Hi guys! Happy Friday!!
I just finished eating the best sandwich of my entire life but more on that in a minute. 😉
This morning I started my day with a slice of Ezekiel toast with an ounce of raw goat cheese and 2 egg whites—
This little snack packed a whopping 17 grams of protein in!!! No wonder it held me over almost 6 hours until breakfast!
We were incredibly busy this morning and, like I just said, I couldn’t take a break until way later than I usually do. Good thing I had the awesome snackie to tide me over! When I finally got a break, I dove into my raw oatmeal 🙂
This is the same thing I’ve been doing all week…..1/4 cup oat groats soaked in water overnight and then blended with a splash of almond milk, a banana and cinnamon. Topped with a big scoop of raw almond butter, of course!
Today was also free food friday (score!) so I built a big plate of watermelon up to have alongside my oats—
Times this amount by 2. The watermelon was fresh and perfect!
As I baked today, I was envisioning the perfect summer sandwich in my head. The sourdough came out better than its come out in weeks so I took advantage of that, bought some, and raced home to make my creation:
Wilty basil alert!!! It was amazing, regardless. I used some of the leftover buffalo mozzarella that I picked up from the farmer’s market last weekend and created a Caprese sandwich with it. Think layers of soft, creamy mozzarella cheese, thick slices of ripe tomato, fresh basil leaves and drops of tangy aged balsamic. It was divine. Enough said.
I’m going to attempt a short nap now before my hair appointment at 4. SO excited. Seriously, getting my hair done is one of my favorite things ever.
I love getting my hair done ALMOST as much as I love packages dropped casually on my doorstep!!!!!!
When Excalibur offered to send me a dehydrator to review, I JUMPED. I cannot wait to make goodies with this bad boy…….I’m thinking macaroons, bread, fruit roll ups, crackers………..oh, the list is endless. Wait til’ Ryan sees THIS contraption! 😉
Dinner will prob. be low-key tonight, as it is Friday and I’m beat. There was talk about going out for a mojito and if I can attempt this nap, that might be a reality. For right now, the Blackberry is going off, the laptop is shutting and I am going to nap!!
