Good morning and happy Friday to you!
I can’t believe two weeks have passed since the accident. What a blur! Two weeks ago right now I was at work, not thinking ANYTHING like this could ever happen to my family. Crazy.
This morning I learned my lesson from yesterday and had a more digestible breakfast before my workout
Enter “chocolate chip” breakfast cookie! I used these raw cacao nibs as the “chips”—
And also used 1/2 cup oats, 1/2 banana, 1/2 scoop Sun Warrior protein powder, 1 tbsp raw almond butter and 2 tbsp vanilla coconut milk.
The chocolate chips made it though! I LOVE these nibs because it is like eating chocolate in its healthiest form. Each nib is packed with antioxidants, phytonutrients, vitamins, essential minerals and is sugar and dairy free. Finally, an excuse to eat your chocolate for real! Plus, they give you a nice little kick. I haven’t had coffee in weeks (instead I just drink a huge glass of water first thing) and these nibs give me just enough zing to get going!
A breakfast cookie made with a half cup oats instead of 3/4 cup oats is not going to keep me full for very long so it works perfect as a pre-high intensity exercise breakfast. I’m off to spin class this morning….a little nervous because it is the most intense spin class my gym offers! Eek!
