I’m still on a mission. A mission to create seven chickpea and lentil recipes by Tuesday. And my fourth is the best yet.
This is the perfect light summer salad. Not going to lie—I pretty much threw things together last minute without a plan but I’m shocked at how delicious it turned out!
Chickpea, Mango and Cucumber Salad
Serves 1
1 mango, peeled and diced small
1/2 of a cucumber, peeled and diced
1/2 cup chickpeas
2 tsp extra virgin olive oil
1 tsp apple cider vinegar
1 tbsp chopped walnuts
pinch of sea salt
pinch of black pepper
pinch of cayenne
Combine the mango, cucumber and chickpeas in a bowl. Set aside.
In another small bowl or jar, combine the olive oil, vinegar, salt, pepper and cayenne. Stir well. Pour over chickpeas.
Top with the walnuts.

Thats what I love most about chickpeas. Oftentimes, you really can just kind of throw random things together, only to have it come out tasting simply marvelous.

That looks so good! I bought a mango and some chickpeas at the grocery store the other day on a whim, but already ate the mango. Now I’m kicking myself!
I think I may try your recipe with maybe some grapes or a tangerine that’s been lurking in my refrigerator. I’m thinking any juicy, tart fruit would work in this case? Hmm…thanks for the inspiration!

This is why I would suck at being a chef unfortunately…because these things seem simple – but “real” cooks throw together all the seasonings and spices or dressings to make the simple, easy things more appealing…
Me? I would have dumped 1/2 a jar of rich spaghetti sauce on the combo and called ita day…:0

Delish! Made it last night and added a handful of dried cranberries on top to add some texture. Easy, healthy, and yummy!
