beet risotto with goat cheese

I’m obsessed with beets.

Particularly in the form of this super creamy beet risotto with goat cheese! Just look at that bright ruby color, those creamy rivers of cheese running down the side….I don’t really have much else to say than holy, holy yum.

I think I could live off this stuff (well, and this). If my complexion begins to get a little ruddy, we’ll all know why.

    Beets are one of my very favorite things, but I’ve never had them like this before. I’m trying to imagine how incredible they must taste paired with goat cheese. So much sweet earthiness; I bet it’s an incredible combination. I like to pair beets with white beans, a dollop of mayo, a pinch of sea salt, and a squeeze of lemon juice.

    I LOVE beets, but don’t really love the staining they leave behind. I’ve never made or thought about making beet risotto, it looks delicious!

    U are my hero and literally read my mind! I’ve been looking for a good beet recipe and am also currently on a goat cheese kick ! now why didn’t I think to combine the 2!

    I love beets but also love rubber kitchen gloves when I am working with them.

    Once, in my CSA box, I got a half dozen locally grown beets and I proceeded to roast them and eat most of them at once. Needless to say, the unintentional liver detox was a bonus I hadnt planned on. lol

    I love beets as well! Anytime I go to a restaurant & they have a beet salad, I have to get it. This dish looks beautiful!

    I’ve been obsessed with beet risotto as of late – we keep getting beets in our CSA produce box. I follow a recipe that involves zinfadel (or really any red wine). It’s so darn delicious – especially with toasted walnuts and parm. cheese on top! I like your addition of goat cheese though.

    I have never tried Risotto before…but I loooove pretty much anything with feta! So I’m fairly certain I could eat a few helpings of this šŸ˜‰

    I first read “Beef Risotto” and saw the bright red raw meat photo…yikes! Beet risotto sounds and looks much more appetizing.
