Run or Waffle

Three cheers for Saturday! I had great intentions of waking up,`going for a three mile run, having the rest of my brown rice pudding for breakfast and then hopping in the car and driving home…..but when I woke up this morning I was sleepy and all I really wanted was a waffle………………..

So I nixed the run and made coffee and chocolate chip whole wheat waffles instead! A good decision because the waffles were insanely out of this world. Make them for yourself and see:

Chocolate Chip Whole Wheat Waffles

Makes enough batter for about 2 big waffles…Basically to serve 1 person

3/4 cup whole wheat pastry flour

1/2 tsp baking powder

pinch of sea salt

about 4 ounces soy milk (or other nut milk)

1 tbsp canola oil or coconut oil

2 tsp maple syrup

2 tbsp chocolate chips

1. Preheat your waffle iron and spray with nonstick spray. In a medium bowl, mix everything together and whisk gently until incorporated.

2. Pour mixture into waffle iron and cook until golden.

3. Serve with hot maple syrup!

They were really really really good. Perfect for Saturday morning if you ask me. 🙂

Since I found out that I can’t go home next weekend because I have to work Mother’s Day Brunch at Roy’s (sad face), I am spending the morning/early afternoon with my mom today. We are going out to lunch and shopping! Ryan is out diving (we both scuba dive) and I am meeting him in St.Pete later this afternoon so we can drive to Sarasota to go to the wedding reception. It seems more like a wedding party rather than a reception because its apparently at a hotel on the beach and just a big, laid back cook-out. Err…I might have to bring my own peanut butter sandwich to this….oh well.

School last night was fun but messy. As you can see from my photos, my cakes don’t look so perfect! The yellow chiffon cake we made came out GREAT..but sort of stuck to the bottom of the cake pan. I tried to cut it in slices to salvage it and make it look more presentable! We also made a triangle cake, which is a yellow sponge cake layered with chocolate buttercream, covered with more buttercream then coated with chocolate ganache. I think I tried to slice it before the ganache was cool enough so it doesn’t look as pretty as I anticipated!

ps-it’s DERBY DAY! One of my favorite days of the whole year. I have family in Lexington and grew up around horses and watching races…my family is super into horse racing! Did you all pick your favorite??

    My parents and siblings live in Lexington too. It’s a shame I don’t get down there as often as I should because it’s a great city (I’m in MA).

    i am so sorry about the hands! i just wanted to say that i think despite the cilantro being a possibility, what you were experiencing sounds much more classic for being related to the hot peppers. the phenomenon is called ‘hunan hand’ — see link here: http://www.bettnet.com/blog/index.php/bella/comments/how_to_handle_hunan_hand/ . the fact that lemon juice worked is probably similar to the fact that bleach will work, as they are both quite acidic and may have the same effect on the capsaicin alkaloid . . . although i’m just speculating on the part!

    aww I live in Lexington and lOVE the derby! I went last year (so fun) but this year my family is in town for my graduation so were having a derby party and making mint julips! haha! my money is on pyro! have fun today Jenna

    That IS the perfect breakfast! I would have ditched running and pudding for waffles too! XD

    So glad that you’re able to celebrate Mother’s Day early, since unfortunately you’ll be working on the actual day – savor every moment with your mom!

    I grew up in Saratoga, New York. So my parents have always owned race horses, which I love to give bathes and feed carrots. Our derby day is called the Travers. Have fun.
