Under Armour, be paid to run and do public relations or something or help set up events etc… or something more in tuned with what I’m set up for now like massage therapy but I’d couple it with a Bachelors in kinesiology and do massage, diet, exercise like programs for clients with special needs..and be paid to run XP…what would you call that? lol

    My dream job would definitely be to have a show on Food Network or Travel Channel where I travel to different areas of the US and/or world and instead of eating at diners, drive-ins, and dives etc…I ate at healthy restaurants! That would be a very fun, enjoyable job and also provide educational information to viewers about healthy eating and options 🙂

    My dream job would be to open a retreat center focused on the leadership lessons you can learn from horses. However, the retreat center would serve the two other purposes of rescuing horses who have been neglected and abused and rehabilitating them and providing a free summer camp experience to at risk youth. This would be my idea job because it would combine my three loves of horses, leadership, and social justice work!

    I would love to be a doctor that occasionally travels to various places (in the states as well as internationally!) to offer up my skills and knowledge to help people around the world!
    While doing this, it would be absolutely splendid if I could also dream up delicious things to eat that centers around vegetables, nuts and fruits (my favorite foods!).
    And I would also have magical powers that makes the foods I think of pop up and multiply infinitely so I could share with people everywhere (especially when traveling!)

    So I am going to grad school to be an academic advisor in higher education but I hope to one day work with low-income/disadvantaged students who struggle to get into college and be successful.

    The other side of my dream job would be an event planner. I have already done three weddings but just love doing any event planning (food, decor, small details)!

    I’d love to own/run a knitting/coffee shop. Ideally, i would be able to offer not only wonderful fibers and host incredible fiber related classes and knit ins, but I would also be able to create and serve healthy delicious food and beverage items as well.

    I love to knit. I love to be in the kitchen. I love to enjoy a sense of community, passing on history and building the future. I think my little dream shop wraps them all up pretty neatly 🙂

    Dream job, if I could do absolutely anything, would be to be a dancer for Paul Taylor’s dance company. Since thats not very realistic- I’m not nearly as talented as his dancers!- I’d like to become a professor at a college someday teaching what I am in school for now (public health).     I don’t know what my dream job actually is, but definitely a place where the hours are flexible, able to work from home, co-workers that are talented and willingly share their knowledge, and good pay doing something that makes me feel like I’ve accomplished something worthwhile at the end of the day.

    Thankfully, I have most of those qualities in the job I already have.

    Have had my successive ‘dream’ jobs: Was a stay-at-home mother to one, had my own biz, managed major design and construction throughout the US, chaired major non-profit fundraisers, always with an ‘impossible dream’ to be an author living in Carmel-by-the-Sea. Eventually returned to UCLA for the writing program completed it with 4.2 GPA and a novel and live in Carmel. Now just need to market it hard and while working on new dream. To be a writer living in Aix-en-Provence, France.

    I’m an ICU nurse now and I like that, BUT if i won the lottery tomorrow, I highly doubt i would go back to work doing that, hehe. My “dream” job would be to take a yoga teacher training course, and then open up my own studio. But it wouldn’t be a typical yoga studio, there would also be a kitchen, because you see, in my dream job, i would also be a kick-ass chef/cook, so i would teach yoga with some awesome people, and then make healthy meals and laugh, llalalala.

    For a dream job, I’ll say owning a brewpub that does all its baking in-house. I think restaurant ownership is actually incredibly stressful but since it’s a dream we’ll say it would be fun and wonderful.

    My dream job would be to own a clothing store that carried all my favorite brands, Trina Turk, Nanette Lepore, DVF, Tracey Reese, etc. The store would also have a section of home goods, candles, etc. and would also have a bar but we would only serve clear drinks so you could shop and drink and not worry about spilling and staining the clothes.

At that time, I sampled about 3 different cheese and after walking out the door, I started to wonder if they have a ‘cheese buyer’? Similar to a clothing buy at a department store.     Dream job- A “Le Nez” in France. Basically they are called “noses” and paid oodles upon oodles of money to smell test fragrances. They have a say in developing fragrances and what scents pair well with others. I love France, I love scent, I would love that job.

    I’ve always said that I want to open a coffee, card, and flower shop. It would be the perfect 1 stop morning shop. You can get your morning coffee and pick up flowers and cards to give to people to make everyone’s days better! The best part about owning the shop would be deciding which cards to sell and what kinds of coffee to sell.

    My dream job would probably still be in music, but with a lighter workload and more pay. Oh, and perhaps some interaction with the artists 🙂 I never really get to meet anyone!

    My dream job would be to own a CSA and sell fruits and veggies at different farmers markets in my area. Also,on the CSA farm I’d have huge flower gardens for people to walk through and have a little deli on site that sold prepared food and fresh juices, mostly from the fruits and veggies on the farm. It would be a ton of work and probably not much money, but I think I would love it!

    I have worked very hard to get my dream job. I am an 8th grade English teacher. I love every single day or my job good or bad. I ask this very same question to every student on the first day of school. My favorite response thus far has been from a student this past year. She responded that she would like to be, “a stuffed animal stuffer.” Why you ask? “I am very clumsy and I don’t think I would hurt myself if I fell with all of that stuffing around.” : ) *that’s why I love MY job!

