Happy Cinco de Mayo eve!
I’m feeling a lot better (finally!) and super excited to share with you this easy and delicious chicken marinade recipe that’s just perfect for tomorrow’s festivities. If you’re like me, you’re always looking for new marinade recipes because, well, chicken on it’s own can be kinda boring. And no one wants boring chicken! Yuck. Well marinade lovers, this one’s for you.
This recipe is also for you if you were just looking for an excuse to hit the bottle a liiiiiiiiittle bit early.
Allow me to be the cool, calm and collected voice of reason.
The voice that is telling you to go get your tequila bottle, make this marinade and then have a margarita. I mean, the ingredients are already out! It must be done.
Actually, you should probably make a margarita first….then make this marinade. You wouldn’t want raw chicken hands near your cocktail (I told you I was the voice of reason).
If you are under 21, please disregard this message and don’t tell your mother on me.
You can grill this chicken outside or use your handy dandy grill pan like me. The finished product is perfect on it’s own with a side of black beans, sliced avocado and Mexican rice OR thinly sliced and stuffed into your choice of a Mexican delight. Tacos…fajitas…burritos….get crazy!

Cinco might just be my most favorite non-holiday, holiday. And, on a Saturday…major score. I was thinking of making your cilantro lime flank steak (which is to die for), but maybe we’ll give this a go! Thank you!!
I’m impressed when college graduates can still drink tequila. Maybe it’s just because it was ruined for me all in 1 night?
Oooh yum this sounds delicious! I rarely go to Mexican restaurants but LOVE homemade Mexican food.. especially when tequila is involved.

Wow, for someone so seemingly healthy, you get sick a LOT.
What an idiotic thing to say. I personally am VERY healthy and have had 3 sinus infections so far this year-if you have allergies and live in Sonoma county, unfortunately the two often go hand in hand. Its been a particularly bad year for sinus infections, per my physician.

I just looked at the recipe and am so thrilled that’s it’s easy. Last night we went to the liquor store close to our apartment and found out that they were closing and we got really good deals for tequilas! We got two bottles! So, I can totally make this chicken happen!

Perfect justification for buying a whole bottle of tequila. Adding the triple sec to sweeten it up and give it more acidity is a great idea.

I’m saving this for the day after Cinco de Mayo. I’m running a half marathon on Sunday so I don’t want to gorge on margaritas the day before. However, this is perfect for celebrating a great race!
