Happy Monday, folks!
I hope everyone’s day is going well so far. This morning I decided to try something different for a pre-breakfast snack….I’m all into creating new combos that keep me going the 5 hours before dawn! Today it was a hard boiled egg, babybell cheese and a big bite of super charge me cookie 🙂
This yummy European snack did the trick! Plus, it was a nice change from something sweet in the morning. I hard boiled four eggs last night so you will probably see a repeat in the near future!
Breakfast was oat bran. And a lot of it. 3/4 cup dry mixed with 1.5 cups water, pinch of salt, sprinkle of brown sugar, blueberries & blackberries and a heaping spoonful of almond butter:
And then lunch was what was worth writing home about. Seriously! When I got home from work I quickly whipped up a batch of Eat, Drink and Be Vegan’s Peanut Sesame Hummus (AMAZING) in the Vita Mix and slathered it on a toasted Ezekiel english muffin with one slice pepperjack cheese and about a fourth of an avocado
Too die for—
The hummus is made from chickpeas, peanut butter (!!), toasted sesame oil, lime juice, ginger, agave nectar, garlic and hot pepper flakes. I love how the peanut butter lends a subtle sweetness and also a tad more protein to the mix! I’ve said it before and I’ll say it again—I have NEVER been let down by this cookbook! If you are in the market to just buy one new book, make it this one! Dreena is a goddess and my copy is already all stained and worn around the edges. Love it!
I have to run a few errands and then am heading outside for a run….the temperature is a tad warmer than the other morning so I think I’m all set! 😉