    Well I was just watching Wheel of Fourtune and I’ve decided Vanna White’s gig wouldn’t be too shabby. Seriously though, my ultimate dream is to run a successful non-profit organization for children. After college I worked in a cubicle farm for 5 years. 2.5 years ago I started going back to school to get my graduate teaching certification. This fall I’ll be teaching 4th grade and I’ll be finished with my masters next Summer! I am very excited (and nervous!). I can’t say teaching is exactly my dream job, however I know it will have some awesome intrinsic rewards and who knows, it may lead to that non-profit someday.

    I AM a librarian and it SUCKS. I’m at a private boarding school (after working at several colleges and universities) and I do NOT get the summers off. So much for that dream. I don’t think that people who like libraries and books and therefore think they’d love to be a librarian have any idea what any of the work actually entails! There is a study out there somewhere which ranks librarian as the most stressful job, not because of deadlines, or risk, or any of the things that usually make jobs stressful, but because of the repetition and frequent feelings of powerlessness (even though it’s a professional job that usually requires a masters degree – and I feel this, even being in charge of a department.) It’s emotionally stressful in that way. I’ve been in the field for close to 15 years and have worked at a number of libraries, including at an Ivy League university, and I can say for certain that most librarians hate their jobs. Most of the librarians I know who love their jobs are dimwits who want nothing more than to settle into a job for the next 30 years, and mentally check out. (Not saying the other commenters here are dimwits! There must be a few great places to work out there… I have had both bad coworkers and ungrateful patrons.)

    That said, my dream job would be one where I could work for myself, travel, and be creative. I haven’t quite figured out what it would be, though. This is a departure from my science background in undergrad, and my information studies masters degree. Some day…. I’m really very in awe of what Jenna has managed to accomplish.

    Sorry to be so negative, but I’m very frustrated right now – every new job is worse than the last, even though I have had a series of jobs at very prestigious institutions. Also I have to say that librarians do not get paid to read books all day, or at all! Most of them are never even seen by the public – most of the people you see working public jobs in libraries aren’t even librarians.

    To open a little restaurant with Dan called “mugs and bowls”. All we serve is oatmeal and cereal and soup. Open each day 6am – 1pm. A small yoga studio is attatched and I teach at 9:30am each morning, and waitress the rest of the time. D is my accountant and main cook. It’s a teeny place on the beach someplace in South Carolina. We love it and close shop by 2pm each day to walk on the beach, eat a romantic meal with fresh fish each night, dip apples in peanut butter each night before bed as we read a great book and watch our favorite shows. Abbi lives nearby with her hubby and many kiddos. Life is good. 🙂

    Figure skating coach & run an adaptive program for children/people with special needs. I teach skating now, but it would truly be a dream for it to be my full time job and to have the opportunity to help people as well!

    Going to culinary school, getting my Certification in Nutrition and Dietetics, and my aerobics instructors license. Then teaching aerobics and being an independent meal planner/nutritional consultant 🙂 How awesome would that be!!!

    My father, an artist, lived in San Francisco in Pacific Heights while I was growing. Bookstores, coffee, food, fashion…excitement. I’ve always wanted to be a writer who owned a bookstore/ cafe on the side. Earlier on, a violinist- what a nerd! I’m now a teacher, but still wanna be a writer, bookstore/ cafe owner- or an ultra cool, ultra decadent rock star. But of course, if that had happened, I wouldn’t be here, reading your blog, and writing to you at midnight. Oh no, it’s really not that pathetic…I think!?!?

    After saving up enough money to go to culinary school (fingers crossed), I’ve always dreamed of opening up my own organic and all-natural bakery. I love to bake (and eat pastries/dessert), but I’m also passionate about being healthy and taking care of myself.. so combining the two would truly be a dream come true!

    I do have a dream job, but I don’t know what I’d call it. I want to be a make-everyone’s-day-wonderful-at-work person. I think corporations who have more money than they know what to do with should hire me to make everyone’s day at work wonderful. How fantastic is it to be surprised with your favorite Starbucks drink out of the blue? Or to get flowers for no reason? Or a blank CD with all your favorite songs to get you through the afternoon blah? My job would be to know about people’s special dates (birthdays, anniversaries), favorite things (foods, books, stores, etc) and just randomly show up at their desks with wonderful surprises to make their days surprisingly fabulous! I think it would be huge in company moral/motivation and would just make the world a happier place. I would quit my job and do it on my own funds, but that is just not feasible at this time (i.e. my savings = two digits). So if anyone knows anyone willing to pay for this service, let me know! I’ll pack my bags and be there with chocolate bonbons and a yoga mat for whoever needs it most! Note: I don’t actually do yoga, but I’ll bring along a dvd for that special person to use during their 15 minutes of “me” time. That’s my dream job!

    Hmm… That’s a hard one. I know I often fantasize about gardening and making new delicious healthy recipes all the time, so maybe something that paid me to do that, along with built in reading time on a sunny deck with a comfy chair and pretty view… Ahh. That sounds awesome right about now 🙂

    My dream job would be to play in a large orchestra. Of course that would include the practicing, and I may have a music degree, but I’ve been out of school for seven years now, and getting my chops back up to par…well, I’ll just have to be content with drooling over the L.A.     so, I’m a little late to the game but I just made this fried chicken for christmas eve dinner and it was truly amazing. i have never deep fried anything so the whole process was a little daunting, you’re tips (thermometer, timing, etc) were spot on. i served it with homefries instead of biscuits, and it was outstanding!
