Winter Means Pancakes!

Alas, all is still well here in foggy cold Northern California. Great weather for writing, right??! ;)

I started my day with a big bowl of oat bran!

I used 1/2 c oat bran, 1 cup water, 1 banana, 1/2 scoop protein powder, pumpkin butter and almond butter. A bunch of y’all have asked if I “melt” my almond butter….no. I guess my almond butter is always just runny! I don’t know!

I’m about to go meet Kelly for coffee and girltalk at our favorite place then back home to get a couple more chapters churned out.

However……I’m in the holiday spirit (and the Friday spirit) and thus have another giveaway for y’all! :)

oh goodness, my favorite would probably be just pure maple syrup. i used to never use butter, but once in a while, a little butter is definitely added! i would love the kodiak mix! i’ve been looking for it for a while!

When I was little my grandmother would often put molasses on our pancakes instead of maple syrup. I don’t do it often now, but it always makes me nostalgic when I do!

Here in Fairbanks, AK it is -15 and DARK!! Pancakes MUST have butter, butter, more butter and top all that butter off with warm pure maple syrup! Eek-no wonder I am packing on the winter pounds!

A few years ago my husband infused real maple syrup from upstate New York with fresh-from-the-farm blueberries. They kind-of fermented a little in the syrup, and the result was sweet, sticky, blueberry-y wonderfulness. Favorite. Pancake. Ever.

To be honest, I had my first pancake only a few years ago. I didn’t even know they existed! I used to eat crepes with cheese, ham, and some maple syrup on top of it all :)

And because I’m Canadian, my favorite topping is… maple syrup. I can’t help it!! ;)

The best pancake/waffle combo is bacon and hash browns, but not just ANY hash browns, they have to be the crispy shredded kind (like the ones IHOP serves). Seriously, this combo of salty and sweet goes so well together with the maple syrup on top of my pancakes! It is the best. And the best maple syrup is the stuff you can buy in those little weird tins in Vermont. YUM

I have a few favorites that I can’t just choose one. I love chocolate chip/banana/ peanut butter pancakes, and I love mango pancakes. My favorite thing in november is when Williams Sonoma comes out with their pumpkin pancake mix, and adding a little bit of nutella. AMAZING!

When Im feeling virtuous I use a small pat of Earth Balance, a sprinkle of ground flaxseed, and top it off with Agave Nectar…when Im not being virtuous I sprinkle my buttered pancakes with cinnamon and sugar and top them off with homemade homemade caramel syrup…Yummm!

I love to put Blueberries in my pancakes or top them with a homemade blueberry syrup (reduced blueberries and a little sugar – yum!). My second choice is sliced strawberries and cool whip, or simple maple syrup. I would love love love to try the Kodiak pack with the berry syrups!!

Yumm! A few times at brunch I have had buttermilk pancakes topped with fresh mixed fruit (bananas, cantelope, honeydew, straberries, blueberries & pineapple) drizzled with a belgium cream and sprinkled with power sugar. So amazingly sweet and fresh!

I like to make a compote out of whatever fresh or frozen berries I have around (blueberries and blackberres are the best!). Depending how sweet they are, I’ll have just that, or compote and syrup!

Oh, yum! Pancakes are so perfect in the cold weather. Since I watch how much sugar I consume, I like to make my own fruity syrup with blueberries, agave & water. Or sometimes just plain almond butter (a little melty) is perfect. Although nothing can be Earth Balance and maple syrup, it’s fun to mix it up! :)

I once ordered pumpkin pancakes at a restaurant and the waiter brought them out to me and said “do you want the frosting that comes with them?” Hell yes I wanted the delicious cream cheese frosting! So, I would say cream cheese frosting is my favorite. When I make pumpkin pancakes at home I mix myself up a little frosting. Healthy? Not at all! Delicious? For sure!

My family LOVES pancakes. Our favorite way to eat them is banana split style. Over the pancakes you put any or all of the following; vanilla yogurt, sliced banana, strawberries or other berries, granola sprinkles, and any other yummy topping you can think of!!

Too funny, when I read your last post about the brownies I almost commented to ask where you find them. Perfect timing (hopefully!) with the giveaway. My favorite pancake topping is not actually a topping but adding already cooked and crumbled sage sausage to the batter. The savory sausage is GREAT with a bit of maple syrup. This is a Christmas morning tradition and my dad makes them best!

