Well my day just instantly brightened because I got the results from yesterday’s race online and I actually placed FIRST in my age group! 🙂 Totally not expecting that! I guess I shouldn’t have hightailed it out of there so quickly yesterday…they might have given me a trophy or something!!!
Anyways, happy Monday folks! Hows it going? It took me 2.5 hours to fall asleep last night. Meh. Surprisingly though, I wasn’t tired at all at work. I started off with this bar—
Which I LOVED. Seriously, this bar was really really delicious. It had a nutty and chewy texture and was huge! Two thumbs up, Nature’s Path!
I also had a half cup of egg white fluffies
It was a very satisfying early morning snack…great ratio of protein/carbs/fat to keep me going for the first five hours of my workday!
Around 8:00 I broke out breakfast, which was a huge cookie a la Gina!
This bad boy contained 3/4 cup oats, 1/2 scoop chocolate protein, 1/2 banana, 1 tbsp almond butter and 3 tbsp hemp milk. I love how BIG it was!
And for some reason when I got home, all I could think about was almond butter & jelly…..so that’s exactly what I had! On a toasted ezekiel muffin, no doubt. I also had an extremely juicy sliced mango
This lunch made me happy 🙂
I’m off to catch up on emails, attempt to book a hair appointment ,and then and get outside for a bike ride! See you for dinner!

This is a bit of a random comment/question…but I was at Greenwise last night and I bought some pre-made crispy baked chicken tenders. Usually the chicken tenders from publix are fried but I was so happy that these specified their “un-friedness”! They were actually really good.. have you had them before? Because I wanted to know the nutritional info for them because I will definitely be buying them again 🙂

I know what you are talking about but I don’t know the nutritional info for them. Nothing in Greenwise is fried and they actually take a lot of pride in their “oven-fried” chicken tenders! MUCH healthier than the fried version, I can assure you! I’m so happy you enjoyed them!!

All I do is pour egg whites into a microwave-safe cup or mug (sprayed with nonstick spray) and then zap in the micro for 1 minute!
