Perfect Fried Chicken

Serves 4
8 cups canola oil
1 cup buttermilk
1 tbsp hot sauce
1 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
8 boneless chicken breasts, skin on. (I bought bone-in breasts and deboned them myself…it’s pretty easy to do)
2 cups flour
2 tbsp sea salt
1.5 tsp ground white pepper
1/4 tsp cayenne
Mix together the buttermilk, hot sauce, pepper, garlic powder and onion powder in a small casserole dish. Add the chicken breasts and coat with the mixture. Place in fridge and let marinate for at least one hour and up to one day.
Preheat oil to 350. In a pie dish, combine the flour, salt, white pepper and cayenne. Dip each chicken breast in the flour mixture completely and then drop in the hot oil. Don’t overcrowd the chicken in the oil or it will cook unevenly. Also, make sure your oil is hot enough. If the oil is too cold, the chicken will absorb the oil (this is when frying gets bad) and the outside will then burn while the inside stays pink.
It will probably take about eight to ten minutes for the chicken to be done. I always stick a cooking thermometer in my chicken to make sure it has come to 165 degrees before serving.

I don’t know what my dream job actually is, but definitely a place where the hours are flexible, able to work from home, co-workers that are talented and willingly share their knowledge, and good pay doing something that makes me feel like I’ve accomplished something worthwhile at the end of the day.

i would love to tour the country as a food critic, but i would be a vegetarian food critic! i could go to all of the vegetarian restaurants, or even any restaurant in general and order a veggie entree. ahhh id love it!
My dream job is to own a cupcake shop with a great covered patio for dogs. Naturally I would also have dog treats for any dogs that come by with their owners.
And my dog could come by to hang out on the patio to meet other dog visitors!

My dream job would be to own a CSA and sell fruits and veggies at different farmers markets in my area. Also,on the CSA farm I’d have huge flower gardens for people to walk through and have a little deli on site that sold prepared food and fresh juices, mostly from the fruits and veggies on the farm. It would be a ton of work and probably not much money, but I think I would love it!
i’m going back to school now to be a counselor and am so excited to pursue my dream job. i love helping people and making a difference in others’ lives makes a HUGE difference in mine! people energize me and listening to others’ problems really puts life into perspective sometimes.

I have worked very hard to get my dream job. I am an 8th grade English teacher. I love every single day or my job good or bad. I ask this very same question to every student on the first day of school. My favorite response thus far has been from a student this past year. She responded that she would like to be, “a stuffed animal stuffer.” Why you ask? “I am very clumsy and I don’t think I would hurt myself if I fell with all of that stuffing around.” : ) *that’s why I love MY job!

Well I was just watching Wheel of Fourtune and I’ve decided Vanna White’s gig wouldn’t be too shabby. Seriously though, my ultimate dream is to run a successful non-profit organization for children. After college I worked in a cubicle farm for 5 years. 2.5 years ago I started going back to school to get my graduate teaching certification. This fall I’ll be teaching 4th grade and I’ll be finished with my masters next Summer! I am very excited (and nervous!). I can’t say teaching is exactly my dream job, however I know it will have some awesome intrinsic rewards and who knows, it may lead to that non-profit someday.

I AM a librarian and it SUCKS. I’m at a private boarding school (after working at several colleges and universities) and I do NOT get the summers off. So much for that dream. I don’t think that people who like libraries and books and therefore think they’d love to be a librarian have any idea what any of the work actually entails! There is a study out there somewhere which ranks librarian as the most stressful job, not because of deadlines, or risk, or any of the things that usually make jobs stressful, but because of the repetition and frequent feelings of powerlessness (even though it’s a professional job that usually requires a masters degree – and I feel this, even being in charge of a department.) It’s emotionally stressful in that way. I’ve been in the field for close to 15 years and have worked at a number of libraries, including at an Ivy League university, and I can say for certain that most librarians hate their jobs. Most of the librarians I know who love their jobs are dimwits who want nothing more than to settle into a job for the next 30 years, and mentally check out. (Not saying the other commenters here are dimwits! There must be a few great places to work out there… I have had both bad coworkers and ungrateful patrons.)
That said, my dream job would be one where I could work for myself, travel, and be creative. I haven’t quite figured out what it would be, though. This is a departure from my science background in undergrad, and my information studies masters degree. Some day…. I’m really very in awe of what Jenna has managed to accomplish.

