This weather!!
And this seems so far away:
(that’s Tampa weather, by the way)
Alas, all is still well here in foggy cold Northern California. Great weather for writing, right??! 😉
I started my day with a big bowl of oat bran!
I used 1/2 c oat bran, 1 cup water, 1 banana, 1/2 scoop protein powder, pumpkin butter and almond butter. A bunch of y’all have asked if I “melt” my almond butter….no. I guess my almond butter is always just runny! I don’t know!
I’m about to go meet Kelly for coffee and girltalk at our favorite place then back home to get a couple more chapters churned out.
However……I’m in the holiday spirit (and the Friday spirit) and thus have another giveaway for y’all! 🙂

Seriously, this combo of salty and sweet goes so well together with the maple syrup on top of my pancakes! It is the best. And the best maple syrup is the stuff you can buy in those little weird tins in Vermont. YUM

So, I would say cream cheese frosting is my favorite. When I make pumpkin pancakes at home I mix myself up a little frosting. Healthy? Not at all! Delicious? For sure!

My favorite pancake topping is not actually a topping but adding already cooked and crumbled sage sausage to the batter. The savory sausage is GREAT with a bit of maple syrup. This is a Christmas morning tradition and my dad makes them best!

I just pop them in the microwave until they’re nice and hot and melty… it’s sooo good! I love using fresh blackberries and raspberries for this!

I never liked them in the batter though, I liked to place a few on top of a hot pancake, let them melt, fold it in half to smear the melty chocolate then proceed to dip into real maple syrup…mmm. When I was child, I was at a friend’s house and we had pancakes for breakfast. I told her mom that I didn’t want any syrup or anything but butter for my pancakes. She couldn’t let me do that and went through a list of things before I finally said I would put some peanut butter on my pancakes. Yum! I haven’t done that in a long time though.

One of my all time favorite meals:) I little secret though – I mix my peanut butter and maple syrup together and spread over pancakes. This lets me control how much syrup I eat, and I really hate soggy pancakes!!

My favorite pancake toppings are peanut butter and jelly, except I make mine into more of a PB&J pancake sandwich, so technically only one of the pancakes has toppings (that counts right) My other way of making the pancake sandwich is to put a scrambled egg and vegan bacon in the middle topped with hot sauce… hmmm, I know what I’ll be having for lunch now 🙂

It’s also really good as an apple dip. My other favorite pancake topper is no-sugar added apple butter from a local orchard. It’s so yummy!

December 11, 2009 at 3:05 pmPersonally, I LOVE pumpkin or spiced pancakes (could eat them plain with NOTHING on them), but as for regular, fluffly pancakes… nothing beats thick and strong Steen’s Ribbon Cane syrup 🙂 I’m a Southern girl, and I grew up eating Steen’s on EVERYTHING! Since it is pretty strong, adding anything else to the pancakes would be too much. Delicious!
