sweet zucchini pancakes

As if you didn’t have enough zucchini recipes…..

Here’s one laaaaaast one!

Think zucchini bread in pancake form. Or, soft, spongy pancakes with little green flecks that remind you that you’re actually eating something very healthy despite the ridiculous amounts of maple syrup you drown them in.


Green flecks = healthy. Always.

So what are you waiting for? Pancakes make perfectly acceptable dinner (or lunch) food! A little brinner never hurt anyone. Yes, you heard me. I said BRINNER. Complete with a jug of syrup, a fried egg and a sliced orange if you’re feelin’ fancy. The best part? You get to go to sleep right after then wake up and repeat!

    I can’t eat zucchini b/c it irritates my stomach. Any other greens that would be just as good in this recipe? Would spinach work or not so much? Love your blog… been reading for a long time but just recently started commenting. Yes I am a long time lurker. πŸ™‚

    I love zucchini in baked & caked items but to be frank, hate it on its own so it is always nice when I come across a good zucchini recipe. They make the moistest bread so I can’t wait to try these pancakes.

    Brinner is one of my favourite meals! It usually involves an omelette of some sort but I’ve never even had zucchini bread so I think these pancakes are a must!

    I love brinner. It’s one of my fav meals. My friends and I have the best brinner potlucks. Plus, I’m sort of a zucchini fiend – this recipe is right up my alley πŸ˜‰

      Also – I asked this on TK, but – when you try a recipe, do you test it out a few different times over a week or two before you post it with the final recipe? In other words – are you eating a lot of pancakes? πŸ™‚

    I adore zucchini and I LOVE brinner! However, at our house we call if BFD night. (Breakfast For Dinner.) We used to have BFD every Sunday night…it might be time to bring back the tradition!

    Oh I so agree on the green flecks=health. I tried a Paula Deen zucchini bread recipe the other day… looked up the calories afterward which was a *huge* mistake… but it was so delicious and you really do feel healthy knowing you are eating vegetables. πŸ™‚

    Jenna, I love your “green specks makes it healthy” rationalizations..I do the exact same thing. The second you add fruit to cupcakes? Healthy. Make a vegan muffin then top it with fatty cream cheese frosting? Still healthy. Awesome

    Convenient that I just bought a package of 5 zucchinis (Side note: Totally just looked up the plural form of zucchini, because in Italian ‘zucchini’ is the plural form of the word. Nerd alert!) from Trader Joes? I think so! I’ve tried (and failed) to make potato pancakes before, but I think I might just have to give this a go. Thanks Jenna!

    I have been seeing a lot of pancakes in the blogosphere lately and have dying to have a breakfast for dinner night. My boyfriend has Jiu Jitsu every night this week so I think this should be the week!

    I like your step-by-step pictures of this. It’s so much neater and healthier looking that what I’ve seen so far for this recipe. lol I love pancakes and greens in the morning always perk me up before I sweat it out a little.

    I like the way you think. If there’s green in it, it is obviously healthy. I’ve read on other blogs that brown=healthy too, so the fact that these pancakes have green and brown pretty much makes them a superfood on par with, say, blueberries, right? I think so. Even though blueberries are neither green nor brown, but that’s neither here nor there πŸ˜‰

    I had these for supper tonight … except added a chopped jalepeno, subbed butter for olive oil, sugar for brown, and topped with sour cream plus a sprinkle of brown sugar. Turned out so yum, with a little beat of interesting heat. Delish, and thanks!
