Weather To Match The Mood :(

What a poopy miserable rainy day outside…and it matches my mood 🙁 Sorry guys! It took me double the time to drive back to Orlando because it was pouring so hard and then I had to make like 5 trips up and down the stairs of my apartment in the rain to carry all my stuff up…getting soaked in the process, obviously. THEN, when I got upstairs I got some sad news. Due to some uncontrollable circumstances, my roommate has to move home tomorrow. I know. I was and still am completely shocked and she’s pretty upset too. I mean, I know we will see each other even though she won’t live here anymore (she’s moving 4 hours away) because we have been best friends for about 15 years……but still. Now I’m totally on my own and now no one is here to eat my pastries.

Ok so to end my sob story I will get to my food. My pita pit wrap was very filling but I found myself craving something cold and creamy mid-day (maybe because I’m so sunburned I can’t walk?) so I had a soy pudding. Hit the spot.

When I arrived back in Orlando I made a huge salad for dinner because that’s all I felt like. Honestly, I feel a little bloated and yucky after eating out so much over the past week and drinking alcohol nightly. I’m going to try to make all my meals this week *super* healthy just to cleanse out my system a bit. You might think my salad tonight for dinner looked like a diet meal but I can assure you was not. First of all, it was so huge I couldn’t even finish the whole thing.

In it I put:

about 2 cups of spinach

1 red bell pepper

some Belgium endive

dried cranberries

5 pecans

1/4 of an avocado

cucumber slices

grape tomatoes

Annie’s dressing.

I got my veggies in for the day, for sure! All the fats are healthy fats from the nuts, avocado and canola oil based dressing. With it I had a slice of sweet potato foccacia that I made while in Vero Beach last weekend and kept frozen in Ryan’s freezer while I was Tampa. All in all, my salad hit the spot and my body feels good after eating some raw veggies. I think I will save the paella leftovers for tomorrow night when I am rushed coming home from work and going to school.

My roommate and I are spending as much time together as possible before she leaves, so tonight we are going to watch one of our favorite “feel better” movies, Elf. I’m sure I’ll be making some popcorn (got some organic, no salt or oil added kind from the health food store) and we will just be relaxing.

    So sorry to hear that…something very similar happened to me except I was the one that had to move and it was VERY hard esp because I was living with my best friend for two and a half years.

    Oh my gosh! That’s so sad! I would be having a sob-fest too. You’ll just have to mail/bring her any extra goodies you make. I’m sure she’ll miss eating them as much as you’ll miss sharing them! Sorry you had a poopy day Jenna! I hope next week is better.

    Sorry to hear about your roommate moving. 🙁 I just found out Friday that one of my best friends is moving 3 hours away. Not quite the same since we don’t live together, but I can share your sadness!

    Aw, Jenna I’m so sorry to hear about your roommate. It must be really hard to have to part with someone who’s been with you basically every day. Hopefully next week will be better for you.

    you guys will still definitely be close…it seems like you have a great bond that will last forever… and that salad looks SO delish! not ‘diet’ at all… protein+carbs+veggies = yum!

    sorry about your roommate/bf!!!! i know that is very very hard…I would be crushed if my roommate/bf moved out.

    elf really is a feel good amazing movie. the first time I saw it was with my good friend in college during a really busy time. It was a Saturday night and the entire campus was out, and we were stuck doing work. And we just said “f-it!” and left and went to see Elf. It was the perfect movie for that night when all we wanted to do was laugh and forget all the work we had to do. It’s one of my favs to this very day, and I love quoting it!!

    Awwwwwwwwe, I’m sure you’ll keep close and all that! It seems to be a theme going around with the bleh weather and the bleh moods! We should all join up next time and have a cross-the-country cooking fest to cheer up!

    Is it silly that (even if he’s a lot older than me) I would totally marry Will Ferrel! Hehe, I have a thing for a sense of humor….

    Oh, one more thing. I picked up that Skinny Bitch cookbook because it was insane sale (yay!) and am super excited! I got the idea idea from you and would never have picked it up from the title, but it looks great! Now I just need to follow with ED & BV and that Vegano…. er, I cannot spell it. I love your suggestions!

    Christina & I (college roommates and best friends) always said that one day we would buy a big house and live together with our husbands because we don’t ever want to saperate… she’s in FL and I’m in CA and it sucks… and while I love living with my husband and fur-kids, I’ll never love living with anyone as much as I loved living with her…and I try to brainwash her fiance, Chad, daily to move to SoCal and ditch FL so she can be here with me.

    I hope that everything is okay for your roommate and that things work out for her…

    on a more positive note, that salad looks divine! but i am a sucker for anything that involves raw greens and dried cranberries
