Wow, you guys, I am SO excited about this recipe and giveaway post today!!
You see, my friend Lori’s cookbook came out yesterday {squeal!!!} and it’s chock full of absolutely amazing sounding recipes. Sweet chili pulled pork? Pan fried lemon-garlic rib eye steaks?? Avocado-topped hot dogs with creamy chipotle sauce??? Are you dying yet? Me too.
Needless to say, it was almost impossible to pick a single recipe out of the book to share with y’all today, but I did my best. And guys? You won’t be disappointed. Let’s just say this is the best guacamole I’ve ever tasted. Adam said “it’s the best thing I’ve ever put in my mouth”. Bold statement — true fact. It’s sweet, spicy and creamy…you’ll want to eat it by the spoonful. I dare you not to!
This is NOT your average guacamole! There’s mango chunks, chipotle peppers, fresh salsa, sour cream and bacon crumbles in this. I really wish I would have thought to make this for my Noonday party the other night! It definitely would have been a hit. Plus, it only took about 10 minutes to throw together. All that to say that this was definitely not the last time I’ll be making this amazing dip!

Sweet Smokin’ Hot Mango-Chipotle Guacamole
makes about 2 cups
Ingredients:
2 medium avocados, perfectly ripe
1/2 medium lime
2 tbsp sour cream
1 tsp chopped canned chipotle pepper in adobo sauce, seeds removed + 1/2 tsp sauce from the can
3/4 cup chopped mango
3 slices bacon, cooked until crisp, crumbled and divided
3 tbsp fresh salsa
salt and pepper to taste
tortilla chips for serving
Directions:
In a medium bowl, mash the avocado roughly with a fork, leaving some chunks. Squeeze the juice from 1/4 of the lime on top. Add the sour cream and chipotle peppers and sauce. Stir gently until combined. Mix in 1/2 cup of the mango, 2 slices of the crumbled bacon and the salsa. Add salt and pepper to taste. Drizzle the guacamole with the juice of the remaining lime. Sprinkle with the remaining crumbled bacon and mango.
Serve immediately (or soon) with tortilla chips and/or jicama slices. If you need to store the guacamole for an hour or so before serving, place a piece of plastic wrap on top so that the plastic wrap is touching the guacamole. This will prevent air from getting in and turning your guacamole brown.
