Dice one apple and mix with 2 tsp. cinnamon. Microwave for 2-3 minutes until soft. Cook oats as directed and stir in cooked apples. Top with a spoonful of greek yogurt and a drizzle of maple syrup, yum!

March 4, 2009 at 6:54 amI love this recipe called “Oatmeal Brulee” — you cook the oats with soy milk and some raisins, and then top them with a few chopped nuts and a teaspoon of brown sugar and put it under the broiler until the sugar carmelizes.
It takes a while to make so it’s a special treat, not a weekday breakfast.

I tried it the other morning with Fage 2% and some swiss muesli and it so yummy. I put pumpkin butter in it at the end along with some dried whole cranberries and it took me right back to fall.
If that doesn’t count I absolutely love oats with vanilla protein powder, cocoa powder, almond butter, with butterscotch or mini chocolate chips on top. Pretty pretty yummy!

However, one of my favorite stand-bys is: 1/2 cup oats, cooked with water and cinnamon and nutmeg – then I throw in a whole peeled and diced Pink Lady apple, a tablespoon of ground flax seeds, a tablespoon of almond butter, and a tablespoon of agave nectar. I think your Meatless in March idea is so fun and smart! I was a vegetarian for 8 years, and now only eat poultry (I’ve always eaten seafood — as a former Charleston girl, I’m sure you understand why!) but that’s such a fun and earth/health-conscious way to connect with your readers π

Oh! Yes! Because I was OB-SESSED with the Quaker Vanilla Cinnamon “Nutrition for Women” oatmeal (it’s no longer made, I believe) in high school, I always try and doctor up a version of my own, using vanilla soymilk, TONS of cinnamon, and some toasted walnuts for extra crunch π

March 4, 2009 at 8:05 amMy absolute favorite and standby bowl is a mixture of Quaker oats (of course) and oatbran, with small spoonfuls (maybe a tsp?) each of wheat germ, milled flax, and millet — and a few dried cherries or cranberries. I cook that on the stove, in water, and then add a splash of milk and maple syrup, a sliced banana, and I top it off with blueberries. Perfection!

March 4, 2009 at 9:10 amI cant tell you how oatmeal has changed my world – I fix myself up a bowl of oats (usually around a 1/2 cup) with milk and water, add in some cinnamon, pumpkin pie spice, ground flaxseed, vanilla, banana, and strawberries to cook and simmer for a few minutes. after that is done, I pour it all into a container where i add the rest of the banana, some more strawberries, almond slivers, and vanilla granola. I take this with me to work, reheat for a few min and i cant tell you how wonderful the aroma is and how envious my coworkers are of my daily meal:)

But, my favorite oatmeal is the kind I make with 1/2 cup oats, water to cook them and then mix in 1 tbsp sliced almonds, 1 tbsp ground flax, TONS of cinnamon and pumpkin pie spice, 1/2 cup pumpkin stirred in and 1 scoop vanilla protein powder (I use 100% Gold Standard Whey Protein in Vanilla Ice Cream). I really like Kath’s banana stove top oats though – a little chewy and creamier than instant. I have not gotten brave and tried lots of other toppings yet though I am thinking about it!

Add in strawberries at the very end and then mix into a bowl that has a little bit of cottage cheese, salted peanuts and stir it all together and drizzle peanut butter on top. Absolutely delicious and so filling-it keeps me going for 4 to 5 hours!

March 4, 2009 at 11:01 amI eat 1/2 cup of Quaker Old Fashion oats with a couple teaspoons of Dutch cocoa, 2 packets of Splenda, and 2 tablespoons of PB2 mixed in. It has an awesome flavor and by using PB2 fairly low in calories- around 200 for the bowl.