My favorie pancake topping is homemade blueberry syrup… Just mix some fresh blueberries and 100% pure maple syrup in a microwave safe bowl, nuke for 45 seconds and stir – voila! The blueberries literally melt into the syrup… divine :)

My favorite pancake topping is plain yogurt and “goop.” Goop is essentially canned apricots (and juice) blended in a blender. My grandma always served pancakes and waffles this way, and so does my dad. yummy now I want some!

Ooh, pancakes! For topping, I like to microwave frozen berries (usually a mix — blueberries, raspberries, etc), and throw them on top. The liquid soaks in and tastes so good!

I know this post is asking for toppings but I want to contribute my favorite fillings! There is a Dutch pancake cafe in my favorite town in Vermont that makes huge pancakes filled with egg, cheese and sausage – sounds weird but with maple syrup on top, it’s the ultimate sweet/savory combo!

My favorite pancake toppings are candied pecans, warm maple syrup, a little bit of REAL butter and a dollop of whip cream :-) YUM YUM YUM!
By the way, there is nothing better than curling up and writing inside a warm home when it is cold and frosty out! All you need is a warm fire, a cup of cocoa and you are ready to go!

amazing! I always top my pancakes with frozen berries that I dethaw til the juice runs and squash them into sauce and then add some pure maple syrup, sometimes I mix that all up w/ a little greek yogurt too to make more of a spread than a sauce and sometimes not.

My latest pancake topping addiction is a dollop of plain Greek yogurt and a “melted banana” (I just nuke a banana in the microwave for 30 seconds until it gets good and gooey!) then a few chocolate chips because they make everything even better! Thanks for such a great giveaway!

OH MY GOSH! I’ve been complaining so much about not being able to find that mix… Now I feel bad! We eat pancakes every weekend so I’ve been on the hunt for a good healthy mix. Anyways, my favorite topping isn’t the most healthful. I love peanut butter, banana, and hot pure maple syrup all over mine.

The BEST pancake topping (from the top of the pancake up) is a tiny bit of butter, homemade applesauce, a light dusting of powdered sugar, and a sprinkling of toasted walnuts, and maybe a touch of vanilla ice cream if I’m feeling frisky :) SOOOOOO delicious!

My faves are from Australia! While I was there studying, I devoured pancakes that were made with chocolate batter, fresh cut strawberries on top with vanilla ice cream. Yes, ice cream! This is a normal topping in Australia, no extra cost! Isn’t that amazing? May not be the healthiest, but sure was delicious!

Bananas and walnuts!! Specifically, bananas+walnuts mixed into the batter, and then topped with a mixture of cool whip and cream cheese, plus more banana slices and walnuts and a healthy amount of pure maple syrup.

Pancakes are good, but I prefer abelskivers! They are similar to pancakes but are little golf-ball sized pillows of heaven (they require a special pan)! Toppings for them are the same as pancakes tho, I love butter, maple syrup, powdered sugar and huckleberry syrup. So yummy!

My absolute favorite topping involves fresh pears. Chop a pear, sprinkle it with a little brown sugar, a little butter, cinn., clove and nutmeg and let it simmer until the pears are tender. Pour over a short stack and enjoy!

I have to agree with Carrie C, there just isn’t anything like 100% pure maple syrup on your pancakes! My grandmother grew up on a Maple farm in Vermont and so that’s all we had on our breakfast foods growing up.

In the summer I’ll top my pancakes with any fruit from berries and bananas to mango and papaya. During fall/early winter I love topping them with Pom arils, banana, and real maple syrup. My favorite pancake topping is a berry syrup I make by just taking fresh or frozen berries and mash them up with maple syrup or honey and cinnamon. I just pop them in the microwave until they’re nice and hot and melty… it’s sooo good! I love using fresh blackberries and raspberries for this!

Ok so not too creative, but ever since I was little it was always chocolate chips. I never liked them in the batter though, I liked to place a few on top of a hot pancake, let them melt, fold it in half to smear the melty chocolate then proceed to dip into real maple syrup…mmm. Omg I want one right now!

I like my pancakes pretty plain – just butter and maybe a tiny bit of syrup. I’m not a huge syrup fan – a little bit goes a long way.

When I was child, I was at a friend’s house and we had pancakes for breakfast. I told her mom that I didn’t want any syrup or anything but butter for my pancakes. She couldn’t let me do that and went through a list of things before I finally said I would put some peanut butter on my pancakes. Yum! I haven’t done that in a long time though.

