Happy Friday!
Lately, I’ve been craving lighter meals as Spring slowly starts to creep around the corner. You guys know how much I love Mediterranean flavors {I think I could eat a shoe if it was covered in feta} and this chickpea pasta salad, with sun-dried tomatoes, olives and artichokes, has become a lunchtime staple for me.
What I really love about this salad is the fact that no outside dressing is required. All you need is one of those small jars of marinated artichoke hearts! Just dump the whole thing in, mix and eat. So easy and delicious!
I love to make big batches of salads like this to eat off of all week long. They keep great and always end up tasting better the second or third day around. For an extra boost of fiber and nutrition, use either whole wheat or veggie elbow macaroni!
Hope y’all like this! I’m baking desserts all day for one of my best friend’s baby showers tomorrow. Staying full on a healthy pasta salad like this will be the only saving grace from me eating a few too many cupcakes today…you know, just to make sure they are okay to serve tomorrow. π

Since I’m usually half-three quarters asleep still when I pack my lunch, it’s gotta be something I can do ahead of time. And olives, artichokes, and feta? I mean, how can you possibly go wrong?!

March 3, 2013 at 3:23 pmChickpeas are fantastic. Try this easy chickpea recipe too. Warm a can of Tuna then in a bowl mix a little chopped red onion, chickpeas, chopped basil – Takes about 45 seconds to make and is light and delicious.

A meal you can make in about 45 seconds is chickpeas plus a finely chopped red onion, a finely chopped pepper and a can of Tuna in oil, mixed together. It’s light, tasty and simple. Sometimes I heat the tuna a little – sometimes not.
