Sneaky Snack

Today at Roy’s we had our cooking class that we do twice a month. I always enjoy cooking class days because I get to listen in on everything and its more interesting than usual! Today they were making thai summer rolls wrapped in rice paper and filled with rice noodles, cilantro and marinated beef with a peanut curry dipping sauce. Unfortunately my camera was at home charging so I didn’t have time to snap a photo of the two summer rolls (plus a bite sized homemade almond joy bar!) I had for a snack!! yum!!! I decided that would be a nice break from my yogurt and they really were delicious! So, sorry guys–no photo! 🙁 You will have to use your imagination on that one!

I didn’t end up training the new girl today so I got to eat my lunch at my normal time and my day wasn’t as hectic as I thought it might be, which was nice. When I got home I heated up my leftover chicken/broccoli/mac&cheese from last night and ate it with the watermelon I didn’t eat for a snack today and a sliced peach. I love this mac&cheese but I do wish it wouldn’t get so dry when you save the other portion in the fridge then reheat later. It still tasted good though!

Tonight at school we are making baked garnishes for our plated desserts. I’m assuming that means cookies but I guess I’ll find out in a little bit! Regardless, I’m bringing a handy little snack pack of Annie’s chocolate chip bunnies to have later.

    I get around the dry, reheated mac-n-cheese by adding in a splash of milk and extra dab of margarine when I reheat it. It tends to help it out some to not be quite as dry. And those Thai rolls sound really good!

    Hey Jenna! Whenever you get a chance a left a post this morning about tea and would love to hear your opinion as well since you are a big tea drinker.

    I do what Jess does-I add some extra butter the next day.

    Oh and I love watermelon, but never buy because it’s so hard to cut. How do you cut your melons. The knives are so big to cut melons I am afraid I will slip!

    Ahh I love thai (or vietnamese) summer rolls. I actually blogged about a nostalgic memory of them a few weeks ago!

    That kashi cereal from earlier has pretty fabulous packaging!

    I’m with Jess and Amanda–even a splash of water before you microwave the mac & cheese will help it rehydrate.

    The watermelon looks awesome!!! I haven’t had any good watermelon yet this year, so I’m thinking I’ll need to try it again soon.

    My favorite teas are Earl gray and English breakfast. I love, love, love traditional black tea!! Always have. Twilings makes a really good english breakfast that I love and I also do buy Celestial Seasonings herbal tea, peppermint being my favorite. I also really like Good Earth green tea but can’t seem to find that everywhere. I found it once and it was the best green tea I’ve ever tried but haven’t been able to find it again after that. If you have a teavana near you I suggest going there to experiment! 🙂 The “To Life” tea is my absolute favorite!!