I love peanut butter and maple syrup on banana blueberry and chocolate chip pancakes!! One of my all time favorite meals:) I little secret though – I mix my peanut butter and maple syrup together and spread over pancakes. This lets me control how much syrup I eat, and I really hate soggy pancakes!!

When I was in college I would make pancakes and just eat ‘em with my hands with no toppings at all! Leftover pancakes also make great bread for peanut butter sandwiches….mmmm, pancakes.

Yay, I’ve really been wanting to try this brand. My favorite pancake toppings are peanut butter and jelly, except I make mine into more of a PB&J pancake sandwich, so technically only one of the pancakes has toppings (that counts right) My other way of making the pancake sandwich is to put a scrambled egg and vegan bacon in the middle topped with hot sauce… hmmm, I know what I’ll be having for lunch now :)

Hard question…but, #1 – definitely this fresh fruit sauce I made in my cast iron skillet. You don’t even need to use syrup once the fruit cooks. It’s sooo amazing with fresh berries in the summer! #2 – bananas, pecans, chocolate chips =P

I squish fruit in a small saucepan and warm it with some butter and nuts. i.e. peaches, cherries, blueberries, strawberries, whatever, with almonds, walnuts or pecans and pour over pancakes or waffles with some non-fat, organic vanilla yogurt on the top. Yum!

Almond butter, greek yogurt, and either pumpkin butter or blueberry jam. I put the freshest pancake on the bottom so it doesn’t get cold from the yogurt and the oldest one in the middle. I use the Kokiak Cakes mix and eat this every weekend! Love it!

Jenna, this isn’t exactly in keeping with your healthy lifestyle, but what I really love on pancakes, or waffles for that matter, is Roddenberry’s Cane Patch syrup and a little butter. It is what I grew up on and I love it!!!

When I was little, I took great care to mix [real] maple syrup into vanilla yogurt to make a dip/drizzle for my pancakes and waffles. I still do it to this day, but instead I like the tangy-ness of plain yogurt with the sweet syrup! I also add in fresh berries and sliced bananas – yum!

How cool! My favorite pancake topping is typically maple syrup. But on occassion I enjoy warm pears with cinnamon, or warm apples with cinnamon, or even bananas mixed in the batter and then on top. Or course maple syrup is poured on top of it all! :)

I mix together peanut butter and canned pumpkin (just about equal parts of each) and sometimes add a little sweetener and maybe a pinch of cinnamon and top my pancakes with that. It’s also really good as an apple dip. My other favorite pancake topper is no-sugar added apple butter from a local orchard. It’s so yummy!

Personally, I LOVE pumpkin or spiced pancakes (could eat them plain with NOTHING on them), but as for regular, fluffly pancakes… nothing beats thick and strong Steen’s Ribbon Cane syrup :) I’m a Southern girl, and I grew up eating Steen’s on EVERYTHING! Since it is pretty strong, adding anything else to the pancakes would be too much. Delicious!

Mmmm! Such a great give-away! I like using boysenberry syrup to top my pancakes. If there is no boysenberry syrup then I’ll use mashed-up strawberries. Yummy!

My favorite pancake topping is actually dipping small bites of pancake into syrup (preferably real Canadian syrup…my in-laws have a cabin in Ontario and using the real Canadian syrup reminds of eating pancakes before spending the day out on the lake).

Well, besides the half stick of buttah that I LOVE to use, but don’t (very often)….I take about 1/4 c of blueberries and warm them in the microwave, and add 1 or 2 Tbsp. of real maple syrup to them.

My favorite toppings are raspberries, butterscotch chips and berry jam (: Quite the odd combo, but definitely hits the spot!

I like to put organic strawberry preserves, almond butter, greek yogurt and honey on my pancakes- the combo rocks!! I love it!

So weird to see cold weather… it’s still 80′s here in South FL, honestly I would love some cold weather to come our way! :)

OMG yum I love making chocolate chip pancakes with peanut butter spread on top and topping with appricott jelly warmed in the micro so It just makes a giant gooey plate of Peanut butter and jelly basically. SOOO GOOD I want some pancakes now :)

My flavors aren’t very original. Before the pancakes are done, I gently place some chocolate chips on top and then a little pat of butter. When they are on my plate, I smash the chocolate butter together and indulge! Yum.

I am such a weirdo. I make four small pancakes and put one topping on each of them: strawberry jam (or pumpkin butter), honey, syrup and peanut and honey. ;) What can I say, variety is the spice of life!
