As Sweet as Pie

Hi friends!

Happy Humpday!

Man, oh MAN, do I feel better today! Yesterday I went to sleep at 6:30 and knocked out a solid 8 1/2 hours of sleep. I was ready to go at 3:10 when the alarm went off, that’s for sure! This is going to be rather quick because I’m on my way out the door to Sarah’s house for the fourth week of our bible study. Yay!

This morning I played Europe again and had a hard boiled egg, a babybell cheese and a bite of super charge me cookie on my way to work…

And then for breakfast I had a repeat from yesterday….its just SO good! 1/2 cup muesli soaked in a Voskos yogurt overnight and then mixed with almond butter, strawberries and a drizzle of agave

At work I totally had a bite of pretzel, a bite of vegan cupcake AND a teeny tiny slice of shicaccia. 😉

And then when I got home I made a quick lunch—-2 spoonfuls of my sesame peanut hummus, 2 1/2 slices of deli chicken breast and 1 slice pepperjack on a toasted whole wheat Arnold’s sandwich thin:

More strawberries!

My mom and I got these at the little produce stand down the street yesterday and they are as sweet as pie. Definitely sweeter than any strawberry I have tasted from the grocery store….ever!

Today at work I made tons more vegan cupcakes! Plus a sheet cake that we cut up for samples….apparently they are turning out to all the rage!!! My manager and I worked a little bit to tweak the recipe a bit so it is more original and we were very happy with the results. All our vegan associates are SO excited, as you could imagine. Let’s just hope they tell all their vegan friends! Today I topped the cupcakes with an all natural/vegan oreo and they looked so darn cute :). A woman came in and bought four right before I left!

I’m off to Sarah’s house and then to the Y. Catch ya in a bit!

    That muesli looks great! I’ve only tried using it kind of like granola, but the overnight soaking is a good idea.

    Mmm yogurt concoction looks mighty fine! Haha I’d definitely take bites of things all day if I had your baking skills and everything was at my hands! Glad last night was better for you and that the vegan things are soaring!

    I know you used to be veg/vegan do you ever think of going back? It seems like you eat a lot of meat now. Have you noticed a change in the way you feel? I feel like whenever I eat meat now I feel sick.

    It’s nice that you’re mixing it up with your pre-breakfast snack! I think that the variety of tastes are more satisfying (versus the one flavor in a bar).

    Hahah its funny that you call the pre-breakfast snack “Europe”! But I guess it fits – cheese and eggs…the fats and the proteins definitely hold us up for a while!

    I don’t think I’ve ever had a vegan cupcake or cake. I might have to scope that out. My friends are going to an all-you-can-eat dessert buffet thing at some swanky hotel in Boston this weekend, and on the menu is a vegan chocolate banana cake…yum! I’m so bummed (and uh, maybe a little happy) that I’m on the opposite coast so I can’t join them.

    The sandwich really sounds good. And those strawberries – you are so making me crave some! 🙂 Hard boiled eggs are one my newest fave snacks. So easy to just grab and go – plus they seem to really keep me full for a long time. I love, love, love them!

    Sounds so yummy! I will definitely try the yougurt/muesli tomorrow. And, will/can you share the Super-charge me cookie recipe?? Or have I missed it? Thanks for being such a healthy inspiration!! Have a great Bible study. I’m still working on 2 Cor.

      No…I don’t think i will go back to being a vegetarian. I LOVE all veggie, and even vegan, meals but it just doesn’t fit with my lifestyle. My family and boyfriend are all carnivores and I enjoy cooking and eating with them too much. I don’t really think I eat “a lot of meat” though….the typical American eats fast food and meat about 5 x a week, whereas I probably eat meat maybe once or twice a week…….and I eat red meat sparingly. I think my overall diet is a combo that works the best for me—lots of fresh produce, grains and lean proteins in the form of fish, soy and white meat.

    I am SO jealous that you live some where that has fresh produce already…we are still months away from tasty fruit at the farmers market.
