Dessert/ Dinner

Here We Go Again

So, I felt SO good all day today after my race that I acted on impulse and signed up for ANOTHER 5K race in two weeks! Yep! I surprised even myself :). I think today proved that even though I really don’t consider myself a runner AT ALL, I can do it! Regardless of the time, just finishing strong was so huge for me after what I went through last fall with my very painful shin splints.

I signed up for a trail run at a wilderness reserve in north Tampa on March 15th and I am already excited about it because the pictures from past runs at the reserve look absolutely gorgeous, and I really think that running on trails versus running on the street will be much better for my shin splints because it is a softer surface. Here is the link to the race….I have recruited my mom and Margaret (Bella’s mom!) to run with me. Not to toot my own horn, but I actually finished today’s race faster than I thought….I just checked online and I clocked in at 26:30. Woot woot!

I also snacked on a banana + almond butter (shown with my medal!):

And Ryan and I had a very restful afternoon laying out by the pool and then watching Spearfish Hunter on tv (well me, not so much). We headed over to my house around 5:30 for a big dinner with my parents and Margaret. We cracked this bottle of cab. and I had 1.5 glasses throughout the evening:

Which, in the end, turned out to be an awful idea because it made my allergies about 500 times worse and by the end of dinner I couldn’t breathe AT ALL.

For dinner my mom made southwestern pork chops (out of a junior league cookbook), salad and we picked up cornbread from greenwise. The cornbread is probably the best I’ve ever had—it is SO rich and has sour cream and creamed corn in it. Its like a dense cake!

Oh, and that’s a bite of velveeta shells and cheese as well. 😉 That was for Bella but I grabbed a tiny bit because it is soooo good and I never eat it! The pork was marinated and grilled and topped with a mixture of caramelized onions, salsa and low fat sour cream. Very tasty and I’m not even a big pork fan! I ate about 90% of the pork, all of the salad and half of the cornbread slice.

And then for dessert………..

Yep! That would be my infamous vegan chocolate cupcakes :). We had to stop and get an onion at the store so I couldn’t help myself. Here is my half:

Check out that frosting!

Well, its only 9:15 but I just took two benadryl and am waiting for my sinuses to decongest enough so I can lay down. Oh the joy of Florida pollen season. Love it. Tomorrow is church in the morning, followed by a big blogger lunch at Datz, and then the gym.

Fun announcement in the morning—stay tuned! =)

    Jenna-
I have had a lot of issues with painful knees/IT/shins, etc. and have found that trail running significantly decreases the impact and the amount of pain that I have with these issues. There is a trail run 4/11 in Brooksville Florida I was thinking about doing, it looks like it is beautiful! Great job on the run today, that is quite an accomplishment!

Jenna! You’re killing me, girl! With your “i’m not a runner” comments and making it sound like 26:30 is a turtle pace or something! Let me just say this—- i DO consider myself a runner(3-5 miles a day) and have done 2 5ks in the past year, and your time today far surpassed my best 5k time! Yikes! Suddenly I feel like maybe I should stop thinking of myself as a runner…….ha. Anyway, congrats on the (great!)race time and feel better soon!
