I’m obsessed with beets.
Particularly in the form of this super creamy beet risotto with goat cheese! Just look at that bright ruby color, those creamy rivers of cheese running down the side….I don’t really have much else to say than holy, holy yum.
I think I could live off this stuff (well, and this). If my complexion begins to get a little ruddy, we’ll all know why.

The color is absolutely incredible!
I’ve never seen red risotto before! Guess there’s really a first for everything!!
The red color is so beautiful!
Beets are one of my very favorite things, but I’ve never had them like this before. I’m trying to imagine how incredible they must taste paired with goat cheese. So much sweet earthiness; I bet it’s an incredible combination. I like to pair beets with white beans, a dollop of mayo, a pinch of sea salt, and a squeeze of lemon juice.
I LOVE beets, but don’t really love the staining they leave behind. I’ve never made or thought about making beet risotto, it looks delicious!
YUM. I just made sage and prossciutto risotto and was in love.
Haha you’ve been caught red-handed
Not gonna lie…beets kinda really scare me…
U are my hero and literally read my mind! I’ve been looking for a good beet recipe and am also currently on a goat cheese kick ! now why didn’t I think to combine the 2!
I am on such a goat cheese kick as well…by like 6 months now – and still going strong
haha yes it definitely is the risk of working with beets!
Have a great weekend!
Red handed! Haha!
And that looks amazing. I had a beet and goat cheese sandwich last week that was absolutely delicious. Amazing combo!
I’m a beet lover too! Especially roasted!
I love beets but also love rubber kitchen gloves when I am working with them.
Once, in my CSA box, I got a half dozen locally grown beets and I proceeded to roast them and eat most of them at once. Needless to say, the unintentional liver detox was a bonus I hadnt planned on. lol
Off to check out your recipe b/c I loveeee beets!
I have blue hands from blueberries; I love beets too! I haven’t ever bough fresh though (I’m sure a sin)
I love beets as well! Anytime I go to a restaurant & they have a beet salad, I have to get it. This dish looks beautiful!
This looks really good!
I’ve been obsessed with beet risotto as of late – we keep getting beets in our CSA produce box. I follow a recipe that involves zinfadel (or really any red wine). It’s so darn delicious – especially with toasted walnuts and parm. cheese on top! I like your addition of goat cheese though.
Gorgeous color, it looks amazing!
What a beautiful dish!! I can’t believe how amazing that color is–look forward to trying your recipe!
you and me both–obsessed with beets right now. I however have been getting Golden Beets at my market! Life changing! even better taste.
Yes, red hands are hot and chins, lips, clothes. haha.
Beets and goats cheese – perfect combo. Lovin’ the photo of the stained hands too!
I love the ruby red color!
I have never tried Risotto before…but I loooove pretty much anything with feta! So I’m fairly certain I could eat a few helpings of this
I’m obsessed with beets too! LOVE them roasted! I’ll definitely try this risotto for dinner next week!
This looks great. I love beets! Red hands are part of the fun
I first read “Beef Risotto” and saw the bright red raw meat photo…yikes! Beet risotto sounds and looks much more appetizing.
Jenna,
I heart beets sooooo much! This recipe is divine!
I wanted to let you know that I graduated yesterday with my master’s degree in Rehabilitation Counseling. I started the program two years ago and that’s also when I started following your blog. YOU GOT ME through school with all of your recipes and wit. THANK YOU!

You just picked two of my favorite foods! I love beets, and I just learned that they are super healing and healthy for the digestive system as well. I can’t wait to try this.
haha love your hands! This risotto looks fabulous!
Oh yes. Red hands are so hot. As are orange, I’ve decided. Especially since the orange doesn’t go away.
How originally delicious! We love this site- keep up the awesome work!
