Spicy Pasta with Shrimp, Peppers and Eggplant

4 ounces raw shrimp, shelled and de-veined
1 large red bell pepper, chopped
1 small eggplant, chopped (about 1 cup eggplant chunks)
1 garlic clove, minced
1/2 tbsp extra virgin olive oil
2 tbsp grated parmesan cheese
sea salt, pepper to taste
red pepper flakes to taste
2.5 ounces dry rigatoni pasta or whole wheat penne

1. Cook the pasta in boiling, salted water. Reserve a couple tablespoons of the cooking water and set aside.
2. Saute the eggplant and the red pepper in the olive oil until tender. Add the garlic and sauté until it smells wonderful. Add the shrimp.
3. Cook for about one minute or until the shrimp are done (it doesn’t take long at all!) add the pasta, the red pepper flakes and the cheese. Add a little of the cooking water if the pasta seems dry.
4. Season and eat!

    This was really great! I used a green bell pepper (all I had on hand) and added mushrooms. Thanks for sharing this!