Sorry to be so negative, but I’m very frustrated right now – every new job is worse than the last, even though I have had a series of jobs at very prestigious institutions. Also I have to say that librarians do not get paid to read books all day, or at all! Most of them are never even seen by the public – most of the people you see working public jobs in libraries aren’t even librarians.
My dream job would involve traveling to National Parks and writing about it….my husband would come with as the photographer.
Traveling Europe as a food critic! I’ve seen jobs where ppl get paid to live at exotic resorts in tropical places for short periods of time and blog about it to increase travel to the area… that would be pretty sweet!!
Is it wrong to admit I have always dreamed of being a stay at home wife and mom. After years of schooling and a very strong independent mom, this is probably the last thing she would want me to do! But I love nothing more than caring for the important people in my life.

To open a little restaurant with Dan called “mugs and bowls”. All we serve is oatmeal and cereal and soup. Open each day 6am – 1pm. A small yoga studio is attatched and I teach at 9:30am each morning, and waitress the rest of the time. D is my accountant and main cook. It’s a teeny place on the beach someplace in South Carolina. We love it and close shop by 2pm each day to walk on the beach, eat a romantic meal with fresh fish each night, dip apples in peanut butter each night before bed as we read a great book and watch our favorite shows. Abbi lives nearby with her hubby and many kiddos. Life is good.
As you can see, I have thought about this before.

I love what I do but I wish that it allowed me to spend all the time with my family and friends that I want and to be able to go to church consistently…but alas, children DO get sick on Sundays! But of course, if that had happened, I wouldn’t be here, reading your blog, and writing to you at midnight. Oh no, it’s really not that pathetic…I think!?!?

After saving up enough money to go to culinary school (fingers crossed), I’ve always dreamed of opening up my own organic and all-natural bakery. I love to bake (and eat pastries/dessert), but I’m also passionate about being healthy and taking care of myself.. so combining the two would truly be a dream come true!
I do have a dream job, but I don’t know what I’d call it. I want to be a make-everyone’s-day-wonderful-at-work person. I think corporations who have more money than they know what to do with should hire me to make everyone’s day at work wonderful. How fantastic is it to be surprised with your favorite Starbucks drink out of the blue? Or to get flowers for no reason? Or a blank CD with all your favorite songs to get you through the afternoon blah? My job would be to know about people’s special dates (birthdays, anniversaries), favorite things (foods, books, stores, etc) and just randomly show up at their desks with wonderful surprises to make their days surprisingly fabulous! I think it would be huge in company moral/motivation and would just make the world a happier place. I would quit my job and do it on my own funds, but that is just not feasible at this time (i.e. my savings = two digits). So if anyone knows anyone willing to pay for this service, let me know! I’ll pack my bags and be there with chocolate bonbons and a yoga mat for whoever needs it most! Note: I don’t actually do yoga, but I’ll bring along a dvd for that special person to use during their 15 minutes of “me” time. That’s my dream job!
Hmm… That’s a hard one. I know I often fantasize about gardening and making new delicious healthy recipes all the time, so maybe something that paid me to do that, along with built in reading time on a sunny deck with a comfy chair and pretty view… Ahh. That sounds awesome right about now

I have an almost dream job. I love working with animals, and I’m a veterinary technician. Sometimes the hours aren’t great, but I love doing what I’m doing.
My dream job would be to play in a large orchestra. Of course that would include the practicing, and I may have a music degree, but I’ve been out of school for seven years now, and getting my chops back up to par…well, I’ll just have to be content with drooling over the L.A. Philharmonic from the audience.

so, I’m a little late to the game but I just made this fried chicken for christmas eve dinner and it was truly amazing. i have never deep fried anything so the whole process was a little daunting, you’re tips (thermometer, timing, etc) were spot on. i served it with homefries instead of biscuits, and it was outstanding!
