I’m really into everything sunflower right now: Pretty, bright (and cheap!) sunflowers from Trader Joe’s, creamy sunflower seed butter and even chocolate covered sunflower seeds! You heard me right—chocolate covered sunflower seeds.
Of which I found the best use ever for—-sunflower butter cookies!
These cookies are reminiscent of everyone’s favorite peanut butter cookies, but instead are made with delicious sunflower seed butter and chocolate covered sunflower seeds.
If you love peanut butter cookies, you’ll really love these!
You can find chocolate covered sunflower seeds at Trader Joe’s. If you don’t have a Trader Joe’s, just use regular dark chocolate chips. These little cookies are perfect for Spring. Try wrapping a dozen up in pink or blue tissue paper and giving to a friend (that is, if you don’t eat them all yourself).
And…speaking of Spring, the sun is finally out!
Celebrate with a cookie (or four).
Sunflower Chip Cookies
makes about 3 dozen small cookies
Ingredients:
1 stick butter, softened
1 cup packed brown sugar
1 egg
1 1/4 cup sunflower seed butter
1 3/4 cup flour
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
1/2 cup chocolate covered sunflower seeds (or chocolate chips)
Directions:
Preheat oven to 350 degrees.
Cream together the butter and brown sugar until light and fluffy. Add the sunflower seed butter and mix well. Add the egg and vanilla extract and continue to beat until smooth.
Combine the flour, baking powder and salt together then add to the wet ingredients. Mix in the chocolate covered sunflower seeds.
Form small balls from tablespoons of dough and press down gently on a lined baking sheet. Bake for 12-15 minutes or until puffy and golden.
Time:
30 minutes

And I know Costco carries a brand of non-candy coated ones. It’s totally worth using the chocolate seeds if you can because they are SO flipping good (and addictive). Can’t wait to make these cookies!

They didn’t spread at all, so they were kind balled up with sharp edges and no good cookie shape. I gave these sad little cookies the benefit of the doubt and tried eating a few. Shared them with my friends. They had no good flavor, and were mighty too thick in texture. I tried a second batch after adding a bit of flour to soak up the oil. No good. The flavor is just yuck. Third batch after adding some sugar and honey. Still no good. I’m bummed!!
Excellent idea of trying sunflower seed butter cookies, but I think this recipe needs some tweaking.
