A Little Random!

Finally Friday!

I woke up extra early this morning to get stuff done because after school I’m driving to my hometown of Vero Beach, Fl to meet my mom for the night. She has some business to take care of there for work and I haven’t been back in a year and a half so I wanted to go with her! It should be a fun, relaxing night…no matter what I always consider Vero “home” and its always nice to go back. We have dinner reservations at a restaurant I’ve been wanting to try so that’s always fun too! The tomorrow, I’m driving back to Tampa for the remainder the weekend.

This morning’s breakfast was quite random if I do say so myself, but it turned out good! It was so random because I don’t have any milk, any bananas or any oats!!!! How did I let this happen?! So, I ate the rest of what was left in the cottage cheese container (about 1/3 cup) with a sliced apple and a warmed up whole wheat pita slathered with 1 tbsp peanut butter and some raspberry jam. I folded the pita up like a taco and ate it–it was good! I also had some English Breakfast tea on the side. Today is pizza day at school and I’m SO excited. So, yes, that WILL be my lunch today! I’ll be sure to take plenty of pictures but there’s nothing like homemade pizza…and we are baking the crust directly on the hearth of the oven to get that “wood-grilled” taste. YUM! I know Ryan is super jealous because pizza is his absolute favorite food! Too bad he lives so far away 🙁

This breakfast was about 436 calories. The apples look so funny because I sliced them yesterday afternoon before work to have this morning to save some time! They still tasted crisp and yummy though—I highly recommend honey-crisp apples!

    honey-crisp apples are INCREDIBLE – I’m kind of an “apple connoisseur,” having tried (and loving) practically every type of apple (can’t stand red delicious though); but honey-crisp is definitely one of my top favorite varieties :0)

    I know how you feel about Ryan living so far away, my boyfriend goes to a different school that’s pretty far away as well and it’s really hard but totally worth it:) Have fun at school with the pizza-making! Nothing beat a homemade pizza:)

    Hey! I just started reading your blog! I was never into these things but I’ve been learning so much about health and nurtrition (through other blogs as well!) and its been great! I was reading this morning you’re making pizza at class…I LOOOOOOVE pizza! I would eat it everyday if I could! I buy frozen pizza for my husband and I when I don’t want to cook but I KNOW they’re not the best for me (the ones I buy at least and I have a budget when I grocery shop so I feel bad when I buy the healthy or organic ones). I was wondering if you had a good healthy recipe for the dough and all the wonderful toppings!? I’ve been searching for some but haven’t found any worth trying! Thanks!

    I just saw you go to U of MD! My hubby is from Maryland and he’s OBSESSED with those Terps! I always LOVE visiting MD b/c the of mountains (where he’s from you can see the Blue Ridge Summit mountain range?) and since I’m from the midwest I don’t get to see those that often!

    I finally tried a honey crisp the other day and they ARE really good! I was impressed.

    Laura and Sara F,

    I’m a Senior at TCU in Fort Worth and have the same problem as both of you! What I’ve tried to start doing, so I don’t waste as much, is half a recipe. This is a little easier than trying to just make it for one and then I can use the leftovers the next day for lunch or dinner. What I have a problem with is finding what to do with ingredients that I have opened but don’t use up! I would love to share recipes with ya’ll! I love to share ideas and am always looking for more!

    Jenna…I am jealous you are having a faboulos pizza for lunch. Atleast we can all drool over it later seeing all your great photo’s! Have a nice weekend! I will be hibernating up in MN where we will have tempurates in the 20 to 30 below zero all weekend! Brrrrr!

    Good Morning! I read somewhere that Granny Smith are technically the “best” apples you can eat because they have less sugar than any of the red/pink apples (hence the sour taste).

    Has anyone else heard this? Jenna, do you think this could be true? I’m a little hesitant to believe, and I figure fruit is fruit….it’s all good stuff!

    AW, if that’s true, I guess that’s why Granny Smith are my least fave kind of apples! I’ve also tried and like almost every kind of apple. One of faves, in part because of the name, are Pink Lady apples. They are delicious, although it’s hard to find good ones. I used to get them at Wegmans (an awesome grocery store), but I don’t live so close to a Wegmans anymore. a little sad, but I’m warming up to Harris Teeter. 🙂

    I use a tablespoon to measure my peanut butter or else I would eat the entire thing!! I don’t really know anything about brands though because I always grind my own at the health food store, which is what I would recommend for optimum health and flavor! I love to grind my own organic honey roasted peanuts! yum!!

    A good healthy dough is listed in my recipes section under “whole wheat foccacia” just shape it like a pizza and add toppings before you bake! It’s pretty good…nice and chewy!

    I have never heard this before and I’m not sure if I believe it! To me, an apple is an apple…..its fruit and fruit is healthy! I don’t think there is a health meter on what fruit is the “healthiest” because to me at least, its all great for you! I wouldnt buy into that without specific studies being shown!

    Yep, that’s the boyfriend!! He came to visit me for a week while I was in france and we traveled down to Nice together…it was absolutely amazing!
